Beef Ribs. The Texas BBQ that made me fall in love with BBQ after growing up on sweet, pork BBQ in the south. These are the King of all BBQ for me. When you are eating BBQ in Texas you are typically eating what is known as short ribs or plate ribs. AKA 123A or 3 bone beef ribs which are trimmed from the mid-section of ribs 6 through 8. This cut can sometimes be difficult to find outside of a butcher shop. A good alternative are 130 beef chuck short ribs, aka 4 bone beef ribs which originate from the mid-section of ribs 2 through 5. These are easily found at grocery stores or Costco or just ask your butcher. We're going to do beef chuck ribs, beef back ribs, and beef brontosaurus ribs in this video. Seth starts but cutting the beef chuck away from the beef rib section. 2:44 - Remove the beef skirt steak from the beef rib section. Then, remove the plate from the beef ribs. Scott mentions beef bacon at 3:16, check out that video here 🤍 Beef bacon comes from the plate. 3:25 - Remove the beef ribs from the beef rib section. Trim up the beef rib section. Cut off the vertebrae and set aside. Set the beef chuck portion aside and cut off the beef brisket. 4:14 - Extract the beef chuck ribs (here's your beef chuck eye, beef chuck arm, beef shoulder, beef clod, and beef top blade steak or beef flat iron). 4:54 - You're left with 3 different types of beef ribs at this point 1) The arm portion with the beef chuck ribs is 4 ribs long, 2) A nice long section of beef back ribs, and 3) the 6th, 7th and 8th beef brontosaurus ribs. 5:10 - Beef chuck ribs are first. You can leave the membrane on beef chuck ribs. The membrane helps to hold them together while you smoke them vs pork ribs we'd remove it. Beef chuck ribs are also known as beef dino ribs (ribs 1, 2, 3, and 4). 6:52 - The long section of beef back ribs is next, start by removing the feather bones, then remove the beef lifter meat. Seth explains that beef back ribs in the store don't have more meat because if they weren't cut short, the beef ribeye would be much smaller. Be careful at this point, you'll want to cut the ribs as close to the bone as possible so as to leave as much meat on the ribeyes as possible. 8:42 - A great shot of Seth showing where the beef dino ribs fit in comparison to the beef brontosaurus ribs. 9:10 - Count ribs 6, 7 and 8 and cut after 8 to remove the beef brontosaurus ribs. The section with ribs 8-12 has too much fat to make good beef ribs so it's best to use it for ground beef. 10:20 - The 3 different styles of beef ribs laid out next to each other and compared. 11:13 - Break off the 6th, 7th, and 8th ribs again, cut about 5 inches off the end, and that's where beef short ribs come from. They're simply shortened beef brontosaurus ribs. 12:19 - The outer layer of beef and fat cant be removed from the beef short rib for the finished product 13:14 - Seth shows exactly how to count 1, 2, 3, 4, and then cut between the 4th and 5th ribs for beef flanken ribs, also known as Korean short ribs. He does remove the membrane this time because they'll be cooked vs a long smoke on the dino ribs. Next, you'll cut these thin because they'll be grilled. Mojo Beef Ribs – Smoked Beef Plate Ribs on Ole Hickory Pits #beefribs #mojobeef #howtobbqright Mojo Beef Ribs - Smoked Beef Ribs Recipe This past weekend one of my good buddies became the 2019 Memphis in May Rib Grand Champion… RIB CHAMPS OF THE WORLD!!!! Big congrats to Jay & Jamie Durbin from Tennessee Mojo and their entire Nuts n’ Butts team.  🤍   I had already decided to smoke Beef Ribs for my recipe this week, but after Jay’s win I had to use his new Beef Rub and do Mojo Beef Ribs in his honor.    These prime beef plate ribs came from The Butcher Shoppe in Pensacola, FL - 🤍 so I didn’t have too much problem sourcing them. They are typically found cut into smaller portions and sold as beef short ribs – but if you explain to your butcher that you want the beef ribs before they cut them into short ribs you should be able to find what you need.    When it comes to prepping these ribs I didn’t do too much – just trimmed down the thick fat to ¼ inch and removed any sinew. Trimming took less than 5 minutes.    And for the seasonings I started with Killer Hogs AP Seasoning 🤍 for a base layer – but you can just use a light coat of salt, pepper and garlic. Then came the Mojo Beef 🤍 – I gave these beef ribs a generous shake of Jay’s Beef Rub which has a peppery, smoky flavor. And you can’t beat the color for a beef rub either. And just to add a little pop and some texture I gave the tops of these beef ribs a hit of Killer Hogs Steak Rub - 🤍    After the ribs were seasoned, I let them hang out while I fired up the pit. I decided to use my Ole Hickory CTO – but you can use any smoker. It’s all about holding the temps steady around 250. I added a couple chunks of hickory and a little pecan wood from Smokerwood.com to get that true Tennessee smoke flavor.    Once the pit was up to temp, I added the seasoned beef plate ribs and just let them cook for 1.5 hours. At that time I used a Mojo Mop to add a little moisture and help that good, mahogany bark to form. I used my BOS Sprayer to keep these beef ribs moist. BOS Sprayer here: 🤍   Mojo Mop Recipe: - 32oz Beef Broth - 2 Tablespoons Dill Pickle Juice - 2 Tablespoons Soy Sauce - 2 Tablespoons Worcestershire Sauce Combine everything and pour into a spray bottle.   I spritzed the ribs every 60 minutes. And about the 3.5 hour mark the bark was formed and was as dark as I wanted it to get, so it was ready to wrap. I used butcher paper 🤍 to wrap the ribs and placed them right back on the smoker – making sure to keep them meat side up.    At this point, it’s all about watching the internal temps. Using my Bleu Thermoworks Thermapen - 🤍 - I was shooting for 200-204 range – but more than anything I wanted to ribs to have the right feel. When it feels like I’m probing warm butter, the Beef Ribs are ready!   I used a little party stacker cooler and went straight from the pit to the holding box. Then I shut the lid and let the ribs rest for about an hour. Every 15 minutes you want to open the cooler to let the steam out. The idea is to rest the meat not continue to cook it. Mojo Beef Ribs Ingredients: - 3-4 slabs Beef Plate Ribs - 1/4 cup Killer Hogs AP Rub 🤍 - 1/4 cup Tennessee Mojo Beef Rub 🤍 - 2 Tablespoons Killer Hogs Steak Rub 🤍 - 32oz Beef Broth - 2 Tablespoons Dill Pickle Juice - 2 Tablespoons Soy Sauce - 2 Tablespoons Worcestershire sauce Directions: 1. Trim excess fat and sinew from the top of each slab of Beef Ribs 2. Season the outside of each rack with a layer of AP Rub, Mojo Beef Rub, and Killer Hogs Steak Rub (you can substitute your favorite seasonings) 3. Prepare smoker for indirect cooking at 250 degrees. When smoker reaches optimal temperature, place chunks of hickory and pecan wood directly on hot coals for smoke flavor. 4. Place each slab of ribs on the cooking grate and smoke for 1 1/2 hours. 5. Combine the beef broth, pickle juice, soy, and Worcestershire sauce in a squirt bottle and spritz the ribs. 6. Continue to spritz the ribs every 60 minutes until internal temperature reaches 175-180 degrees. At this point wrap the ribs in butcher paper and return to the smoker. Continue to cook until internal temperature reaches 202 degrees and the meat thermometer slides in with almost no resistance. 7. Sign up here 🤍 for your free daily newsletter — I’ve really enjoyed Morning Brew and I think you will too! *RECIPE FOR ONE LARGE PORTION* 3 beef back ribs 1 baking potato vinegar garlic ketchup mustard molasses soy sauce hot sauce smoked paprika cheese fresh thyme salt pepper oil Cut the ribs into three individual bones, if they didn't come like that already. Chop up a few cloves of garlic and season the ribs aggressively with salt. Put the ribs in a sealable bag with the garlic, and pour in just enough vinegar to keep the meat coated, along with a little water (1 part water to 2 parts vinegar is good). Let marinate for a few hours or overnight. Remove the ribs from the marinade and try to scrape off most of the garlic pieces. Lay the ribs in a baking dish and seal it tightly with foil. Cut the root ends off a few more garlic cloves but leave the skins on. Put them on a little piece of foil, coat them lightly with oil and wrap them up tight. Stab the potato a few times to let out steam, coat it in oil and season the skin generously with salt. Put the ribs, garlic and potato into a 300ºF/150ºC oven — I like to cook the potato right on the grates. When the garlic is soft and golden brown, take it out — it took me about an hour. Remove the meat when it's very soft and remove the potato when it's squishy inside — both took me about 3 hours at that relatively low temperature. Pour all the liquid and rendered fat out of the rib pan and save it. Tear off a small piece of rib meat and taste it for seasoning. If the meat needs more salt, sprinkle it on now. Cut the potato in half and scoop the inner flesh out to a bowl, discarding one of the skin halves. Mash the potato innards, enrich them with a couple spoonfuls of the rib fat and loosen their texture with the rib broth until they are smooth and moldable. Squeeze the roasted garlic cloves out of their skins and into the potato mixture. Grate in some cheese and stir in salt, pepper and thyme leaves to taste. Pile the filling into the remaining potato skin. Mix up the barbecue sauce by putting about 1/4 cup (60mL) into a bowl and augmenting it with a little molasses, mustard, soy sauce, hot sauce and smoked paprika. If you don't have or like some of those things, they can pretty much all be skipped or swapped. Mix it to taste. Before you put the sauce on, return the ribs to the oven uncovered and turn the broiler (grill) on max. Brown the ribs on all sides under the broiler. About halfway through that process, return the potato to the oven and let the top brown under the broiler. Now brush a thin layer of BBQ sauce onto the ribs and return them under the broiler. When the sauce has browned by not burned, paint on a second thin layer and repeat. Take out the ribs and the potato when both are brown and throw them on a plate. Garnish the ribs with more thyme leaves. and have any unused sauce on the side.

The short beef ribs usually come in smaller individual pieces and have a good bit of meat on top of the bone. You see these beef ribs served in restaurants usually braised for hours where the meat has time to really break down. The back beef ribs are more suited for bbq, so that's what I'm cooking today. Back beef Ribs are cut off the ribeye area so most of the meat on top of the bones has been removed but what's left between the bones is really good meat, if you cook it low and slow. Beef ribs come in slabs about 9-10 bones. There's not much trimming to do to these beef ribs but if you see any cartilage or thick sinew go ahead and trim it off. On the back side you'll notice a membrane. Back beef ribs have a double membrane. The first one is usually removed before packaging and that leaves a thin membrane holding the beef rib slab together. Leave this membrane on to keep the slab from falling apart during the cooking process. The first step is to give the beef ribs a light coating of oil. You can use canola, olive, or vegetable oil here. It doesn't really matter; you just want something to bind the seasonings to the meat. As a base layer I use my AP rub. It's a mixture of 1 part salt, ½ part granulated garlic, and ¼ part black pepper. For the next layer use a bbq rub that goes with beef. It should be something balanced not too sweet. Fire up your cooker to 235 degrees and add a little pecan for smoke. Place the ribs on the cooker and let them smoke for 3 hours or until the outside is a dark mahogany color. At this stage they're ready to wrap. For the wrap I melted ½ stick of butter in a small bowl and whisked in a ½ tsp of Garlic, Dried Parsley, and Minced Onion. To this mixture add 2oz of Worcestershire, 2oz Soy Sauce, and 2 oz Beef Broth. Place the beef ribs meat side down on a strip of aluminum foil and pour ½ of the butter mixture over the ribs. Wrap the foil over the ribs and repeat the same process for the other slab. Now the ribs go back on the smoker to tenderize. This is where the remainder of the fat breaks down and what is left is tender, juicy meat. The wrap process takes about 2 more hours, but I start checking after an hour just to see if they're getting close. You should see the meat pulling back from the bones. If you grab a bone and slightly twist it should almost come free. Once the beef ribs hit this stage they're done. Remove them from the cooker and let them rest for 20 minutes. If you want to sauce the beef ribs, you can drain the liquid from the foil and separate the fat. You can mix this liquid with a tablespoon of bbq sauce and brush it back over the ribs, but I like them straight out of the foil. Beef ribs cooked low and slow are very tender and moist. The fat that has rendered during the cooking process runs throughout the meat and adds a ton of flavor. There may not be a lot of meat on the bones, but what is left will melt in your mouth. These were fall off the bone delicious. They were so tender and juicy and full of flavor. And believe me, as amazing as they looked, they tasted even better! We hung these in our Pit Barrel and let them do their thing! It was a super easy cook if you want to try these amazing ribs in your backyard! Beef Rib Recipe Directions: 1. Give them a nice trim. 2. Peel the membrane off of the back. 3. Put your hook around the first bone if you want to hang them. 4. We rubbed one rack down with Cow Cover Hot ( 🤍 ) and the other rack with our SPG Rub ( 🤍 ). 5. Put them on the smoker for an hour. 6. Pull them once you have the color you want and wrap them in foil. 7. Put them on the grate until they reach an internal temperature of 207°F. 8. Now you can use this method and adapt the temperature guides to suit other smokers too! Smoked beef ribs are like brisket on a stick! They are super tasty, tender and juicy too! Beef ribs are sure to impress any BBQ lover! If you are new to BBQ, learning how to smoke beef ribs is a great starting point! Beef ribs are very forgiving, they don't require much attention and are so tasty! They key to great beef ribs when learning how to smoke beef ribs is understanding probe tenderness. They might feel alright at the 185F/85c internal mark, but trust me, you'll notice the difference once you start getting to the 200F-205F/93c-96c internal mark. So my advice is to be patient and really get to understand what the right probe tenderness is. Temperature is a great guide, however when it comes to things like pulled pork, brisket and ribs, probe tenderness is key! Ciao ragazzi e bentornati sul canale, oggi a bbq joint prepariamo le beef ribs. Le beef ribs altro non sono che le costine di manzo, negli Stati Uniti e più nello specifico in Texas sono una delle preparazioni barbecue più diffuse e apprezzate. Noi oggi le prepareremo in pieno stile texano affumicate in low & slow come nei migliori bbq joint di Austin. La tecnica di cottura è simile a quella del brisket e, così come il brikset, la materia prima è di fondamentale importanza se si vuole ottenere un risultato soddisfacente. La macelleria Dealti seleziona carne di altissima qualità proprio come queste beef ribs di angus americano della Greater Omaha, una farm situata nel cuore del Nebraska. Come dicevo la carne deve essere di qualità e con delle caratteristiche ben definite: deve essere grassa e ben marezzata, affinchè il grasso e il collagene in cottura si sciolgano donando al morso un sapore e una succosità fenomenale. La carne della grande distribuzione nella grande maggioranza dei casi non fa al caso nostro, perché molto magra, il rischio è quello di avere un boccone asciutto e anche piuttosto duro. La preparazione è piuttosto veloce, pulizia del grasso superficiale con un coltello adatto mentre la pleura nella parte inferiore è meglio tenerla per supportare l’osso durante la cottura. Per quanto riguarda il seasoning io ho usato solo due ingredienti: sale e pepe, nello specifico sale di Cervia a grana media e due pepi uno profumato e non troppo forte: il pepe di sarawak e uno un po' più forte e deciso: il pepe tellicherry. In molti casi viene aggiunto anche l’aglio in polvere. Io però ho preferito rimanere solo con sale e pepe. L’obiettivo della cottura? carne tenera, morbida e succosa all’interno e crosta saporita, croccante e decisa all’esterno. Affumichiamo con legno di ciliegio e di pecan a una temperatura di circa 110-120 gradi. Dopo circa 3 ore e mezza di cottura la carne è a 70-72 gradi a questo punto si può decidere di continuare la cottura nello stesso modo oppure usare la tecnica del foil. Io ho preferito continuare la cottura senza foil visto che la carne era di primissima qualità ma se la la carne non è molto marezzata il foil può aiutare a mantenere un po' di succosità in più a fine cottura. Io non misuro la carne ma preferisco affidarmi al tatto, per capire se sono pronte o meno, indicativamente devono raggiungere i 90-92 gradi interni. Smoked Beef Ribs For more barbecue and grilling recipes visit: 🤍 These smoked beef ribs are sometimes called “Dino Beef Rib”. To start, trim off any excess fat or sinew from the meat side of the beef rib; rinse under cool water; and pat dry with paper towel or a clean cloth. Don’t worry with trying to remove the membrane from the bone side; you want it to stay in place to hold the meat on the smoked beef ribs bones as they cook. Keep the seasonings simple; beef is the main focal point. I use a little of my Killer Hogs AP Rub (which you can substitute with equal parts Salt & Black Pepper) and a light coating of my Killer Hogs Hot Rub for a touch of color and heat. You can cook on any smoker or grill. You’ll need an indirect fire running between 275-300⁰ and a few chunks of smoking wood. I like hickory and pecan on beef, but if you happen to have post oak, then use that. When the grill is up to temp, add the wood and place the ribs on the cooking grate. The ribs need to smoke for 3 hours. After 3 hours, the ribs have the right color, so it’s time to wrap for tenderness. Tear off a sheet of Heavy Duty Aluminum foil and place the ribs bone down on the foil. Bring the edges of the foil up and pour in about 1 cup of beef broth around the ribs not on top. This liquid creates steam inside the foil and helps break the meat down. Close the foil down tight around the ribs and place them back on the cooker. It should take another 2-3 hours to get the beef ribs tender. Carefully open the foil after 2 hours and check the internal temperature between the bones. The probe should slide in without any resistance (think of a warm knife sliding through butter). I look for internal temps of 204-208⁰. Once the ribs feel right, really soft and temping in the 204 range, pull them off the grill and place in a dry cooler. Open the foil and let the steam vent for just a minute. Also remove the drain plug from the cooler. You don’t want it airtight or the meat will continue to cook. Let the ribs rest in the cooler for at least 1 hour up to 4-5.
