Simple Braised Chicken Wing ● Homemade Recipe Ingredients: 7 Chicken wings 1 tablespoon Oil (more if needed) 1 cup water Marinate: 1 tablespoon Dark Soy Sauce 2 tablespoon Light Soy Sauce 1 tablespoon Shaoxing Wine (Optional) 1.5 tablespoon Sugar 2 cloves Garlic 2 shallots 5 slices ginger Steps: Cut chicken wing into half Add in all the marinate ingredients and marinate for 1 hour Heat the pan and add 1 tablespoon Oil Add the chicken wing and fry both sides Add in the marinate sauce and 1 cup water Cover and simmer for about 20 mins (until the sauce reduce) Once the sauce thicken, off the heat and ready to serve. CONNECT WITH ME ON INSTAGRAM: 🤍echleb 🤍 - ~ RECIPES ~ ANCHO BRAISED CHICKEN Ingredients: - 1 whole chicken cut into 2 leg quarters and 2 breast and wings, skin removed and set aside -½ Onion - 2 TBSP Ancho Chile Puree (substitution - 1 TBSP chile powder) - 2 15 oz cans Fire Roasted Tomatoes - 1 Cinnamon Stick - 2 sprigs Fresh Thyme - 3 cloves Garlic - Salt to taste - Hot sauce (optional) Method: 1. Break down a whole chicken into 4 pieces and removed the skin, save the pieces of skin from the thigh, so we can render the fat out for extra braising flavor. 2. Heat the dutch oven over low heat and throw the chicken skin into the pan to render. This will take a little time so meanwhile slice half a white onion. Toss in the onion and let everything cook down. You want the chicken skin to be completely crispy and golden brown, but not burnt. 3. With a slotted spoon remove the chicken skin and onion, leaving the rendered oniony chicken smaltz behind. 4. Now lets prepare our braising liquid. To the dutch oven, add the roasted diced tomatoes. 2 heaping tablespoons of ancho chile puree, cinnamon stick, fresh thyme, garlic cloves, salt and hot sauce to taste. Turn the heat to medium and bring to a simmer. 5. Once simmering, add the chicken and turn the heat off. Move the dutch oven with the lid on to a 300 degree oven for 2-3 hours until the chicken is falling off the bone. NOTE: This could also be done in a slow cooker. - PICO DE GALLO - Pico de Gallo Ingredients: - 1 Tomato - ½ Onion - ½ Jalapeno - small handful Cilantro - Lime - Salt Method: 1. Finely chop all vegetables and add to a mixing bowl 2. Add salt and lime to taste! This is where you really need to adjust the flavors. The salt will enhance everything while the acidity from the lime will balance the flavors. - SPICED PICKLED ONIONS - Ingredients: - 1 red onion + 1 jalapeno cut into strips - ¼ tsp cumin seeds - ¼ tsp black peppercorns - 2 cloves garlic, halved - ½ cup white vinegar - ½ tsp salt - ½ tsp sugar - Water to cover onions Method: 1. Add all of the ingredients to a sauce pan. 2. Add enough water to just cover the onions. 3. Bring to a boil over medium heat and let boil for 3 minutes. 4. Remove from the heat and pour into a glass jar. 5. Let stand for several hours before serving to let the flavors get comfortable 6. Just the city that I used to live - Guangzhou, has more than 100 restaurants that are named with this dish, Huang Men Ji Mi Fan. I know, it sounds crazy. But that is how popular it is. 🥢PRINTABLE RECIPE - check back later 🥢RECIPE - Note: The product links below are affiliate links. INGREDIENTS - 1.5 lb (680 grams) of chicken - 1 tsp of salt - 5 cloves of garlic - 2 inches of ginger - 1 tsp of soy sauce (for the marinade) - 1 tsp of dark soy sauce [Amazon Link: 🤍 - Some white pepper to taste - 1.5 tbsp of sugar - 1 piece of star anise [Amazon Link: 🤍 - 1 small piece of cinnamon stick [Amazon Link: 🤍 - 1 piece of bay leaf [Amazon Link: 🤍 - 1 piece of black cardamom [Amazon Link: 🤍 - 2 tbsp of Huang Dou Jiang [Amazon Link: 🤍 - 2 tsp of Tian Mian Jiang [Amazon Link: 🤍 - 2 tbsp of Chinese cooking wine - 1 tbsp of soy sauce [Amazon Link: 🤍 - 8-10 pieces of shitake mushroom (sliced thinly) - 1.5 cup of water - 2 pieces of green chilies - 2 pieces of red chilies - 1 small onion INSTRUCTION - You will need 1.5 lb of chicken (Bone-on and skin-on chicken legs are the best. You can also use boneless chicken breast). Chop the chicken into big pieces. - Marinade it with 2 inches of crushed ginger, 5 cloves of crushed garlic, 1 tsp of salt, 1 tsp of soy sauce, 1 tsp of dark soy sauce, and some freshly ground white pepper, you can use black pepper as well. Mix and let it sit for 20 minutes. - While waiting, you can make the sauce: 2 tbsp of Huang Dou Jiang, 2 tsp of Tian Mian Jiang, 2 tbsp of Chinese cooking wine and 1 tbsp of soy sauce. Mix it well. The soybean paste will have a little soiled soybean. I like to use the spatula to crush it. Set the sauce aside, let’s prepare the vegetables. - For this recipe, I prefer to use fresh shitake mushroom. They are so meaty and tender. Simply slice mushroom in half. Set it aside. I used 2 colors of chilies so the dish looks nicer. slice it diagonally, into 1/3 of an inch thick piece. The type of chili I use is very spicy. If you don’t eat spicy food, you might want to change to a mild one like bell pepper. - Cut 1 small size onion into big pieces. Make sure you separate each layer to loosen it up. - Besides the vegetables, you will also need some spices: bay leaf, star anise, black cardamom, and a small piece of cinnamon. Now, let’s start cooking. - Heat the wok until it is smoking hot. Add some cooking oil. Swirl the wok around so the oil covers most of the surface of the wok. Add in the marinade chicken. Spread it so most of the chicken pieces touch the bottom of the wok. Let them fry for a couple of minutes or until you get enough brown surface. - Take them out and leave the oil in the wok. Also, you want to make sure you take out all the brown bits so the wok is fairly clean. We gonna caramelize some sugar. If there is too much brown bits, it will affect the caramelizing process. Use low heat, keep stirring it. - Once the sugar turns into a red color, you can pour in the sauce that we prepared before. Keep stirring everything on medium heat. We are frying the sauce. It might sound strange. But it does create some complex flavor. Once you see the oil is separating from the sauce, you can add the spices. Give it a few stirs then introduce the chicken back to the wok. Stir and mix until the chicken is coated with that glossy sauce. Add the mushrooms. Stir them as well. - Pour in 1.5 cups of water. Bring it to a boil. Give it a taste to adjust the flavor. Turn the heat to low, simmer this for 20 minutes. - 20 minutes later, you should still have a fair amount of sauce. And it should be thick due to the collagen from the bones. Throw in the onions and chilies. Give it a final toss and you are done.

Taiwanese braised meat rice is a rich and savoury dish made of braised meat, braised hard-boiled eggs, steamed rice, and blanched vegetables. You can also season the sauce with sakura dried shrimp or crispy fried shallots, but we've kept this recipe as simple as possible with as few ingredients as possible. This isn't really a recipe — just a collection of tips for cooking chicken thighs. I'll summarize. Thigh muscle is different in form and function from breast muscle. I think thighs are way better for most things, and you don't have to worry nearly as much about overcooking them. Compared to breast, try cooking thighs over a slightly lower heat, to give the fat more time to render and the connective tissue more time to dissolve. I like the meat cooked to an internal temperature of 185ºF/85ºC, and it can stand to be cooked even hotter than that. Thighs cooked to lower temperatures tend to me slimy and a little tough. Boneless, skin-on is my favorite way to cook thighs when using dry methods. If you can't buy those, watch the video to learn how to bone-out thighs yourself. If you stew whole thighs and then pull/shred the meat for tacos etc, make sure you remove the cartilage that'll be attached to the meat at the two ends of the thigh bone. It's gross.
