Full written recipe for Dahi Bhalla Prep time: 15-20 minutes (excluding soaking time) Cooking time: 20-25 minutes Serves: 5-6 people Bhalle Ingredients: • GREEN GRAM | मूंग दाल 1/2 CUP • BLACK GRAM | उरद दाल 1 CUP • WATER | पानी 2-3 TBSP / AS REQUIRED • SALT | नमक TO TASTE • RASINS | किशमिश 1/4 CUP • CUMIN SEEDS | जीरा 1 TSP • GREEN CHILLIES | हरी मिर्च 1-2 NOS. (CHOPPED) • GINGER | अदरक 1 INCH (GRATED) • WATER | पानी AS REQUIRED (LUKEWARM) • SALT | नमक A PINCH • ASAFOETIDA | हींग 1/2 TSP Method: • Wash the dals well & soak them separately for upto 5-6 hours. • Once soaked, drain the water & wash them again, now add the urad dal in a mixer grinder jar & grind it into a fine paste, make sure that you use minimal water, transfer the paste into a large bowl & then grind the moong dal in the same way & transfer it into the same bowl. • Further add salt & mix it well using your hands until both the dals have combined. • Once the dals have mixed you will need to whisk the mixture really well for 8-10 minutes, the mixture should become fluffy & pale, you can either do it by moving your hand in a circular up & down motion or by using a whisk. • To check if the mixture is ready, scoop up some of it in a spatula or a spoon & flip it upside down, the mixture should not drop. • Once you have whisked the mixture add the rasins, cumin seeds, green chillies & ginger & gently mix all the ingredients in the batter. • Before frying the bhallas, make the water that you will be needing to soak the bhallas after frying, in a large bowl, add lukewarm water, salt & asafoetida & mix it well. • Now to fry the bhallas, heat oil in a kadhai until its moderately hot or if you have a thermometer, the temperature of the oil should be 170 C. • Dip your hands in ice cold water & scoop out some batter then drop it carefully in the oil, then immediately splash the bhallas with hot oil so that they puff up nicely. • Fry over medium high heat until light golden brown, once they turn light golden brown remove them from the hot oil using a spider & then immediately transfer them into the water that you prepared for soaking the bhallas, let them soak for 4-5 minutes or until they sink. • Once soaked, remove the bhallas from the water & gently squeeze them in your hands to remove all the excess water. • Your bhallas are ready. Dahi Bhalla masala Ingredients: • CUMIN SEEDS | जीरा 5 TBSP • BLACK PEPPERCORNS | काली मिर्च 2 TBSP • SPICY RED CHILLIES | तीखी लाल मिर्च 4-5 NOS. • CAROM SEEDS | अजवैन 1 TBSP • BLACK SALT | काला नमक 1 TBSP • CHAAT MASALA | चाट मसाला 1 TSP • SALT | नमक 1/2 TSP Method: • Set a pan on high flame & heat it nicely, turn the flame down to low once it’s hot enough & then add the cumin seeds, dry roast the cumin seeds until they turn dark. • Once the cumin seeds turn dark, transfer them into a plate. • In the same pan add black peppercorns, spicy red chillies & carrom seeds, dry roast these spices on low flame until fragrant & then transfer them into the same plate as the cumin seeds & cool them down completely. • Add the spices into a mixer grinder once cooled down & also add black salt, chaat masala & salt, grind it into a fine powder. • Your dahi bhalle masala is ready. Seasoned Curd Ingredients: • CURD | दही 2 CUPS • POWDERED SUGAR | पीसी हुई शक्कर 1/4 CUP • BLACK SALT | काला नमक 1/2 TSP Method: • Place a sieve over a large bowl & add the curd along with the remaining ingredients into the sieve. • Now mix all the ingredients well while passing it through the sieve, this process will make your curd extremely smooth & velvety. • You dahi for dahi bhalle is ready. Deep fry them till turns golden brown. Keep it aside. 6. To another bowl, add curd and water. Mix well and keep this buttermilk aside. 7. To a kadai, add oil for deep frying, shape the batter into vadas and drop them into hot oil. 8. Fry the vadas until golden brown and then and place them in buttermilk for a few minutes. 9. Remove them and place them on a plate. 10. First, pour the curd mixture over the vadas, then sprinkle some chopped coriander, boondi and chili powder. 11. Simple yet soulful Dahi Vada is ready to be served. These are made by soaking vada in thick curd. These vada are made from urad dal. The curd is topped up with tamarind chutney and some spices. Do try this delicious recipe and drop a comment for me. Ingredients: • 1/2 cup Urad dal • Curd / Yogurt • Sweet tamarind chutney • Green chutney • Red chili powder • Chat masala • Cumin powder • Salt to taste • Sugar • Oil for frying • Shev / Bhujia Method: • Wash the urad dal really good and soak in enough water for about 4 hours. • Do not soak the dal longer as vade will soak more oil if you soak dal longer. • Drain all the water from dal and transfer it into a blender jar. • Blend the dal into thick paste. Use minimum water while blending. • If you use more water while blending then vade will soak more oil while frying. • The consistency of the batter should be thick. • Transfer the batter into a bowl. • Add salt and mix well. • Beat the batter really good for about 4-5 minutes. It should be light and fluffy. • You can add grated ginger, chopped green chili, cumin seeds, curry leaves if you want. • In a bowl take curd. Add salt and sugar. • Mix well and beat the curd really good and until it becomes nice and creamy. Keep the curd aside. • Heat up oil in a pan. • Take a spoonful mixture into a spoon and make it round by transferring the batter into another spoon. • When the batter takes shape of vada drop it into hot oil. • Another way of making vada is dip your hand into water and take some batter in it. • Give it round shape of vada with the help of the edge of the bowl. • Fry vada on medium heat until these get nice even golden color. • Take vada out of oil, drain excess oil and transfer vade into a plate. • Take water in a bowl and add some salt in it. • Mix well and drop vade into it. Soak vade in water for about 7-8 minutes. • Take vade out and squeeze as much water as possible with your hands carefully. • Transfer the vade into serving plate. Add curd, tamarind chutney, green chutney, red chili powder, cumin powder and chat masala. • You can sprinkle some shve on it for garnishing. This is optional. You can skip shev. • Dahi vada is already. Dahi vada recipe: Dinna, my maternal grandmother, was one of the most versatile cooks I have known. She had limited means, but she would teach herself things to cook that she had only heard of, or seen from a distance, using her instincts, and experimentation. Her doi bora was one of her most prized recipes—they were soft and airy and did not have the dreaded hard lump at the centre. My mother learned it from her, and we learned it from my mother. Do not miss the sweet tamarind chutney. It really is the dark horse here! Keep it in a jar in the fridge to drizzle on all kinds of chaat. Besides the regular sweet and sour doi bora, we have included another one of our favourites—the salty-sour “dahi vada” that Saravana Bhavan used to serve when I worked in Chennai. When the spices will get cool down, put Hing Powder, Black Salt, and Kashmiri Red Chili Powder in it and grind them all. For Vada, take some Urad Dal, Moong Dal & soak them for 2-3 hours. In a mixer jar, put soaked Dal, chopped Green Chilli, Ginger, some Water and grind and make a fine paste. Then take out the Dahi Vada Batter in a bowl and whisk it for 5-6 mins and make it fluffy. After then put Cumin Seeds & Salt in it & mix it well. Take a bowl, put some Salt, Hing Water, some Water and keep it aside. Keep the pan for heating, put some Oil in it. Keep some water near to you and dip the fingers in that water and then take the batter with that and make the Vadas and fry them in the medium heated Oil on medium flame. Put the fried Vadas in a Hing Water bowl for an hour, then squeeze the Vadas. For Dahi Vada Serving, put some Powdered Sugar & Black Salt in whisked curd and mix it well. Dahi Vada Recipe - Dahi Bhalla - Dahi Gujiya Dahi Pakodi Recipe


Dahi Vada, Dahi Bhalla or Dahi Pakori or Dahi Gujiya is the most liked street food of Northern India, almost prepared on every festival or special occasions. Ingredients Urad dal - 1 cup (250 grams) (soaked) Coconut - 1/4 cup (grated) Green coriander - 3 to 4 tbsp Cashews - 7 to 8 (finely chopped) Black pepper - 1 tsp (crushed) Ginger - 1 inch (minced) Asafoetida - 1 inch (minced) Oil - for frying vada Roasted Cumin powder - 1 tbsp Black salt - more than 1 tbsp Red chilly powder - 1 tbsp Mint powder - 1 tbsp Green coriander chutney Mango powder sweet chutney Directions Getting ready: 1.Start with cleaning the urad dal thoroughly and rinse it well. 2.Then soak the dal in water for 3 to 4 hours. Drain the excess water and grind the dal coarsely. 3.Grate the coconut and finely chop the cashews. Crush the black peppercorns as well. Making: 4.Transfer the ground dal in a big mixing bowl and whisk it really well. 5.To prepare the stuffing, mix following ingredients in a bowl to prepare the stuffing – grated coconut, finely chopped cashews, crushed black pepper, some coriander sprigs and finely chopped ginger. Stir to mix well. 6.Heat enough oil in a wok or pan for deep frying the vadas. 7.Now pinch some mixture with your fingers and make a lump. Place over the wet polythene sheet and flatten it gently in round shape. Top it up with some stuffing and cover it with another flat lump. 8.Close the stuffing well and flatten in a round shape. Very gently separate out the vada from polythene sheet and slide it into hot oil. 9.Fry the vada until golden brown and crispy from both the sides. 10.To make a Gujiya shaped vada, make a big lump from the mixture and place it on the polythene sheet. 11.Flatten it your fingers thinly and top it up with 1 tsp stuffing. Fold the rolled sheet into gujiya shape by lifting the other end of polythene sheet. Close the stuffing well. 12.Gently slide this gujiya into hot oil and deep fry until golden brown and crispy. 13.For round shape vadas, without stuffing, add some more water to the dal mixture and whisk well. Make small lump from the mixture and deep fry until golden brown and crispy. 14.Now drench all the fried vadas in water with some salt and asafoetida. 15.Next, whisk the curd really well until smooth and add 2 tsp sugar and some water to it. 16.Squeeze out the vadas from water and place them in a plate. Then pour some whisked curd, black salt and roasted cumin powder over it. Dahi vada are now ready and done. Serving: 17.To serve, place as many vadas as desired on a plate and pour some more curd over it. 18.Then sprinkle some roasted cumin, red chilly powder, some black salt, mint powder, some green chutney and sweet chutney. Written recipe for Dahi bhalle Rest time: 5 hours Prep time: 10 mins Cooking time: 30 mins Serves: 6 For soaked wadas Ingredients: • Urad dal 1 cup (washed) • Water to soak • Moong dal ½ cup (washed) • Jeera (cumin seeds) 1 tsp • Green chillies 1-2 nos. (chopped) • Ginger 1 tsp (grated) • Raisins 1/4th cup • Oil for frying • Luke warm water for soaking • Salt to taste • Hing 1 tsp Methods: • Soak the urad dal and moong dal separately in fresh water for at least 5 hours or overnight. • Drain the excess water of both, moong dal and urad dal and grind them separately in a mixer grinder to make a smooth paste, do add little water if required. • Add both the dal paste in the same mixing bowl and whisk them well for 8-10 minutes use only one direction for whisking, whisk until the mixture fluffs up. Check by taking a spoon if its stuck to the spoon its ready for the next step, make sure its not pouring in consistency. • Add jeera, green chillies, ginger and raisins, mix and fold gently. • Set a wok or a deep pan filled with oil on medium high heat for deep frying the wadas, dip your hands in cold water, scoop and shape the dal mixture in small roundels and drop it in hot oil carefully. • While frying gently keep pouring the hot oil with the spatula so the wadas fluff up. Take out the wadas and soak them in Luke warm water. • Pour Luke warm water in a big bowl for soaking, add salt and hing, mix well and transfer the fried wadas in water to soak. • Take out the soaked wadas and squeeze out excess water with light hands without damaging the wadas. Keep aside and assemble when about to eat. Seasoned curd Ingredients: • Curd 2 cups • Black Salt ½ tsp • Powdered sugar 1/4th cup or as per taste Methods: • Strain curd with the help of sieve and add black salt and powdered sugar and mix well. Keep aside for later use. Assembly Ingredients: (make sure the chutney and the curd is chilled enough) • Soaked wadas • Seasoned curd • Jeera powder • Red chilli powder • Black salt • Tamarind chutney • Mint chutney • Soaked boondi • Pomegranate seeds Methods: • Place the soaked wadas in a serving platter and pour the seasoned curd on every wadas evenly, sprinkle some jeera powder, red chilli powder, black salt all over the wadas, pour tamarind chutney and mint chutney, top it with some soaked boondis and some pomegranate seeds. • Your dahi bhalle is ready to be served, serve it chilled. This North Indian delicacy is a perfect side dish that can be easily prepared using some easily available ingredients in your kitchen. This curd dish makes for a nice summer dish which is easy to digest and is a delectable. DAHI BHALLE Ingredient 1 cup split skinless black gram (dhuli urad dal), soaked overnight and drained 500 gms yogurt Oil to deep fry Salt to taste ½ tsp cumin seeds 1 tbsp raisins 1 tbsp gram flour (besan) ¼ tsp asafoetida (hing) 2 tsps sugar Black salt as required Roasted cumin powder, as required Red chilli powder, as required Green chutney, as required Sweet tamarind chutney, as required Method 1. Heat sufficient oil in a kadai. 2. Put the grams in a large mixer jar and grind with a little water till smooth. Transfer the batter into a bowl, add salt and whisk well so as to incorporate air into the batter. 3. Add cumin seeds and raisins and mix well. Add gram flour and mix well. 4. Dampen your fingers and drop small amounts into the hot oil and deep fry till golden. 5. Put water at room temperature in a large bowl. Drain the fried bhalle and drop into this water. Add a little asafoetida to the water and let the bhalle soak for a while. 6. Put the yogurt in a muslin cloth, gather the edges together and squeeze out yogurt into another big bowl. This way it will be absolutely smooth. 7. Add sugar and salt to the yogurt and mix well. 8. Squeeze out excess water from the bhalle and put into the yogurt mixture and let them soak for a while. 9. While serving break the bhalle slightly and put equally into 4 serving bowls. Sprinkle a little black salt, little roasted cumin powder and little red chilli powder. Drizzle green chutney and sweet tamarind chutney and some of the yogurt remaining in the big bowl. Sprinkle some more red chilli powder and serve immediately.
