In a large bowl combine with your hands the flours and water until completely mixed together. Let rest for 10 minutes. 2. Next, sprinkle the salt and yeast overtop and mix it into the dough by pinching, stretching and folding the dough over for 4 to 5 minutes. 3. Cover and rest the dough in a warm dark place for 15 to 20 minutes before folding the dough over 5 to 6 times. 4. Cover and rest for 45 to 60 minutes and then fold the dough over 5 to 6 times again. 5. Cover and rest for 2 hours or until it has tripled in size. 6. Dust a clean surface with flour and place the dough onto it. Sprinkle the top with flour and fold the dough over in thirds 3 to 4 times and then begin to mold the dough into a ball by cupping around the dough into the bottom. 7. Place the dough into a floured Benetton and cover and rest for 60 minutes. 8. In the meantime, place a small Dutch oven pot into the oven on 475° for at least 30 minutes. 9. Flip the dough right into the hot Dutch oven pot, cover it and return it to the oven and bake for 30 minutes 10. Let cool for 20 to 30 minutes before slicing and serving.

Stir until dissolved, then add in the egg and salt. Add the flour one cup at a time. Once the mixture is too stiff to mix with a fork, transferred it to a well-floured countertop. Let ferment at room temp for 6-24 hours. AUTOLYSE •180g or 3/4c warm water (86F/30C) •250g or 2c AP flour (11.7% protein) Into bowl of a stand mixer fitted with a dough hook, mix your Autolyse (water and flour) on low until combined. Cover with town and let sit for 30 minutes. FINAL MIX •40g or 2 3/4Tbsp warm water (86F/30C) •5g or 2tsp instant yeast •10g 1 3/4tsp salt •All of the biga you mixed earlier For your final mix, add warm water, yeast, salt, and biga to your autolyse and mix on low for 3 minutes. Increase speed to high and mix for 5 more minutes. When dough is mixed enough it should clear the bowl and begin to get shiny. FERMENTING AND SHAPING Transfer dough to an oiled bowl. Cover and ferment at room temperature for 30 min. Do strength building fold as shown 🤍3:33. Cover again and let sit at room temp for another 30 minutes. Laminate dough as shown 🤍4:27 (this takes the place of a 2nd stretch and fold). After laminating, transfer back to bowl seam side down, cover and allow to ferment at room temp for 1 hour. Dough should be gassy and alive at this point. Liberally flour work surface and dough well. Use dough card to release dough from bowl as completely as possible before transferring dough to work surface. Gently pat into a square slab. Prepare a piece of parchment that's larger than your slab of ciabatta dough by liberally flouring it. Cut dough into two equal rectangles and gently transfer to floured parchment. Cover and proof at room temp for 30 min. BAKING Preheat oven to 500F/260c - I also preheat my baking steel/stone on the middle rack and a cast iron pan in the bottom of my oven. Boil water. Slide ciabatta onto baking steel and pour boiling water into cast iron pan in the oven. Cover loaves with turkey pan, decrease heat to 480F/248C and bake for 12 min. Remove foil pan and continue to bake for 13-15 minutes until crust is a deep golden brown. Use my code RAGUSEA to get $5 off your delicious, healthy Magic Spoon cereal by clicking this link: 🤍 *RECIPE* 2 cups (474mL) water, divided in two 2 teaspoons (10g) salt (based on the Morton Kosher I use) 1/8 teaspoon dry yeast (two small pinches) bread flour (you'll need maybe 5-6 cups, 500-600g, but this recipe is not based on firm quantities) a little whole wheat flour, if you want (I like to replace maybe a tenth of the white bread flour with whole wheat — I just eyeball it) The night before you want to bake, mix a poolish by combining half of the water (1 cup, 237mL) with the yeast and enough flour to get a thick batter / pudding consistency. I think a wooden spoon is the best utensil to use for this, but whatever spoon you use, use something rigid. You can just leave the spoon in the poolish overnight. Cover the poolish and let it ferment 8-24 hours. About four hours before you want to bake, uncover the poolish and mix in the remaining cup (237mL) of water, salt, and as much flour as you can stir in with a spoon (no hand kneading). Again, you can leave the spoon in there. Cover and let rise/hydrate for about an hour. Check it again and see if you can stir in a little more flour now that the previous addition has hydrated. When you're done, you can get rid of the spoon. Cover and let rise/hydrate for another hour. These next steps I do in the bowl, just to keep the mess contained, FYI. Sprinkle the dough with a little flour to keep it from sticking to you. Grab one side of it and pull it out until just before it's going to tear, then fold it back in on itself. Rotate the dough 90 degrees and repeat until you've done this four total times. Position the dough so that the seems are on the bottom and the smooth surface is on top. Cover and let rest for about 20 minutes. Do the whole folding and stretching procedure again, rest 20 minutes, and then do it a third time. The following instructions are for baking this with a dutch oven. If you're using a baking sheet with a heat-safe metal bowl, skip to that part now. Get a sheet of parchment paper, crumple it up into a ball, un-crumple it and stuff it down into the bottom of your dutch oven. Transfer in the dough, smooth-side up. Cover the dutch oven (but not with the lid). Put the lid in your oven and get it heating to 500ºF/260ºC (some people get better results with slightly lower temperatures, but every oven is different). Let the dough proof for about a half hour while the oven heats up. When the dough is looking puffy, score the surface — I find a few quick, confident slashes with a serrated knife work ok. Put the dutch oven over a burner on your stove, turn the heat on high, and cove it with the hot lid from the oven. When the side of the dutch oven feel hot (it should just take a couple minutes), transfer the whole situation to your oven and let bake for a half hour undisturbed, so as to not let any steam escape. Carefully remove the hot lid, reduce the heat to 450ºF/230ºC and let the surface of the bread brown while the interior finishes baking, 10-20 more minutes. You can test the interior with a thermometer — anything in the neighborhood of 200ºF/93ºC is good. Let the bread cool before slicing. The following instructions are for doing this with a baking sheet and a heat-safe metal bowl. Line a baking sheet with parchment paper. After you've done the whole folding thing three times, position the dough on the baking sheet, smooth-side up. Cover it with a heat-safe metal bowl that's big enough to not touch the dough as it rises and/or bakes. Get your oven heating to 500ºF/260ºC (some people get better results with slightly lower temperatures, but every oven is different). Let the dough proof for about a half hour while the oven heats up. Let the surface of the bread brown while the interior finishes baking, 10-20 more minutes. You can test the interior with a thermometer — anything in the neighborhood of 200ºF/93ºC is good. Don't know where to start when it comes to making bread? Do you only have all-purpose flour? Scared you're going to fail? Fear not!! This is the bread recipe you've been looking for! I will show you how to make bread step by step! Let's do this!! White Bread Recipe: 4 cups warm water 2 TBSP. active dry yeast Dash of white granulated sugar Mix together and let "foam" for 10 minutes in a warm place, covered. After 10 minutes, pour yeast mixture into large mixing bowl. Add: 1 TBSP. salt 1/3 cup canola oil 1/3 cup honey 5 cups all-purpose flour Mix. Add 5-7 more cups flour (ONE CUP AT A TIME) until dough is smooth and pulls away from the sides of the bowl. Knead by hand on lightly floured surface for 5-8 minutes. Place dough in a greased large bowl and spray dough with cooking spray. Then cover with a dish towel and let the dough rise until doubled in size, 30-45 minutes. Generously grease 3 (9 x 5 in) loaf pans and set aside. Punch down the dough, turn it out onto a lightly floured surface, and knead it briefly to remove the air bubbles. Divide dough in thirds, knead each section a few times, and then shape into a loaf. Place the dough into prepared loaf pans. Rub the top of the loaves with soft butter then cover with a dish towel and let rise 30-45 minutes. Meanwhile, preheat oven to 350 degrees. Bake the loaves for 30 minutes. Immediately remove loaves from pans and cool on a wire rack. Rub the top with butter while still hot! You can freeze this bread in a freezer bag for up to 2 months! Traditional white bread is usually made from bread flour because it is higher in gluten. I don’t buy much of it myself and I figured a lot of you are on the same boat. When I make my bread I use all purpose flour and it works amazing. So, if bread flour is keeping you from making your own bread turn on the oven and put on your apron. This recipe will fix that right now. Wondering how you can make white bread with all purpose flour? this video shows you the step by step and you will be surprised on how easy it is. It's the best bread recipe ever. Easy white bread recipe White bread recipe Oven temperature: 375F degrees Bake time: 22-25 min or until golden brown (internal temperature of 190F) Water milk temperature for yeast: 105F-110F One 9x5 loaf pan IMPORTANT NOTES: 1.Mix and knead on medium low speed only. 2. If dough is still sticking after one minute of kneading, add additional flour one TBSP at a time until the right consistency is achieved. It should feel lightly sticky when pressed and smooth. 3. Add 3 tsp of oil to a wide pan and heat it up. 6. Add garlic, ginger, green chilies and saute for a few seconds. 7. Add onions, capsicum and saute for 5 mins. 8. Add salt and pepper, mix well. Keep the flame on low and add vinegar, soya sauce, freshly ground chili paste, tomato ketchup and mix it all in. 9. Add spring onion whites, mix and add 1/2 cup of water. Mix well. 10. For the corn flour slurry, mix 1 1/2 tsp of corn flour with 1/4 cup of water and mix well. 11. Add the corn flour slurry to the pan and mix well. 12. Now, add the roasted bread pieces and mix again. Finally add the spring onion greens and chopped coriander leaves. 13. Give it a quick mix and Chili Bread is ready to be served hot and nice! Use scales for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate 3. Use proper white bread flour with at least 12% protein, check the ingredients list on the side of the flour bag, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour, plain or all purpose flour is not strong enough for making bread. 4.
