Don't know where to start when it comes to making bread? Do you only have all-purpose flour? Scared you're going to fail? Fear not!! This is the bread recipe you've been looking for! I will show you how to make bread step by step! Let's do this!! White Bread Recipe: 4 cups warm water 2 TBSP. active dry yeast Dash of white granulated sugar Mix together and let "foam" for 10 minutes in a warm place, covered. After 10 minutes, pour yeast mixture into large mixing bowl. Add: 1 TBSP. salt 1/3 cup canola oil 1/3 cup honey 5 cups all-purpose flour Mix. Add 5-7 more cups flour (ONE CUP AT A TIME) until dough is smooth and pulls away from the sides of the bowl. Knead by hand on lightly floured surface for 5-8 minutes. Place dough in a greased large bowl and spray dough with cooking spray. Then cover with a dish towel and let the dough rise until doubled in size, 30-45 minutes. Generously grease 3 (9 x 5 in) loaf pans and set aside. Punch down the dough, turn it out onto a lightly floured surface, and knead it briefly to remove the air bubbles. Divide dough in thirds, knead each section a few times, and then shape into a loaf. Place the dough into prepared loaf pans. Rub the top of the loaves with soft butter then cover with a dish towel and let rise 30-45 minutes. Meanwhile, preheat oven to 350 degrees. Bake the loaves for 30 minutes. Immediately remove loaves from pans and cool on a wire rack. Rub the top with butter while still hot! You can freeze this bread in a freezer bag for up to 2 months! My Deep South Texas video "Homemade Bread for Beginners" has received hundreds of comments asking if All Purpose Flour could be used in place of the bread flour. It seems most beginning bakers do not have, or are not familiar with bread flour. In this video I follow the same process using All Purpose Flour. As in the original video, there is no sugar in this recipe. A couple amazing time lapse clips show the dough and bread rising like crazy! The overall results were exceptional. What is the best flour for hand pulled noodles? In this guide, I'm going to show you the differences between all purpose flour, bread flour, and cake flour. Which is more extensible? Which produces a chewy noodle? Watch the video to find out! One thing that you might be wondering about is WHY the bread flour was less extensible, and WHY the bread flour required more water. The answer to both of these questions is the same. The reason is because in order for a dough to be stretchy, it needs a high water to gluten ratio. With the bread flour, we increased the gluten but did not increase water (still used the same 140 grams water) so therefore there was a lower water to gluten ratio and therefore less stretch. It's not the AMOUNT of water that matters, it's the RATIO between water and gluten that determines how stretchy you dough is. Have you made pizza and the dough never stretched? Probably because you used a stronger flour than the person who made the recipe. Also, because there is so much more gluten in the bread flour, it requires a lot more water to get that critical water gluten ratio for infinitely stretchy dough. For all purpose flour, there's less gluten, so less water needed. For cake flour, even less gluten, so even less water needed. So with bread flour, which had more gluten, we need more water. When you use nutritional yeast or peng hui, the same things still apply. Bread flour needs more water, ap flour in the middle, and cake flour will still be super weak. But, with nutritional yeast, everything is just a bit more forgiving all across the board. With nutritional yeast, the bread flour will still be stiff, but not quite as much, same with the ap flour, and the cake flour will be... just a bit more stretchy. Watch this to learn how to make authentic hand pulled noodles: 🤍 What salt does, is it stiffens up the dough. Sometimes, you want this. We sometimes want a bit of stiffness to help make the dough stretch more evenly. However, when working with high gluten flours like bread flour, it already has enough innate stiffness that no salt is needed. With all purpose flour, a tiny bit of salt can be helpful, but it is easy to overdo it. With all purpose flour, you can just not add any salt and already get decent noodles. Fyi, these doughs were rested for 12 hours.
