It really means a lot to me. 🔄Kg to cups converter: 🤍 AMARETTI BISCUITS | How to Make Almond Amaretti Cookies INGREDIENTS: 500g/5.2 cups Almond Meal 300g/1.33 cups caster sugar 5 egg whites (Use free range eggs that are room temperature) 1 x bottle almond essence (1.07 Oz) Bowl of icing sugar (plus extra for dusting!) UTENSILS: 1 x Large mixing bowl 1 x Medium mixing bowl Whisk Teaspoon Baking tray Baking paper METHOD: 1. To start making your Italian amaretti biscuits, separate 5 egg whites from the yolk into a medium mixing bowl and whisk them well. 2. Once there are lots of bubbles at the top of the egg whites, add the almond essence and whisk gently once again so it completely infuses them. 3. Mix the almond meal and caster sugar together in a separate bowl until the sugar seems to disappear. 4. Next for your amaretti biscotti, pour the egg white mixture into the bowl with the dry ingredients and mix through using a large spoon. 5. Once this has all started to bind, use your hands to combine everything even more and make sure that everything mixes really well together, still keeping it all inside the large bowl. 6. Don’t try and make it into a ball, just squeeze down with your hands so it stays ??? NONNA MARIA’S TIP: If you feel the mixture is too wet and sticky, you might need to add some extra almond meal. 7. Now you can let the amaretti mixture rest for an hour (or overnight in the fridge). 8. If you’re making them on the same day, wash your hands, and once this has had time to rest, get ready to roll! 9. When it’s time to make the amaretti biscotti, prepare a large flat baking tray by spreading baking paper on top and pre-heat your oven to 180 degrees celcius/356 F. 10. Using a tea spoon, scoop up a heaped amount of mixture, roll it around using the palm of your hand, and make it into a ball. NONNA MARIA’S TIP: If your hands are getting too sticky to roll the amaretti, get a bowl and place some water inside, them dip a finger into it, spreading it on to both palms to help smoothen the process. 11. Place the ball gently into a bowl of icing sugar and repeat until the bowl is almost full. 12. Roll each amaretti ball around in icing sugar and then gently place it on the baking tray. 13. Line the balls up, making sure you don’t place them too close together. 14. Once the tray is completely full, with enough space in between each one, flatten out your hand, and press down gently onto each ball making the surface flat. This will create some cracks and provide the perfect form for your amaretti biscotti! 15. Dust with one more sprinkle of icing sugar all over before placing them in the oven for approx. 15 minutes – but check them after about 12 minutes as all ovens vary! HOW TO SERVE Leave the amaretti to cool or enjoy nice and warm with a cup of tea, coffee or hot cocoa! Carefully sweetened with powdered sugar, they are a delightful treat and are often served during Chinese New Year. Almond cookies recipe is one of those easy cookie recipes you must try especially during the festive seasons. During Chinese New Year, almond cookies are highly requested. You will never regret sinking your teeth into these soft and crumbly cookies and enjoy the nutty almond taste. These cookies have a tiny hint of saltiness to give an overall flavour to the cookies. If you are looking for a recipe which is easy and fast, look no further. Try this Chinese almond cookies recipe specially made for you. ### Almond flour vs almond meal You can use both because almond flour or also known as almond meal are both made out of grounded almonds. Most companies use the terms interchangeably but [in the US for example, there is a slight difference between almond meal and almond flour](🤍 Almond flour is sold with the finest grind of blanched almond while almond meal is slightly coarser as the skin is also blended together. For this recipe, you would want to get almond meal for the best flavours. Traditionally, you can feel the crumbs of almond in the cookies as you chew on them. Moreover, the blended skin makes the cookies very attractive too. ### Homemade almond flour Almond flour can be made at home. Just blend the almonds finely but do be careful not to blend them for too long or it would end up as almond butter. ### Can I use corn/tapioca flour instead of wheat flour? You may but it is going to change the texture of the cookies. This recipe delivers the light crunchiness on the outside while crumbly and soft on the inside. Using corn or tapioca flour will not deliver this effect. Wheat flour is required to create structure in the cookies as almond flour (or almond meal as known in the US) does not bind well. ### Must I use baking powder and/or baking soda? Yes! Baking soda is needed to raise the dough to give it the soft and crumbly texture. However, baking soda reacts immediately and fizzles off pretty quickly. Since the baking process happens slowly, you'd want to extend the effect of baking soda. To counter the quick reaction of baking soda and extend it, baking powder is required as one of the acids in it reacts to heat. This makes the dough rise as it is baking. ### Which type of oil? Peanut oil would be the best choice to accompany the nutty flavour of almonds. However, any neutral-flavored oils such as canola, sunflower or corn oil would be great too. ### How to store the cookies? Almond cookies must be cooled to room temperature before stacking them up in an airtight container. They can be kept for 4-6 weeks in a cool area, away from the sunlight. In Italian, the word amaretti is derived from the word amaro, which means bitter. And so in order to get the true authentic taste of an amaretti, you must use ground bitter almonds or replace them with bitter almond extract. Luckily, most almond extracts have already bitter almond extract as their base because that’s what gives them their intense scent. . You can make it at home too. Grind 100 grams almonds and pass through the sieve. Make sure not to grind them more as it can end up into almond butter. You can also use blanched almonds. But make sure to dry them before grinding. Or the best way is to  get the almond flour. 2- 125 gram powdered sugar. You can grind caster sugar into fine powder and mix with almond flour. 3- Mix a pinch of salt. Our dry ingredients are now mixed up. 4- Take 1 egg white. Add 1/8 tsp almond extract and 1/8 tsp vanilla extract to it. No time to make fancy cookies? Make this! It will only take you less than an hour to complete it , and it taste just as good as any other chocolate almond cookies =D ! Chocolate almond cookies ingredients: (Butter) – 140g (Brown sugar) – 80g (Castor sugar) – 40g (Egg) - 1 nos (Cake flour) – 250g (Baking powder) - 1/2 tsp (Chocolate chips) – 150g ( Roasted almond nibs) - 120g (Baking soda) - 1/2 tsp Method: 1) Preheat oven to 180 ゚C. Place baking paper in baking tray. 2) Slightly beat the butter with sugar (not to swell). Add the egg mixture in several portions and stir until mixed. 3) Mix flour and sieve. Add to (2) and mix well with a spatula. Then add roasted almonds, chopped chocolate, and mix well. 4) Use a teaspoon/spoon to dig a small portion of the dough and round it up, 5cm apart. slightly flatten it. 5) Bake for 15 to 20 minutes, when it is half-baked change the direction of the bakeware, continue baking until the biscuits are slightly brown. 6) After baking, remove the bakeware and allow the cookies to cool on the bakeware for 5 minutes. Remove the biscuits to the drying net and allow them to cool completely before they enter the sealed cans. Follow me : Twitter :🤍 Facebook : 🤍 Vea este video en español - 🤍 Makes 24 to 30 cookies 1 cup (227 grams) of unsalted, softened butter 1/3 cup (67 grams) white sugar 1 2/3 (210 grams) cups all-purpose white flour 2/3 (100 grams) cups almond meal ¼ tsp. salt Confectioner’s sugar Cream the butter and the sugar for about three minutes until it is fluffy. In a separate bowl, mix the flour with the almond meal and the salt. Add it to the butter and mix it in. Do not over beat. Cover the bowl and refrigerate for about 30 minutes. Heat the oven to 350 degrees F (175 C) and line your cookies sheets with parchment paper or silicon mats. Scoop out about a TBS of dough and form a log. Bend it to form a crescent moon shape and place it in the cookie sheet. These will not spread so you do not need to separate them too much. Pulp from ripe mango 1 cup almond flour 1 tsp vanilla extract 1 tsp fresh lemon juice Pinch salt 1 tbs coconut sugar Mix ingredients, place in fridge for at least 1/2 hour. Preheat oven to 300F and line baking sheet with parchment paper. In a large bowl, whisk together the almond flour, granulated sugar, and salt. Set aside. 2. In another large bowl, beat the egg whites until foamy. Add in the lemon juice and almond extract. Continue beating the mixture until medium-stiff peaks. 3. Stir in your dry ingredients until combined. Scoop out the cookie dough and roll into 1″ balls. 4. Roll the balls in powdered sugar until well coated. Place onto the prepared baking sheet. 5. Bake for 25-30 min or until the tops are cracked and the bottoms just start to brown. Let cool for 5 min on the baking sheet and transfer to a wire rack to cool completely. Recipe: Lam Soon Shortening Blue 120g Icing Sugar 100g Fine Salt 1/2tsp All Purpose Flour 220g Corn Flour 180g Toasted Almond Flakes 200g Daisy Corn Oil 70g Method: 1. Beat LS Shortening with sifted icing sugar until creamy. 2. Mix well with salt, flour, corn flour and crushed almond flakes. 3. By now, the mixture will be crumbly. 4. Mix in Daisy Corn Oil to form a dough. 5. Roll out the cookie dough between 2 pieces of parchment paper until about 1cm thick. 6. Use a 3cm diameter cookie cutter to chop the cookies. 7. Bake in a preheated oven at 175°C for about 25 minutes. Tips: 1. If the cookie dough is too wet, you can dust it with some flour.

Hi, everyone :) today we'll show you how to make Ricciarelli at home. Ricciarelli are classic Italy cookies from Siena. It has a wonderful almond flavor and a lovely dense and chewy texture with a beautiful cracked surface. They are a cousin to French Macaron. Their ingredients are very similar, but the good news is Ricciarelli is much easier to make than Macaron. I’ll even say it’s super easy to make. They are perfect for afternoon tea. :) Hope you enjoy! This is an #ASMR version, you can check out the other version that with BGM and Voices in Chinese if you like: 🤍 - INGREDIENTS: (Serves 12) * egg white, 1 * almond flour 100g * powdered sugar 70g, take out 20g for meringue * salt, a pinch * lemon juice, 1⁄2 tsp, about 2.4g * vanilla extract, 1⁄2 tsp * zest of half of a lemon or orange * powdered sugar 50g, for coating cookies - INSTRUCTIONS: 1. Using a mesh sieve, sift together almond flour and powdered sugar 2. Zest a half of lemon 3. Whisk together egg white, salt, lemon juice and vanilla extract, until soft peaks form. 4. Add powdered sugar. Whisk well until it reaches between soft peaks and stiff peaks. 5. Add almond sugar mixture in 2-3 batches, fold into egg whites, until combined. 5. Use a spoon or an ice cream scoop, scoop a ball, roll in powdered sugar until well coated. Shape into a round shape and then into an oval. 6. Preheat the oven to 150C, bake for 18-20mins until light golden. 7. Remove from the oven.
