DIY Creme de Cacao is incredibly easy to make, only requiring very few ingredients and a little patience. Creme de cacao is used in various cocktails such as the Brandy Alexander, Grasshopper and Golden Cadillac to name a few. INGREDIENTS - 750mL Vodka or Rum (high proof, 50%) - 500g Cacao Nibs - 3 Vanilla Beans (Split) - Simple Syrup: 250g Brown/Demerara Sugar + 250g Water METHOD 1. Add both the cacao nibs, vanilla beans and your liquor to a swingtop bottle 2. Rest for 2 weeks, shaking periodically 3. Add 1:1 simple syrup to your bottle 4. Rest for a further 1-2 days 5. Voila, brown creme de cacao! NOTES Alternatively, if you don't have the patience to wait several weeks, you can use heat to speed up the process. Though the perfect thing to sip on its own, this rich and delicious chocolate liqueur is an ingredient in many cocktails that we enjoy making. The high-proof spirit is necessary to most efficiently extract the deep chocolate flavor from the cacao nibs. The additional spices we add are there to give the liqueur depth. As with most homemade liqueurs, this tastes discombobulated immediately after mixing the infused spirit with the simple syrup. Taste is initially, of course, but know that it needs to sit for several hours so that the flavor and sweetness can meld. It will continue to deepen in flavor as it sits in your cocktail cabinet. It differs from store bought versions because it has a buttery white color instead of clear. This recipe can also be made as a low carb keto version that can be used guilt-free in delicious classic cocktails such as a Brandy Alexander (🤍 Tequila Alejandro (🤍 or White Russian. Substitute for Crème de Cacao when you prefer a cream color to your cocoa infused cocktail instead of a brown color. INGREDIENTS • 450 g (3 cups) cocoa butter • 3 vanilla beans, or 45 ml (1.5 oz) vanilla extract • 750 ml (3 cups) rum or vodka (100 proof is preferred) • 240 ml (1 cup) simple syrup (🤍 or keto simple syrup (🤍 *For a sweeter liqueur, increase the keto simple syrup to 360 ml (1.5 cups) DIRECTIONS 1. Add chopped cocoa butter to a resealable jar. A finer chop will lead to a more intense cocoa butter taste. 2. Scrape vanilla beans and add to jar (or add vanilla extract). Note: If you use vanilla extract instead of vanilla beans, your liqueur will have darker, buttery color. 3. Add rum or vodka. Stir and seal jar. 4. Store jar in a cool, dark location such as a cupboard for two weeks. Shake daily. 5. After two weeks, pour and strain liquid into bowl and remove cocoa butter. Then strain again into a pitcher. Use cheesecloth or a coffee filter when straining to reduce sediment. 6. Add simple syrup or keto simple syrup. Stir to blend. 7. Finally, pour and strain into a swing top glass bottle or any resealable container. 8. Our recipe strains three times, which will leave a delicious cocoa butter residue that floats to the top of the bottle. Simply shake the bottle before serving. If you want to minimize the amount of cocoa butter in your final product, you have the option of straining the mixture several more times. However, we do not recommend this because you may be sacrificing taste the more you filter the liqueur. The very first version was made with Gin and of course lost to time, one of the earliest printed versions of this drink came from Hugo Ensslin's book "Recipes For Mixed Drinks" published in 1916. And while there is some debate behind who it was that 86ed the Gin and replaced it with Brandy or French Cognac the most likely story is that it was created at Rector's in NYC sometime in the early 1900's, but there are may stories surrounding it's origin. One of those stories is that it was made for the London Wedding of Princess Mary and Viscount Lascelles in 1922. Another is that famous Drama Critic and Algonquin Round Table member Alexander Wolcott claims it was named after him, and still other sources claim that it was named after Russian Tsar Alexander II. But the most likely story was that it was created by a bartender named Troy Alexander and was made for a party celebrating the creation of a fictional Character, Phoebe Snow, which was used to advertise clean burning coal in the locomotive industry. Traveling by train at the time was hard on passengers, after a long trip by train, passengers would disembark covered in soot from the burning of the coal powering the train. The only trains that wouldn't soil it's passengers were those burning a clean form of coal called "Anthracite". The Delaware, Lackawana and Western Railroad Company owned vast mines of Anthracite and could rightfully claim that they wouldn't make passengers filthy. To promote this an advertising agency executive named Earnest Elmo Calkins created the Character of Phoebe Snow, a young socialite dressed all in white who could travel by train and not get dirty. ДОМАШНИЙ ликер Какао Белый / Creme de Cacao White Если я могу что то сделать сам для своего бара, будь то настойки/ликеры, биттеры или сиропы то обязательно сделаю… Пусть не прямо сейчас или не сразу буду доволен результатом (а может и вообще разочаруюсь и буду продолжать покупать за дорого – как с кофейным ликером), но моя экспериментаторская натура требует разобраться в вопросе, а тем более если есть рабочий рецепт. ))) Прежде чем подробно разбирать как рецепт ликера, так и коктейли я не могу не поделится источником, где я ЭТО ВЗЯЛ - 🤍 Человек пишет про ликеры/настойки, что-то готовит сам и конечно применяет в коктейли и рецепт сегодняшнего ликера я взял именно с его постов – ликер Крем де Какао Белый, один из интереснейших и, к сожалению, редких в продаже ингредиентов. Готовится ОЧЕНЬ быстро и просто, всё что вам необходимо можно легко купить (алкоголь) или заказать через интернет (какао и ваниль), срок приготовления занимает 24 часа!!! Рецепт и приготовление: • Растопить какао масло на водяной бане или микроволновке 120 грамм • Налить в банку для настаивания с ШИРОКИМ горлышком 500 мл 37-45% алкоголя • Добавить в банку разогретое масло и оставить в темном месте на 1-2 часа (я настаивал 10 часов) периодически встряхивая • После времени настаивания положить в холодильник для затвердевания масла и отслоения от ароматизированного алкоголя • Приготовить сахарный сироп 200 мл воды + 175 грамм сахара • Добавить ванильный экстакт, ванильный сахар или настоять сироп на стручках ванили • Смешать сироп и ароматизированный алкоголь, через 2 дня можно процедить от осадка и взвеси • Дать отдохнуть и смешаться ликеру 7-10 дней Шоколадный Негрони / CHOCOLATE NEGRONI * Смешать в бокале на Лёд - 30-40 мл джина * Кампари - 20 мл * Красный сладкий вермут - 20 мл * Ликер Какао - 10 мл * Сверху можно ароматизировать шоколадным биттером или цедрой апельсина

Today's cocktail is one of the few that I am tasting for the first time that I make on this show and it really it's a crowd pleaser. The other plus to this drink is that it's made up of ingredients most of you will have in your home bars already. I always hate it when I see someone declare that they're always shy of just one ingredient. Of course you can use any white rum on hand and it doesn't have to be Cuban but since I did have some Havana Club on hand, well it would be a sin. Some nice subs for this one would be: Plantation 3 Star, Denizen White or Banks 5 Island, but really any White Rum'll do. The La Florida was created by bartender Constante Ribailagua at the El Floridita bar in Havana Cuba sometime in the late 1920's or Early 1930's. At this moment in history many Americans seeking to escape the Shackles of Prohibition traveled to Cuba in order to get a legal drink. Reteta de umplutura de cacao pentru cozonac (sau cozonaci 😄), la rece, fara fierbere. Este o crema de cacao super simpla si rapida, doar se amesteca ingredientele. Ingrediente (pt aproximativ 500 g crema): • 100 g cacao • 100 g zahar fin sau zahar pudra • 3 pliculete de zahar vanilat • 150 g lapte praf • Un varf de lingurita de sare • Aprox 165 ml de lapte cu 3.5% grasime, putin caldut • Arome la alegere cum ar fi o aroma de rom si una de portocala
