Biryani Rice | Plain Biryani Rice | How to Make Biryani Rice | Biryani Recipe | Kuska Biryani | Kuska | Kuska Recipe | Plain Biryani Recipe | How to Make Biryani Ingredients for Biryani Rice: - Basmati Rice- 500 gms (or 3 US cup measure) Whole Spices: - Shahjeera- 3/4 tsp - Green Cardamom- 5 - Cinnamon stick- 3 - Cloves- 5 - Mace (Javitri)- 1 - Star Anise- 2 - Bay Leaves-2 - Onions, sliced- 2 medium (150 gms) - Green Chillies, slit- 3 - Ginger Garlic paste- 2 tsp - Mint leaves- 3 tbsp & a handful for garnish later - Biryani Masala- 1 tsp (ready made) - Refined Oil- 4tbsp - Ghee (Clarified Butter)- 2 tbsp - Saffron strands soaked in warm milk - Fried Cashew nuts- 10 whole (optional) - Birista (Fried onions) - 2 tbsp - Salt- 2 tsp - Water- 750 ml - Milk- 150 ml - Total 900 ml (Alternatively, you can add 3.5 US cup measure of water, and 1 US cup measure of milk.) Preparation: - Soak saffron strands in 4 tbsp warm milk for minimum 30 mins. - Wash and soak the Basmati Rice for 30 mins. - Fry whole cashew nuts in ghee till golden and set aside. - Slice 2 medium onions and if using Birista, slice one more and fry in oil until golden. - Set aside for use later. Process: - Heat oil and ghee in a heavy bottom pan. - Add the whole spices, give a stir and when it splutters, add the sliced onions. - Fry on medium heat for 10 mins till golden. Add the ginger garlic paste and fry on low heat for 2 mins. - Add the Biryani Masala and mint leaves. Give a stir and add the water & milk. - Add salt, give a stir and add the slit green chillies. - Give a mix again and allow it to come to boil. - Add the drained basmati rice and give a mix. - Cook on high heat for 3 mins, reduce heat to low and close the lid. - Continue to cook covered on low heat for 5 mins. - Remove the lid and gently turn the rice. - Drizzle saffron milk and ghee on top and garnish with fried cashew nuts, mint leaves. - Cook covered on low heat for 5 mins, switch off heat and rest it for around 10 mins. - Remove the lid and gently mix the rice. - Garnish with fried onions on top to serve. #biryanirice #plainbiryanirice #biryanirecipe #kuska #kuskabiryani #dumbiryani #spiceeats #spiceeatsrecipes #spiceeatsbiryani
Simple Chicken Biryani for Beginners | Chicken Biryani Recipe for Bachelors | Simple Chicken Biryani for Bachelors | Chicken Biryani with Biryani Masala | Chicken Biryani | Chicken Biryani Recipe | How To Make Chicken Biryani | Easy Chicken Biryani Recipe Ingredients for Chicken Biryani: - Chicken, large pieces with bones- 1 kg - Basmati Rice- 700 gms (4 US cup measure) For Cooking Chicken: - Onions, sliced- 400 gms (around 5 medium sized onions) - Ginger Garlic paste- 2 tbsp - Tomatoes, sliced- 4 medium - Green Chillies, slit- 6 numbers - Coriander leaves, chopped- 1 cup - Mint leaves, chopped- 1 cup - Whisked curd/plain yogurt- 1 cup - Ready made Biryani Masala- 5 tbsp For Cooking Rice: - Shahjeera (caraway seeds) - 1/2 tsp - Green cardamom - 4 - Cloves - 4 - Cinnamon- 2 pieces - Salt- 2 1/2 tablespoon - Water to boil the rice- around 2.5 litres - Mint leaves - around 10- 15 leaves Preparation : - Clean & wash the chicken pieces. Drain the water or pat dry. - Slice the onions and tomatoes. Slit 6 green chillies - Chop 1 cup coriander leaves and 1 cup mint - Whisk the yogurt and set aside - Wash & soak the Basmati Rice for 30 mins. Process : To cook the Chicken: - Heat 6 tbsp oil in a heavy bottom pan and add the sliced onions. - Fry on high heat for around 12 mins till the onions are light brown. - Add the ginger garlic paste and fry on low heat for 2 mins. - Now add the chicken pieces, mix and fry on high heat for 2-3 mins. - Add the ready made Biryani Masala, mix and fry on medium heat for 3 mins after adding a splash of water. - Readymade Biryani Masala usually contains salt, hence salt is not added while cooking the chicken in this recipe. Do check if the biryani masala you are using has salt in it. - Now add the sliced tomatoes, mix it well and cook on medium to low heat for 4-5 mins till soft. - Keep the heat on low and add the whisked curd/yogurt. Give a mix and then add the chopped coriander and mint leaves. - Cook on low heat for 2 mins till oil separates. - Cover & cook on low heat for around 20-25 mins till chicken is tender. Remove lid after 10 mins, give a mix and close the lid again. - Dry up any excess water to get a thick gravy. To cook the Rice: - Take one more heavy bottom pan & add around 2.5 litres of water. Place it on high heat. - You may include the water in which rice was soaked in this 2.5 litres for enhanced flavour & taste. - Once the water starts to boil or bubble, add Shah Jeera - 1/2 tsp, Green cardamom -4, Cloves - 4, Cinnamon- 2 pieces and Salt- 2 1/2 tablespoon (two and half tablespoon) - Stir it well to dissolve the salt completely . The water must be very salty. - Once the water starts boiling, add the strained basmati rice & stir it well. - Continue to boil it on high heat, stirring few times very gently to not break the rice. - After 8-9 minutes when the basmati rice is almost done (90%) remove it from heat and strain the water. Set it aside. Layering the rice and cooked chicken: - Take a heavy bottom pan and spread half the cooked rice as the 1st layer. - Now spread the cooked chicken with gravy on top of the rice uniformly as shown in the video. - Next, spread the balance rice as the top layer. - Sprinkle some mint leaves on top of the rice. Traditionally biryani was made with meat and the meat was shallow fried in fat & then rice was added. So technically #VegBiryani is a much younger version of its meat counterpart but nonetheless, it is equally popular & tasty. There are many recipes to make biryani depending upon which state or community it belongs to. My version is easy to cook & the results will make you happy. Heat oil in a kadai, add a few onion slices at one time and deep fry until crisp and golden in color. Transfer them to an absorbent paper. Cool them completely and store in an airtight container for further use. 𝗙𝗼𝗿 𝗠𝗮𝗿𝗶𝗻𝗮𝘁𝗶𝗼𝗻 In a large bowl, add carrot, french beans, cauliflower, paneer, and fried onion. Add fried onion oil, curd, fresh mint leaves, fresh green peas, salt to taste. Add green chilli, degi red chilli powder, turmeric powder, coriander powder, fresh coriander sprig and mix it well. Add ginger garlic paste, fried onion oil and marinate everything well. Keep aside for further use. 𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴 In a large cooker, add ghee once it's hot, add bay leaf, cinnamon stick, cloves, green cardamom, black cardamom let it splutter. Add marinated vegetables and saute it well. Cover it with a lid and cook on medium flame for 2-4 minutes. Add a few mint leaves, soaked basmati rice, hot water, fried onion, and green chilli. Sprinkle some garam masala, salt to taste, kewra water, few saffron strands, ghee. Cover it with a lid and cook over medium flame for 1 whistle. Let it cool at room temperature until pressure inside the cooker goes down naturally. Open the lid and fluff the rice with a fork. Transfer it to a serving plate or bowl. Garnish it with coriander sprig and serve hot with raita. 𝗙𝗼𝗿 𝗥𝗮𝗶𝘁𝗮 In a bowl, add cubed potatoes, onion, tomato, green chilli, curd and mix it well. Add salt and then the rice. Cover and cook for a total of 5 minutes. Strain out the rice. Save the excess water in a large bowl. Dum process Add the strained rice to the mutton. Spread the rice around and make holes in the rice using the back of a ladle (as to not break the rice). Some of the water should be visible from the top, just below the level of the rice. If needed, add some of the remaining water from earlier. Cover with a lid. Place the bowl of the hot water on top and cover that with a lid. When steam starts coming from the sides, reduce the flame to low and keep on dum for 15 minutes. Remove the lid and carefully mix from the sides. Drizzle the ghee around the rice. Serve with onion raita and brinjal curry. Cooking Tips: Refined oil can be used, but groundnut oil can be used for more flavour. Cook the rice simultaneously while the mutton is cooking, so that the rice is still hot while adding it to the rice for dum. This way, it will cook evenly. Take the fresh chicken with biryani cut in a large bowl. 2. Add lemon juice, turmeric powder, salt, chilli powder and mix well along with the chicken. Add little bit of water to get the spice mixture going. 3. Rub and massage the spice mix into the chicken fully and marinate the chicken for 30 mins. 4. For garnish, take ghee in a pan. Add cashews and roast until golden brown. Keep them aside. 5. Add oil to the same pan and put the sliced onions. Roast until they are crisp and golden brown. Keep them aside. 6. Pour 2 tbsp of oil in a kadai and drop in the marinated chicken pieces and mix well. 7. Add 1 cup of water when the chicken in no more pink. Close the kadai and cook for 10 mins. 8. Turn off the stove and place the chicken pieces and chicken stock separately in different bowls. 9. To the same kadai, add 6 tbsp of oil and place the half cooked chicken. Fry them until they are golden brown in colour. Remove from the oil and keep them aside. 10. Drop the sliced onions in the same oil and fry until golden brown. 11. Add curry leaves, ginger garlic paste and mix well. 12. Add the tomatoes, mix and add green chilies. Close and cook for 2-3 mins so the tomatoes turn mushy. 13. Add the chicken stock and mix well. 14. Add turmeric powder, coriander powder, pepper powder, garam masala powder and salt. 15. Mix well and add the fried chicken pieces. Mix and cover the kadai. Cook for 10 mins on medium flame. 16. Top it off with chopped coriander and a few fried onions. Keep it aside. 17. Take a deep pot and add ghee. 18. Add cinnamon, cloves, cardamom, star anise, bay leaf and fennel seeds.
Spiced rice accompanied with delicious curry chicken, 'Nasi Briyani' is the love of many Malaysians at Indian/Malay food outlets. 🤍 'Nasi Briyani' is one dish that is flavour packed due to the various spices which are used in the dish. Originally not from Malaysia, 'Nasi Briyani' has however found home in South East Asian countries like Malaysia and Singapore. It is quite a popular dish in many casual eateries (Mamak) and often enjoyed with meat curries, eggs and vegetables. While the argument goes on to find the origin of 'Nasi Briyani', I choose to celebrate this dish with the different ways it is cooked in other countries. The usage of pandan leaves to add fragrance to the rice definitely gives it a Malaysian twist. Besides that, the rice is cooked separately without the meat. In 'Mamak' eateries, the rice is served as it is and any preferred side dishes are selected separately. It is like a buffet of curries and delicious dishes that goes perfectly with 'Nasi Briyani'. A basic plate of 'Nasi Briyani' consists of spiced rice and meat curry of your choice. I personally prefer mutton and chicken curry to go with 'Nasi Briyani'. Therefore, I had chosen to prepare a video on 'Nasi Briyani' with a special Chicken Curry to go with it. Just like many of my other recipes, feel free to substitute chicken with other meat of your choice. The key is to use the same selection of spices and allow the meat to cook until it is tender. Marinating the chicken with yoghurt will help to tenderize the meat as the lactic acid in the yoghurt breaks down the protein. Additionally, the tanginess in the greek yoghurt sure adds a wonderful flavour to the curry. In this recipe, I had selected greek yoghurt but you may use any other yoghurt or even curd. Greek yoghurt is known to be thicker, richer in fats and more resistant to heat. The creamier it is, the more delicious it becomes! Malaysian 'Nasi Biryani' usually uses evaporated milk to add creaminess to the rice. Besides making the rice tastes creamier, evaporated milk also makes the rice fluffier. As I did not have any in hand, I opted for full fat milk instead. It worked just as well too. If you want to opt for evaporated milk, use 50ml of evaporated milk instead of the suggested 100 ml full fat milk. Ghee plays an important role in making a good plate of 'Nasi Briyani'. In fact, I honestly thought it contributed a huge difference to the flavour. Although ghee is often sold in cans, it would not be fully utilized, thus it would be such a waste. Making ghee on your own is a little bit of a hassle. Hence, a quick DIY version of ghee using butter is also presented in the video. Marinate the meat and prepare the ghee one day in advance to lessen the preparation time the following day. Foodies need your help!
