Today we're going to talk about no-wrap ribs, give you the tips you need to make the easiest and tastiest ribs you've ever had with the least amount of effort. Ok, so let's start by talking about the different types of ribs that are available to you. The first is the now-famous (thanks to a restaurant chain) baby back. We have our spare ribs which then get cut down into what's called Saint Louis style ribs. All I've got to do is silver skin these guys and that's really optional. It requires a spreading knife or a little butter knife. You kind of hold up the rib it's going to arch you're going to find the bone where it's arching. You can do this close to one side or the other. I like the middle; and right along that arch you're going to take your knife and you're going to work right in beside it. And once you get a little finger hole in there to keep working through till I get completely to one side. So once you got them like this, it's time to set them aside and get them ready to to be seasoned. Okay so our next rib is a little more difficult: it's the almighty St. Louis spare rib or just spare rib. You've got this flap of skin right here and I just come along and fillet that that strip off okay. I just get rid of all the extra stuff that's just hanging there there's gonna be one bone in particular in this district of ribs that's gonna be a little longer and it's gonna pop up a little bit. Just set your knife right on it and just bear down through it okay. Just work it back and forth. You get through there and then come back and do the same thing we'll just muscle through... there we go. Snapped all the way through all right. Now it's time to silver skin them but the process is the same. I'm just going to bend it just kind of wiggle work it underneath and just gently don't go too fast and then just roll right through it. All right, now we have a beautiful competition set of ribs today. We're going to be using a mixture of our the Grilla AP Rub and the Grilla Beef Rub. So how are you get the rub to stick? Well you don't have to use anything honestly but I like to use cooking oil. So I got a good coat of oil on, now I come back with what I call a light to medium coat of rub. And we're like I said we're going to alternate layers layer one AP layer, two beef. My advice is to set these aside for a good 20 minutes to let that rub really get in there before you put them on the grill. Set that grill at 250 to 275 and they're gonna take about, given the thickness these ribs, right about four hours. Open it up. I like to favor toward the middle. Okay you're gonna hang out in there again for four hours roughly, we're gonna come in about once an hour (I like to spritz with a little bit of apple cider vinegar, and when I spritz it also gives me an excuse to re-season just a little bit). We're gonna hit it with the beef rub, wait an hour, spritz it, hit it with some AP rub, you get the idea. The rubs really break it down nicely he's been hitting them with the apple cider vinegar so we're gonna mist them one more time and we're gonna hit them with a little bit of AP and they'll be just about done in about another 45 minutes. What's the best way to cook baby back ribs? Should I get a Grilla, Silverbac or Kong? We help answer both of those questions in a Grilla Grills throwdown where we grill baby back ribs on all three grills! In a nutshell, Grilla produces a deep, rich smoky flavor. Even the seasoned BBQ’er chows down at the taste only Grilla can provide. Silverbac is as versatile a wood pellet grill as the day is long. #grilledribs #babybackribs #grillagrills Transcription: Hey guys, Shane Draper here with Grilla Grills and we're doing another Throwdown today. We're going to be competing with the mighty rib. Our three different pits - the Kong, the Silverbac and the Grilla, we're using the same pellets in both the Silverbac and the Grilla, same set temp. Today, we're going to be cooking at 250 on all three pits. We're using the mighty Flame Boss to control our pit temperature, the kick ash basket. Let's get in here and get going. We're going to put a base coat down of the AP rub on all the ribs. I'm going to come back thirty minutes into the process and start spritzing. First, baby back, all of our ribs go on bone side down guys and as I do these I'm going to throw them on the cookers. We're going to use our trusty spritz bottle of just water, so let's start with the Grilla, so get a quick spritz in there. Let's run over here to the Silverbac, same thing, and you'll notice when I'm spritzing just a light spritz because we're gonna do this about every 30 minutes but as soon as you see it starts to pack up and you get a little bit of surface moisture, you're done. I'm going to go ahead and sauce those and we're going to give them just about ten minutes for the sauce to set. I'm going to bring them out here, do a couple slices, do a couple tastes and see what we think. This is the Kong baby back. Definitely done, nice pull away. Let's get a get a quick bite. Definitely cooked over charcoal, has just a touch of bitter in it, but not bad. Let's try our Silverbac, there's a pull test, you can see from this side here, pretty good-looking rib too - fantastic flavor, great juiciness, no complaints whatsoever. A little less bitter than the Kong - just a touch. Let's get over here to the Grilla and give this guy a quick pull, same thing, pulls right out, they're definitely done but not overdone, good-looking rib, but the only major difference between the three was the bitter on the Kong. 'Course we use the same same rub, same pellets, you know, everything on the Silverbac and the Grilla. The Grilla was a touch juicier. Silverbac I thought had just a little more smoke ring on it, but you could tell no difference in the flavor, but I will say the Grilla was just a touch juicier, so tough call. Today Dom took a Grilla out to our new patio, grabbed some awesome Dino Bones from the fridge, and made the best brisket on a stick he's ever smoked! Check out the video for a super simple recipe that will show you how to make these gigantic ribs for yourself! #pelletgrills #beefribs #bbq What's going on Grilla fam? Dom here as always with Grilla Grills. Today is rib day. That means we've got some awesome stuff for you. We're going to be cranking out some big old beef ribs today. That's right, the dino bones that everybody knows and loves. They're the talk of the town when it comes to smoked food out there, especially on pellet grills. We're going hot with our big dino ribs. We've got some fantastic AP rub on there from Grilla Grills. Of course, we've got our beef rub and we added on a little bit of cayenne for some nice hot kick. So we got our beef ribs on our Grilla and as you know this is going to be a long cook probably looking about four to five hours at least. Rocking it about 225 using our competition blend pellets now. Because this is going to be a long cook, I'm going to want to build a good amount of bark on these things. Because frankly, that's my favorite part of barbecue. Now if you want to go and check our website, out we've got a full article that we just came out with earlier on this week telling you all about how to build good bark, where it comes from, and all that great info. Well to get started, we put on a nice thick layer of our rubs. That's going to get us going for our bark. What we got to do to keep it building throughout the cook though is keep that nice, moist and wet. We're going to do that by spraying on a little bit of our spritz. Now, in this spritz, we have some Worcestershire sauce, a little bit of hot sauce, a little bit of chicken broth. You can use beef broth or whatever you have at home. And then some apple cider vinegar as well. When you're looking at the different stuff in there, just imagine that you want to use more Worcestershire than hot sauce, more apple cider vinegar than Worcestershire, and more water or broth whatever your substitute is for that. It's going to add some spice and as this evaporates off we're going to end up having a little bit of that flavor every time. I'm going to spray this probably every half hour or 45 minutes. You don't want to go overboard because as soon as you start spraying too much that's when those spices and rubs start to wash off and you lose your bark instead of creating it. So our big old beef ribs have been rocking on our Grilla for a good oh five, five and a half hours now. The temperature is just about 200. You're going to want to pull them out at around 195 to 203. That's going to be the sweet spot area that you want to pull these guys out. These have been cooking for five and a half hours on our Grilla right behind me. These things are going to be fantastic, let's dive on in here with a little slice. See how this does for us, oh man. Well ladies and gentlemen I think that is how you do it just jiggly jiggliness right there. Look at all of that deliciousness right there people. Got our AP on there, we've got our beef rub on there, and I can definitely feel the kick of that cayenne that we tossed on. We had a little bit of hot sauce in our spritz as well so every time we spritz down there just a little bit of that extra hot sauce was laying on the back end of it. Guys these are fantastic if you ever get a chance, go out there buy some. So what I'm gonna do today is just score these a little bit give them a little bit of bite through seen a good boning knife good chef's knife and just run a quick crosshatch across the membrane side, and you come back the other way just make a nice little diamond shape. And while I'm back here I'll trim up anything that just doesn't look uniform and nice. We'll go ahead and trim out the waxy hard fat on this last one here. The next step after we get them all cleaned up and trimmed how we want them we're just going to put a light coat of olive oil on them. I do oil the membrane side so I want to give the membrane every chance it can to cook down and get out of the way okay so the oil is gonna help it cook a little faster. So we're using our Grilla Grills beef rub it's a fantastic rub for these. Don't wanna go too heavy you will still want to taste beef you don't want to be all rub but you definitely want a good coat. So for our braise we're going to use one cup of really good quality beef stock or beef broth. One cup of red wine, a quarter cup of Wurster sauce and then you need a couple tablespoons of butter. One other thing we do mix together, we use one part apple cider vinegar and one part apple juice in a spritz bottle and once an hour we're going to spritz our beef ribs okay. We've got our grill heated up to 250. We're gonna put these guys on the bottom rack. Okay, so it's been an hour so it's time check out our beef ribs oh yeah they're starting to get some good color so we're going to spritz with our mixture let shovel back in just a little bit and we'll check on them in about another hour. Now go meat side down in your braise okay definitely want to go meat side down got to get that meat down in the juices. You want a really good seal on this okay once you start foiling it up. Use a little extra foil make sure you're covering your pan well and it shouldn't take much more in about two two-and-a-half hours for these to be I mean absolutely just fall-off-the-bone tender and that's what we wan. Okay so we're gonna put these guys exactly where they were before just dead center in the bottom rack we have to take these things up to 205 degrees from to get super tender but at any point you're happy with the texture and the tenderness that's when you should pull them rest them for just a little bit, and then eat them. Okay so our beef ribs are done they're cooled off so it's time to cut them. So let's give this a taste man this thing guys look at that it's just awesome. So would you make these at home you've seen them made today did you how would you rate this on the difficulty scale? Super easy. Not that difficult. Brontosaurus ribs, beef ribs, short ribs, whatever you want to call them they got a lot of names but they were fantastic but I'll tell you what I loved them in that mustard sauce, especially the Grilla Gold n Bold. No Wrap Ribs on a Pellet Grill #ribs #pelletgrill #bbqboomhauer No Wrap Ribs on the Grilla Grills Silverbac No wrap ribs is one of the easiest recipes we have ever done. This is a great way to have great ribs but with very little effort. This recipe turned out great and the bark was awesome! *What You Need* -A couple slab of St. Louis Spare Ribs -Your Favorite BBQ Rub -4 hours of your lazy day To start, we picked up some ribs from out local grocery. They were a little then but turned out great. As far as prep work, I only removed the membrane and didn't worry too much about trimming. To save time I went ahead and fired up the 🤍 Silverbac and set it to 250. This will give me a couple of minutes to get these ribs seasoned and ready for the pit. For seasoning we are going to use our very own "Mississippi Grind". You can use any rub you would like but, I would avoid rubs with a lot of sugar. Since we aren't wrapping these ribs a low sugar rub will do better and keep the ribs from getting too dark. I applied a pretty heavy coat of rub on both sides. Once the pit gets up to temp it time to get these ribs on! As far as smoking these ribs, its as simple as it can get. Once we get them on the pit we are letting the pit do all the work. I checked on them at the 2 hour mark just to see how they look. At this point if they are getting too dark you can always tent them with foil. At the 4 hour mark the ribs should be perfectly tender and ready. I always like checking the ribs for tenderness with a small temp probe or toothpick. The probe should melt right into the ribs. The meat will be super soft between the bones. If you are still unsure you can always temp them between the bones. I would say anything between 205-210 will be perfect. Once I got the ribs off, I let them rest for at least 10 minutes. They don't have to rest too much longer than that but you definitely want them to cool off a little. These ribs had a great bark and really picked up a good smoke flavor from the 🤍 cherry pellets. I hope you all enjoy this recipe and make sure to give us some feedback. This competition baby back ribs recipe has won many trophies in competition. Find the best recipe for spare ribs, smoked ribs, BBQ ribs, pork ribs! This recipe pulls out all the stops and spares no expenses. These ribs will end up looking shiny and will taste very sweet. Be prepared for sugar shock as these ribs will be candy on a bone, but they are very good. #bbqribs #pelletgrills #pork Start by pulling the silver skin on your ribs and coating with the oil/mustard. Put a medium coat of rub on the ribs, and let them sit in the refrigerator for at least 4 hours (6 to 8 hours is better). Remove the ribs from the refrigerator and let them rest at room temp for about 45 minutes. If all of the rub has been absorbed by the ribs, lightly redust them. Mix together the rib mist ingredients and mix well, be sure to shake this mixture up just before using it each time. Preheat grill to 250 degrees. Place the ribs on the grill and let cook for an hour. After the first hour, lightly redust every 30 minutes for the next 2 hours. Then use the rib mist and mist the ribs just until the ribs are slightly moist. You don’t have to overdo it with the mist. You just want to moisten them. At the 3 hour point, the ribs will be about half done and it’s time to foil. Pull two sheets of foil large enough to tightly wrap your ribs. You may want to use 2 sheets per rib if you are worried about putting a hole in your foil. In the first foil wrapper lay down 1/3 cup of the brown sugar and then lay half of one stick of butter on this. You can cut the butter into squares and lay them across the whole pile of brown sugar. You are making a bed for the ribs to lay on—you will lay the ribs meat side down into the bed of brown sugar/butter. Next repeat laying down 1/3 cup of brown sugar and the rest of the butter on the bone side of the ribs. Now take the foil and wrap them tightly and place back on the grill. Mix together your glaze and locate a silicon brush to apply. At this point, check the ribs every 30 minutes until they are done. You will know they are done when the meat is well pulled back from the bone and you test the ribs by pulling up on one bone and it breaks free without any meat attached. Once the ribs are done, take the foil, open it and fold down the sides of the foil to make a tray or boat. You will then re-dust the bone side of the ribs with rub and flip the ribs over so the meat side is up. Next starts the glazing process. Bring your grill down to 200 to 225 degrees. Now you are trying to set the sauce you are about to apply. Lay down a medium coat of the sauce, leave the foil open and close the grill. Wait 15 minutes and repeat until you are happy with the color and sheen in the sauce. Today I am testing to see what rack of ribs I like best! We are cooking baby backs and some spare ribs on the Z Grills 700E wood pellet grill! This rib recipe is delicious! You will find this method used in most barbecue competitions and is a must-try for ribs! Even my guest Lionel Messi loved these ribs! DIRECTIONS: 2-2-1 method 1. Prep your ribs. Remove the membrane which is a thick plastic-like skin over the boney part of the ribs. removing this allows the smoke to penetrate the meat better. 2. Apply seasoning. Rub the ribs with some peanut oil then apply an all-purpose seasoning blend as a base which consisted of salt, pepper, and garlic. Then hit them with a bbq rub. I used a Kansas city-style rub which you can find here: 🤍 3. Place your ribs onto your smoker bone side down and smoke for 2 hours at 235F. Every 45-1hr sprints them with an apple cider vinegar water mix to maintain moisture. 4. After 2 hours remove ribs from the smoker. Place ribs on some tin foil and apply some honey butter and brown sugar to the top first. Flip ribs over and apply more honey butter and brown sugar. Wrap up the ribs with the tinfoil making sure not to puncture the foil. Return ribs to the grill meat side down. Smoke for another 2 hours at 235F. 5. Once 2hrs is over remove from smoker and check tenderness. When removing from the smoker your ribs should have a nice flex to them so be careful while transferring them. You want to see some good pull back on the bones. If you can pull and wiggle the bones and they seem loose but will not separate you are good to go. If you do not see this you may need to return to grill and cook for a little longer checking periodically. 6. Once tender, apply your favorite BBQ sauce. Remove the ribs from the tin foil and apply bbq sauce top to bottom. Return ribs to the smoker for 1hr. at 235F or until the bbq sauce has thickened up and become tacky. 7. Remove ribs from the smoker and let rest for 10-15 minutes. 8. Slice and enjoy! Ribs didn't turn out quite right? Some adjustments can be made as far as time and temp goes. How to Make Grilled Beef Short Ribs w/ Tina the Grilla Girl

#pelletgrill #shortribs #recipe Transcript: Hi, it's Tina the Grilla Girl here and today I'm gonna show you how to make the dish that I won 2nd place with the Fire and Ice championships at World Food Championships in Orange Beach. So what you're going to start with is I would say 2 to 3 minimum of the ribs per person. And I'm making a beef short rib that's crosscut. I know many of you have fixed ribs before beef and pork but I want to make sure that y'all know this membrane that's on your rib should be removed. When you grill these this just does not tenderize. So I'm basically just going to take a knife and remove it as thin as possible. Alright, let's marinate those cross-cut ribs. I've already got mine in the vacuum-sealed bag here or they only have to marinate for about an hour. I've got 16 ribs in here with the marinade pop them in the fridge for an hour. If you choose not to vacuum seal or don't have a vacuum sealer no big deal. Put them in a casserole dish or on a sheet pan, pour the marinade over them, pop them in the fridge. I would give them at least 6 hours. I took each one of these ingredients, popped them in a blender, blended it up, poured it over the ribs, and vacuum-sealed it. So it's pretty easy. So let's start with the ingredients. I'm gonna use 6 tablespoons of hoisin sauce. I'm going to use 2 tablespoons of sesame seed oil. I'm going to use 4 tablespoons of soy sauce. I suggest that you use the full sodium because we're not gonna add any salt to this marinade. I'm also gonna use half a cup of brown sugar, then red pepper flakes (a tablespoon). If you don't like it very spicy, just use a teaspoon. Then we're gonna use 4 oz of mirin. Then we're gonna use four tablespoons of rice vinegar. I used the seasoned. Next thing: we've chopped the apples. We use a Granny Smith and a Fuji or a Braeburn or a Honey Crisp. Then I used a finger knob of ginger. Then I have three tangerines. I halved them, squeezed the juice in, and I threw one of the Tangerines right in it. Garlic: I took 3 cloves. Secret ingredient: maraschino cherry juice. I know it's crazy but I put 2 tablespoons of maraschino cherry juice. Then what we're gonna do crank up the Grilla. I serve the Asian style cross-cut ribs over a homemade Asian salad you can get great quality in a bag in the produce section but I prefer to make my own. So the recipe has I finely shredded about half a head of napa cabbage. I grated one carrot, added it to the bowl, I bought some of the tiny sweet peppers and matchstick cut them (four or five). And then I used sugar snap peas. I also matchstick cut them. I chopped either a Granny Smith or a Fuji, into kind of a small dice, and I tossed them in the juice of two tangerines. Now for the dressing. In my trusty Bullet Blender, I added one small piece, about the size of say of a nickel, of fresh ginger. I added one small clove of crushed, peeled garlic. The juice of another tangerine, four tablespoons of your rice vinegar, one tablespoon of your mirin, half a teaspoon of sesame oil and a large pinch of white sugar and salt. I put it in my blender. So I'll pour this in the slaw along with my apples I liked a little spice so I'm going to toss a little of my red pepper flakes. I have turned the Grilla on for 375 and I'm using apple pellets because you know I used apple inside this marinade so I'm just trying to infuse the flavors. You'll have to stay out here while these are cooking because they're about an 8-minute cook. 375 in one direction. I like grill marks so I will turn them. I'll let them wait another two, three minutes and then I'll flip them over and do the same.
