In Indonesia, the other names of this fruit are the Timun padang or Kemarungan fruit or Timun merah ( the red cucumber). The taste of this fruit when it's young is bitter, so I made a recipe for Stir-fried Ivy gourd. The leaves are very delicious, you can cook anything because it doesn't taste bitter at all, so I made plecing Timun padang , it is boiled ivy gourd leaves and chilli sauce on top. for the ripe fruits, we can make mocktail or juice. Another benefit of Cucumber Padang is that it lowers blood sugar, helps prevent diabetes (of course, if you don't add sweeteners). Ivy Gourd Stir Fry - Recipe Ingredients: Oil - 2 to 3 tsp Chana Dal - 1 tsp Urad Dal - 1 tsp Mustard seeds - 1/2 tsp Asafoetida powder - 1/4 tsp Few slit Green chilies Onion - 1 no chopped Few Curry leaves Ivy gourd/Tindora - 250 gms (cut in to thin strips) Turmeric powder - 1/2 tsp Chili powder - 1 tsp Coriander powder - 1 tsp Salt Andhra Masala powder - 2 to 3 tsp Method: 1. Heat oil in a wide pan. Add chana dal, urad dal, mustard seeds, asafoetida powder, green chilis and saute 2. When the mustard starts splattering add onions and curry leaves. Saute till Onion turns transparent. 3. Add Ivy gourd/Tindora (cut in to thin strips) and mix well. Close and cook cook till its half cooked (15 to 20 minutes) 4. Add Turmeric powder, Chili powder, Coriander powder, Salt & mix well. Cook till its light brown in color 5. Finally add the Andhra Masala powder and mix. Done! Ivy Gourd Curry | Tendli Ki Sabji | Kovakkai Masala Curry | Masala Tindora Gravy 🤍HomeCookingShow #IvyGourdCurry #TendliKiSabji #KovakkaiMasalaCurry #MasalaTindoraGravy #ivygourd #ivygourdrecipe #homecookingshow Prep Time: 5 mins Cook Time: 40 mins Servings: 4-5 Ingredients Ivy Gourd - 250 Gms Oil - 3 Tbsp Whole Spices (Cinnamon, Clove & Cardamom) Shahi Jeera - 1/2 Tsp Fennel Seeds - 1/2 Tsp Onion - 2 Nos Finely Chopped Tomato Puree Ginger Garlic Paste - 1 Tsp Turmeric Powder - 1/4 Tsp Chilli Powder - 2 Tsp Coriander Powder - 1 Tsp Cumin Powder - 1 Tsp Salt Water Roasted Peanuts - 1/4 Cup Garam Masala - 1 Tsp Sugar - 1/2 Tsp Ginger Julienne Green Chilli Kasuri Methi Method: 1. Wash and clean the ivy gourd. Chop off the edges and make slits in the tindora as shown in the video. 2. Take a wide pan, add oil to it and put the slit tindora in it. 3. Keep stirring them and fry them for 10 mins until they slightly change in colour. 4. Once they are all nicely fried, remove them from the pan and keep them aside. 5. To the same pan, add the whole spices, shah jeera, fennel seeds and saute. 6. Add in the chopped onions and saute until they are golden brown in colour. 7. Add the ginger garlic paste and roast until the raw smell goes off. 8. Then add turmeric powder, chilli powder, coriander powder, cumin powder, salt and mix well. 9. To this masala, add the tomato puree and cook for 5 mins. 10. After 5 mins, pour 1/2 cup of water and keep boiling the curry. 11. In the meanwhile, put some roasted peanuts in a mixer jar after peeling their skin off. Grind it all into a fine powder. 12. Add this powder to the gravy and mix it all well. 13. Add in some water again and give it a nice mix. Now drop in the fried tindora, mix everything well, cover the pan with a lid and cook the curry for 10 mins. 14. After 10 mins, the oil separates from the gravy. At this point, add in the garam masala powder, sugar and mix it all well. 15. Finally add some ginger juliennes, slit green chillies and crushed kasuri methi. Give it all a quick mix. 16. Yummy and delicious Tindora Masala Gravy Curry is ready to be served hot with roti, phulka, plain steamed rice or any flavoured rice of your choice. Hey guys! Now add peanuts and saute for half a minute on medium heat and then add grated coconut and saute for a minute. Then add the asafoetida, degi red chilli powder, turmeric powder, coriander powder and saute until fragrant. Now add the ivy gourd (tendli), salt and mix everything properly then cover and cook for 5-7 minutes on medium heat. Remove the lid and add coriander leaves, grated coconut, lemon juice and give it a final mix. Heat oil in a Kadai and add Mustard & Green Chillies. 2. Add the chopped ivy gourd, salt, turmeric and cover it with a lid. Let it cook for 5 minutes. 3.
