In a seperate smaller mixing bowl whisk together the eggs and milk. Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth. Pour the melted butter into the crepe batter and whisk until combined. Cover the crepe batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour. Heat a large frying pan or crepe pan over medium heat. Grease the pan with melted butter and pour in about a ¼ cup of crepe batter. Use a crepe tool or tip the pan around to spread the batter evenly. Cook the crepe for 30 seconds to a minute or until the top has set, flip the crepe using a spatula and your hands and cook for a further 30 seconds on the remaining side. In a large bowl sift flour, add salt, sugar and stir. 2. In a separate bowl whisk eggs, vanilla extract and milk, until combined. 3. Gradually add the milk mixture into flour mixture and stir until incorporated and smooth. Pour in melted butter and whisk until combined. Let stand at room temperature for 15-30 minutes (or in the fridge). 4. Heat a small non-stick pan over medium heat. Add butter or oil to coat. 5. Pour about 1/-3-1/4 cup of the crepe batter, swirling it to evenly coat. Cook for 1-2 minutes, flip and cook for 30 seconds. Remove from the pan and repeat with the remaining batter. Remember to grease the pan between ease crepe. 6. Serving suggestion: spread 1-2 tablespoons of Nutella, top with banana slices, fold and serve. 7. Serving suggestion 2: spread 1-2 tablespoons cream cheese/sour cream, top with strawberries, fold and serve. making an eating crepes is something we do a lot in France. here is guide that cover all the steps from beginning to end from how to make the crepes and what filling to use to enjoy them. How to choose a crepe pan: * - First and foremost the size of a crepe pan must be around 10 inch or 26 cm in diameter. - Next It has to be lightweight! making 50 to 100 crepes in a row trust me is not an easy task and using a cast iron or steel pan (as fancy as it looks) will have you stop using such a pan very quickly. so the lighter the pan the better. - Comfort is next. a good old sturdy large plastic handle that fits well in the hand is what I prefer as it does not get hot and provide you with a great grip for flipping the crepes. Edges of the pan. a crepe pan is not an omelette pan, the edges of the pan must be extremely low profile to allow the crepe to slide off easily when flipping the crepes. Finally regarding pan brands, get a reasonably decent brand with a good warranty in case something goes wrong. crepe pans can be damaged quickly and you should not invest too much in such specialty pans, as you will not be using it everyday. in this video I am using a Debuyer crepe pan because that was a present from someone. it is a good quality pan but I really don't like the handle as it is absolutely not comfortable an gets really hot after extensive use. that said the durability is there and I have been using that pan many times and the non stick still did not scratch If i have to recommend a pan I would get that one: 🤍 The pan I am using in this video: 🤍 This is the video for you if you want know how to make French crepes. Whisk to blend all the flour in. Add sugar, if using, and salt. Add the beaten eggs and whisk until batter is smooth. Strain if desired. Batter should resemble loose cream. If making crepes, same day, let rest in fridge for 30 minutes. Then remove and add melted butter. Note, if you refrigerate batter for longer, you need to add butter before chilling or it will not blend with mixture. Lightly butter an 8 inch crepe pan over medium high heat. Using a paper towel , wipe some melted butter over entire pan. Pour 2 Tbsp. (25 ml) batter into the top of pan and swirl around so batter reaches the outer edges of pan evenly. Cook 1st side for 50 seconds - 1 minute.. Flip and cook other side for 30 seconds. Repeat with remaining batter. Make the best crêpes with two of Chef Jacques Pépin favorite recipes! INGREDIENTS Crêpe Suzette Serves 4 Crêpes · 2 large eggs · 3/4 cup all-purpose flour · 1/2 cup milk · 1/8 teaspoon salt · 1/2 teaspoon sugar · 1/3 cup cold water · 1 tablespoon canola oil · 1 tablespoon melted unsalted butter, plus more butter for the skillet Orange Butter · 6 tablespoons unsalted butter, softened, plus more for buttering · 1/4 cup plus 2 tablespoons sugar, plus more for sprinkling · 1 tablespoon finely grated orange zest · 1/3 cup fresh orange juice · 1/4 cup Grand Marnier · 2 tablespoons Cognac Savory Crêpe · leftover chicken pot pie mixture · grated parmesan For the crêpes: In a medium bowl, whisk together the eggs, flour, milk, salt and sugar until smooth; the batter will be thick. Whisk in the water, oil and melted butter. Heat a 6-inch crêpe pan or nonstick skillet and rub with a little butter. Add 2 tablespoons of the batter and tilt the skillet to distribute the batter evenly, pouring any excess batter back into the bowl. Cook over moderately high heat until the edges of the crêpe curl up and start to brown, 45 seconds. Flip the crêpe and cook for 10 seconds longer, until a few brown spots appear on the bottom. Tap the crêpe out onto a baking sheet . Repeat with the remaining batter to make 12 crêpes, buttering the skillet a few times as necessary. For the orange butter: In a mini food processor, blend the 6 tablespoons of butter with 1/4 cup of the sugar and the orange zest. With the machine on, gradually add the orange juice until incorporated. Preheat the broiler. Butter a large rimmed baking sheet and sprinkle lightly with sugar. Place 2 rounded teaspoons of the orange butter in the center of each crêpe. Fold the crêpes in half and in half again to form triangles; arrange on the prepared baking sheet, pointing them in the same direction and overlapping slightly. Sprinkle with the remaining 2 tablespoons of sugar and broil on the middle shelf of the oven until they begin to caramelize, about 2 minutes. Using a long spatula, transfer the crêpes to a heatproof platter. Meanwhile, in a small saucepan, heat the Grand Marnier and cognac. Ignite carefully with a long-handled match and pour the flaming mixture over the crêpes. Tilt the platter and, with a spoon, carefully baste the crêpes until the flames subside. Serve right away.

I am your host Matt Taylor. Today I am going to show you how to make crepes, or the French pronunciation I believe is crepe. I had a request to make a video on crepes, so here we go. Crepes are really easy to do, if I can do it, you can do it. Let’s get started. First some people like to do this in a blender, so I have a blender here, but I am going to do this with a hand mixer, you can use a stand mixer if you want, or you can use a whisk. But uh, let’s first start off with 2 eggs, 1 and 1 half cups of milk, this is 2 percent milk, but you can use 1 percent, or whole milk, if you like, 1 tsp. of oil this is canola oil, or you can use vegetable oil. Also some people like to substitute the oil with butter, take like a tablespoon of butter and melt it, and put it in there. All right I am going to blend this together well. And now I am going to add 1 cup of all-purpose flour, and 1 fourth tsp. of salt. And that is the base batter for crepes. If you are going to make a sweet crepe what I like to do, is I like to add 1 tsp. of vanilla extract, and one tablespoon of granulated sugar. If you are making a savory crepe, leave out the vanilla extract, leave out the sugar, and add an extra half tsp. of salt. Mix this together. There we go. Now if for some reason it is pretty lumpy and you can’t get the lumps out, you can throw this through a strainer. Now some people will chill this for about an hour in the refrigerator, I don’t do that, I don’t find it necessary, but you certainly can if you are having trouble with your batter. And now this batter is ready to go. All right I am going to turn the heat on the stove between medium and medium high. Now I just have an 8 inch non-stick skillet here, they do have a crepe skillet that you can buy, I will put a link down below if you want to get one of those, or they also have these little crepe making kits that you can get that are pretty cool, I will put a link down below in the description for those as well. Now once our pan is getting heated up, I am also going to take a little bit of butter, not a whole lot, and we will put it in the pan. I have ladle here and it holds about a quarter cup of batter, if you don’t have a ladle like this you can just use a quarter cup if you want, but this works really nicely. Ingredients 300 g of wheat flour 3 eggs 3 teaspoons of oil Salt Milk Beer Cookingware - Bowl - Whisk - Teaspoon - Frying pan ( A Crepe One if you have one ! ) - Kitchen paper Instructions - Flour goes in the bowl Make a well and break in 3 eggs 3 drops of beers ( three big drops ) Add the oil Add a pinch of salt Mix, Stir, Whisk Gradually add the Milk You should get a smooth (quite runny) finish Let it rest for 30 minutes Put the pan over high heat Pour in some liquid to fully cover the bottom but not much more When the crepe start to move in the pan Check if it has a bit of color Then Flip it over ! THE CLASSIC FRENCH CREPE RECIPE A very versatile food that's always served hot A crepe is basically a type of thin pancake made from wheat flour. Crepes originated in Brittany, the Northwest of France and quickly became very popular worldwide. They can be used for both sweet or savoury meals, and can be topped or filled. It's ideal to purchase and keep a non stick crepe pan, purely for crepe making as they are prone to sticking when cooking.



Bonjour! A little #French #vintage style #cooking video for you this weekend from Provence in the south of France. I love crepes or pancakes and especially when they're smothered in sweet salted caramel sauce with fruit and crème fraiche! This is a twist on the classic French style crepe recipe. I use yoghurt instead of milk - which is good if you're lactose intolerant or just want some extra nutrients from the yoghurt. The music you hear in the beginning is a wonderful vintage track performed by Perry Como - one of the great crooners - and the song is Begin the Beguine. Love Kylie EASY FRENCH CREPES RECIPE: Crepe Ingredients: 4 tablespoons or about 60 grams of butter 4 eggs 1 cup flour 1 cup yoghurt (I always natural sugar free cream free so don't feel you need to use Greek yoghurt but then again, I suppose you could buy a tub and then use it at the end if you don't want to buy creme fraiche or cream) 2/3 cup water Pinch of sea salt Cinnamon Vanilla extract Caramel Sauce Ingredients: Honestly, you could halve this but it depends if your guests will want lots of sauce... and it keeps quite well in the fridge. I forgot to add in the video that sometimes I'll add some cream when it's off the heat at the end - this makes it thick and delicious but the nearest town is a long way from this house and so I didn't have any. :( I also add vanilla extract and some cinnamon too. 2 cups of fruit - strawberries, apricots, loquats, bananas... 1 cup dark brown sugar 250 grams of butter Method: 1. Brown butter slowly over a low heat as shown in the video - leave to cool. 2. Beat eggs slightly and then beat in your flour to avoid lumpy batter. 3. Mix yoghurt with water and add to batter. 4. Stir in vanilla extract, salt and cinnamon. 5. Add cooled browned butter and beat well before putting to rest in the fridge for at least half an hour, preferably overnight. 6. Pour your crepes onto a greased pan only when it is very hot. 7. Meanwhile for the sauce, over a low heat, cook the butter, sugar and fruit without stirring. 8. When the sugar has dissolved (i.e. you can no longer see individual grains of sugar) you can turn the heat up higher and stir it while it bubbles away and reduces down to a sticky delicious consistency. 9.
