▶️ CHICKPEA PASTA RECIPE: (3 - 4 servings) 2 to 3 Tablespoon Olive oil 150g / 1 cup Onion - finely chopped - 1 medium size onion 150g / 1 cup Celery - finely chopped - 3 celery stalks 150g / 1 cup Carrot - finely chopped - 2 medium carrots Salt to taste (I have added a total of 1+1/4 tsp pink Himalayan salt) 1 Tablespoon garlic - finely chopped (3 to 4 cloves of garlic) 1 Teaspoon Dried Oregano 1/4 Teaspoon Chilli flake (Optional) 2 cups / (1 Can 540 ml) Cooked chickpeas 1+1/2 cup / 350ml Strained tomatoes/Passata 4 cups / 1 Liter of Water 160g / 2 cups approximately - Pasta (mini rigatoni) or pasta of choice Garnish: 1/3 cup / 15g Parsley - finely chopped Drizzle of Olive oil - 1 to 2 Tbsp METHOD: To a heated pan add olive oil, onion, celery, carrot, and salt (½ tsp). Fry on medium-high heat until the onions are soft and just start to caramelize. Then reduce the heat to medium or medium-low. Add garlic, oregano, and chili flakes and continue to fry on medium heat for about 1 to 2 minutes or until fragrant. Now add the cooked chickpeas, strained tomatoes/passata, and water and mix well. Cover the pot and bring it to a boil. Then reduce the heat to low and cook for about 15 minutes on low heat for the flavors to develop. After 15 minutes, uncover the pot and increase the heat to medium and bring it to a gentle boil. Add the pasta and salt and cook uncovered on medium heat until the pasta is al dente. Please note by the time the pasta is cooked most of the water will be gone and you will be left with a creamy sauce. If it happened that the water cooks out faster and the pasta is still not cooked, add some boiling water to it. Please DO NOT add cold water. You can adjust the consistency of the sauce as per your liking whether you want it soupy or thick. Turn off the stove. Garnish with finely chopped parsley and a drizzle of good-quality olive oil. Mix well. ▶️ QUINOA FRIED RICE WITH CHICKPEAS: (3 servings approx.) 1/2 cup / 95g - Quinoa (soaked for 30 minutes) 1/2 cup / 100g - white BASMATI Rice (soaked for 30 minutes) 2 cups/1 can(540ml) - Cooked chickpeas 3 tablespoons - Olive Oil 1cup / 130g - Onion (finely chopped) 1 cup / 150g - Carrot - (cut into small cubes) 1 +1/2 cup / 360ml - Vegetable Broth (low sodium) Salt to taste (I have added a total of 1 teaspoon of Pink Himalayan salt) 1/4 teaspoon - Cayenne pepper (Optional) 1 tablespoon - Lemon Juice or to taste 1/3 cup/ 20g - Parsley - finely chopped METHOD: Wash the quinoa and basmati rice thoroughly until the water runs clear and then let it soak in water for 30 minutes. To a heated pan add olive oil, onion, carrot, and 1/4 teaspoon salt, and fry on medium heat until the onion and carrot starts to caramelize. Add the soaked/drained quinoa, rice, and cooked chickpeas, along with vegetable broth, salt, and cayenne pepper. Bring to a rapid simmer. Then reduce the heat to the lowest point in your stove and cover and cook for about 20 minutes. Once cooked turn off the heat and uncover. Add the lemon juice, and parsley and mix very gently, Cover and let it sit for 5 minutes before serving (for flavors to blend). ▶️ SPINACH BROWN RICE WITH CHICKPEAS RECIPE: (3 to 4 servings) 1 cup / 200g Brown rice - medium grain (if you are using long grain brown rice, adjust the cooking time accordingly, as it cooks faster than the medium grain rice) 2 to 3 Tablespoon Olive Oil 1+ 1/2 cup / 200g Onion - one medium size onion 2 Tablespoon Garlic - 5 to 6 Garlic approx. 1+1/2 cup / 350ml Strained tomatoes/Passata 300g / 8 to 9 cups approx. - Fresh Spinach - chopped 4 cups / 1 Liter of Water 1/4 Teaspoon Chilli flake (Optional) 2 cups / 1 Can (540 ml) Cooked chickpeas 3/4 cup / 20g Fresh Dill (If you like mild dill flavor add 1/2 cup) Salt to taste (I have added a total of 1+1/4 teaspoon pink Himalayan salt) Garnish: 1/3 cup / 15g Parsley - finely chopped (Optional) Lemon juice to taste (I have added 1 tablespoon of lemon juice) Black pepper to taste (I have added 1/2 teaspoon black pepper) Drizzle of Olive oil - 1 to 2 Tbsp METHOD: Wash thoroughly and soak 1 cup of brown rice for 1 hour. Heat a deep cooking pot. Add olive oil, onion, and 1/4 teaspoon salt. Fry the onion on medium-high heat until it just starts to caramelize, while stirring frequently. Then reduce the heat to medium-low. Add the finely chopped garlic, and chili flakes and continue to fry for another 1 to 2 minutes or until fragrant, while stirring frequently. Now add the strained tomatoes, and spinach and mix well. Transfer the soaked/strained rice, cooked chickpeas, salt, water, and fresh dill to the pot and bring it to a vigorous boil. Then reduce the heat to low and cook for about 25 to 30 minutes or until the rice is cooked but still slightly firm. (We don't want mushy rice). Uncover and turn the heat to medium-high and cook for another 1 to 2 minutes. Turn off the heat and garnish with Parsley, lemon juice, and a good quality olive oil. #vegan #recipes #food

Let me know in the comments below. ▶️ RECIPE INGREDIENTS: (4 servings approx.) 1 Cup / 200g White Basmati Rice (washed thoroughly with water) 2 Cups / 1 Can (540ml Can) Cooked Black Beans OR Pinto Beans (drained/rinsed) 3 Tablespoon Olive Oil 1 +1/2 / 200g Cup Onion - Chopped 1 Cup / 150g Green Bell Pepper - Chopped 1 Cup / 150g Red Bell Pepper - Chopped 2 Tablespoon Garlic - finely chopped 3/4 Cup / 175ml Strained Tomatoes / Passata / Tomato Puree 1 Teaspoon Cumin 1 Teaspoon Paprika 1/4 Teaspoon Cayenne Pepper or to taste 1 Cup / 125g Frozen Corn kernels (you can use fresh corn) 1 Cup / 225ml Vegetable Broth (low sodium) Salt to Taste (I have added total 1+3/4 Tsp of Pink Himalayan Salt) Garnish: 1+1/2 cup / 100g Green Onion - chopped 1/2 to 3/4 cup / 20 to 30g Cilantro or to taste - chopped OPTIONAL - Lime or Lemon juice to taste (Taste the rice first and ADD ONLY IF IT’S NEEDED, I have added 1/2 tablespoon of lemon juice as I like it a bit sour) Black pepper to taste (I have added 1/2 teaspoon) Drizzle of extra virgin Olive oil (I have added 1 tablespoon of organic cold pressed olive oil) ▶️ METHOD: Thoroughly wash the rice - a few times until the water runs clear. Drain 1 can of black beans. Set the rice and beans aside to drain any excess water. (Use a Wider Pot to cook this dish, that way the rice can cook more evenly without getting mushy). To a heated pot add olive oil, red and green bell pepper, salt and fry on medium to medium high heat (depending on the heat of your stove) until the onions and pepper starts to caramelize. Adding salt to onion/peppers will release it's moisture and help it cook faster, so don’t skip it. Once the onion starts to caramelize, add the garlic and fry for about 1 minute or until fragrant. Then add the strained tomatoes, ground cumin, paprika, cayenne and mix well. Add the washed rice, cooked black beans, corn kernels, salt, vegetable broth and mix well. Bring it to a boil and then cover and cook on low heat for about 15 minutes or until the rice is cooked (but not mushy). Uncover and turn off the heat. Add the chopped green onion, cilantro, lemon juice, black pepper, drizzle of olive oil and mix it very gently because rice is very soft at this point and over mixing can cause the rice grains to break. (NOTE: taste the rice before adding lemon juice and add lemon juice ONLY IF NEEDED) Cover and let it rest for 5 minutes before serving. This recipe is perfect for meal planning and can be stored in the refrigerator for 3 to 4 days. ▶️ IMPORTANT TIPS: - Use a Wider Pot to cook this dish, so that the rice can cook more evenly without getting mushy - Every stove is different so regulate the heat accordingly - The Cooking time depends on several factors - the type of pot being used, heat of the stove, moisture content of the ingredients etc. so please use your judgement and adjust the cooking time accordingly - Thoroughly wash the rice until the water runs clear to get rid of any impurities/gunk (it's an important step so please do not skip it) - This recipe is for white basmati rice, if you are using a different kind of rice adjust the water accordingly Welcome to Food Impromptu! Hello there! For this video I challenged myself to come up with 4 delicious vegan meals, only using the things I already had at home. The result was these super tasty chickpea breakfast tacos, a cozy and quick miso noodle soup, crispy shredded pancakes (my attempt at Kaiserschmarrn lol) and a super easy to make crunchy tofu & peanut rice bowl. What’s a meal you cooked for yourself recently - only using leftovers and/or pantry ingredients? Shop my MEAL PLANNER here: 🤍 Instagram: 🤍mina_rome 🤍 50+ Recipe Ebook: 🤍 Email: minarome.yt🤍gmail.com Website: 🤍mina-rome.com INGREDIENTS & NOTES #1 Chickpea Breakfast Tacos ½ can rinsed and drained chickpeas (120g = 4.23oz) 1 onion olive oil for the pan a dash of cumin a dash of paprika ¼ tsp garlic powder ¼ tsp chili powder (or add any spices however much you wish) 1 ½ tbsp tomato purée ⅓ cup passata (80ml) ⅓ cup vegetable broth (80ml), more if needed salt to taste 1 tbsp vegan butter 1 ½ tbsp tapioca starch* ⅓ cup + 1 tbsp soy cream (90ml) ¼ tsp garlic powder 2 tsp white wine vinegar generous pinch of salt or to taste optional: pinch of black salt/kala namak for egg flavour optional: handful of vegan cheese for cheese flavour 1-2 tortillas other add-ins: spring onion, spinach, parsley, sautéed mushrooms, pickled cabbage ... *can be subbed with cornstarch - the result will be a bit less “fluffy” and more like melted cheese soy cream will give you that bright white color and a richer flavour, but can be subbed with oat or soy milk - then the result will be a bit more brown in color and a little more thin, but still tasty (more like cheese sauce) → serves 1 #2 Quick Miso Noodle Soup 1 handful of dried mushrooms (like shiitake) 1 clove garlic, finely minced olive or veg oil for the pot 1 tbsp maple syrup 2 tbsp balsamic vinegar 1 tbsp soy sauce or vegan worcestershire sauce optional: sriracha to taste (like ½ tsp?) 1 spring onion, chopped 1-2 tsp miso paste 1 ½ cups vegetable broth (375ml) 1 handful frozen peas 2 handfuls frozen edamame (or any other frozen veg you enjoy) 3-4 toasted seaweed sheets ~ 50g glass noodles or sub with rice noodles, regular pasta even (1,76oz) → serves 1 #3 Crunchy Vegan "Kaiserschmarrn" 1 cup + 3 tbsp all purpose flour (120g + 3 tbsp) 1 1/4 tsp baking powder 4 tbsp sugar 1 tsp vanilla sugar 1/2 tsp salt 2/3 cup non dairy milk (160ml) 1 tbsp apple cider vinegar 1/3 cup aqua faba = chickpea liquid (80ml) 1-2 tbsp vegan butter for the pan (add 1 before baking and 1 after baking) 1 ovenproof non stick pan optional: 1 handful of raisins, either add to the pancake mix or to the cooked pancakes before serving Serve with vegan cream, vegan yogurt, apple sauce, berries, powdered sugar … serves 2 #4 Tofu & Peanut Rice Bowl 2 servings of cooked rice for example cook up ¾ cup rice (135g) + 1 ½ cups water (375ml) For the crispy tofu: 1 block firm tofu, cut into nugget shapes (200g = 7oz) 2 tbsp natural runny peanut butter (sub w almond butter? white tahini?) 1 tsp sriracha 1 tbsp soy sauce 1 tbsp nutritional yeast 1 very generous pinch of salt all kinds of spices you like 4-6 tbsp water, more if needed ~4 handfuls unsweetened corn flakes Optional: 1-2 tbsp sesame seeds or crushed peanuts to dip the bites into !! Another pinch of salt to sprinkle over the bites before baking!! 2 handfuls of frozen broccoli 1/4 cup water (60ml), more if needed Would recommend adding a bit of fresh lemon juice + salt to the broccoli before serving Peanut sauce for serving: 1 heaping tbsp natural peanut butter 1-2 tsp soy sauce 1/2 tsp sriracha 1 tbsp lime or lemon juice Salt to taste 3-4 tbsp water to adjust the consistency, more if needed Feel free to make more sauce :) Or use these recipes for the tofu: Basic Crunchy Nuggets: 🤍 BBQ Tofu: 🤍 serves 2-3 Music used: intro: 🤍 ben camden - 🤍 Soft eyez: chantal (song not available on sc anymore) loopschrauber: 🤍 thunderhoodie: 🤍 C.James .
