FRESH RICOTTA ▪½ gallon/2000g whole milk ▪200g or 3/4c + 2 Tbsp heavy cream ▪15g or 2 1/4tsp salt ▪100g or 1/3c + 1Tbsp white distilled vinegar Place 4 layers of cheesecloth in a colander with bowl underneath (i use a salad spinner with basket). Add milk, cream, and salt to a sauce pan and heat over medium for 10 min, whisking frequently, until temp reaches 190F/88C. At this point, add vinegar. Very gently stir with spatula or whisk to combine. Allow to sit for 15 minutes to allow milk to break. Curds and whey should be separated. Gently pour mix into cheesecloth setup then lift out cheesecloth and allow to drain for about 20min. Now you have fresh ricotta. MEAT SAUCE 1lb/450g 80/20 ground beef 2 115g/4oz Italian sausages, meat removed from casings Olive oil 25-30g or 2Tbsp butter 200g or 1 lrg onion Salt 20g/5 cloves garlic, minced Chile flakes 2 28oz cans crushed tomatoes 5-7g or 1-2tsp sugar Spread ground beef and sausage meat flat onto a sheet tray. Cook under the oven broiler for 15 minutes (or roast in oven at highest temp). While that cooks, add 25-30g olive oil and butter into large heavy bottomed pot. When melted, add onion and pinch of salt. Stir and cook onions until softened and translucent. Add garlic and chile flakes. Cook for about a minute until fragrant. Add crushed tomatoes. Add 10g salt and stir to combine. Simmer for about 5min. Check broiling meat. When done, it should be browned and cooked through. Crumble into small pieces then add to tomato sauce along with any drippings, stir and continue to cook for 20-30 minutes. Sauce should have reduced by about half. To finish, taste for seasoning. Add a pinch more salt, if needed, and sugar to balance. Stir and taste again. THE BUILD AND BAKE Meat sauce 1box no boil lasagna noodles (or reg lasagna noodles soaked for 5 min in water before building) 1lb/450g full fat mozzarella, shredded 1/2c grated parm 6-9 slices fresh mozzarella Layer ingredients as follows into a 9x13 baking dish: 1/2c meat sauce spread, a single layer of lasagna noodles, 9 spoonfuls of the ricotta mixture, 1c shredded mozz, 3/4c meat sauce, a layer of noodles, 9 spoons ricotta mix, 1c shredded mozz, 1c meat sauce, noodles, 9 spoons ricotta mix, 1c shredded mozz, 1c meat sauce, noodles, 1c meat sauce, 1c shredded mozz, grated parm, 6-9 slices of fresh mozz Cover tightly with oiled piece of foil and bake in preheated 375F/190c oven for 25min. Depending on the brand or size of lasagna noodles will determine the amount you need for 3 layers 9x13 Baking Dish INSTRUCTIONS - In a preheated pot add olive oil, small diced onions and sauté until onions are cooked and softened - To the same pot add lean ground beef, Italian sausage, salt, 1/4 tsp pepper, garlic powder, onion powder, red pepper flakes, dried oregano, 1 Tbsp lightly dried parsley and cook on a medium high heat until meat is browned - Once meat is cooked through, be sure to drain any rendered fat out of the meat - Now add pasta sauce, and water to the cooked meat - Combine well - Bring meat sauce to a simmer, cover with a lid, lower the heat and gently simmer for 20 minutes on a low heat - After 20 minutes remove meat sauce from stove and then set aside until ready to use - In a large bowl combine egg, ricotta cheese, 1 Tbsp lightly dried parsley, 1/4 tsp pepper, 1/4 cup of parmesan cheese, 1/2 cup of shredded mozzarella cheese and mix well - In a separate large bowl combine the remainder shredded mozzarella cheese and parmesan cheese - At this point you should have your meat sauce, ricotta cheese mixture and shredded cheese mixture in three separate bowls ASSEMBLY - In a 9 x 13 inch baking dish add 1 cup or a good scoop of meat sauce and evenly spread on the bottom of your baking dish - Now place 3 long no-boil lasagna noodles (or 4 if using a shorter sized noodle) on top of meat sauce. Be sure to leave space between noodles as they will expand as they bake - Now spread half of your ricotta cheese mixture on to noodles - Next evenly sprinkle a 1/2 cup to 3/4 cup of shredded cheese mixture - Then add 1 1 /2 to 2 cups of meat sauce and spread evenly - Repeat this process once more - Now add one more layer of lasagna noodles, add the remainder of meat sauce and top with remainder of cheese - Cover tightly with aluminum foil - BAKE in a preheated oven 🤍 375ºF / 190ºC covered for 45 minutes - Then uncover and continue baking for 15 minutes more or until the cheese is golden brown and bubbling - Once lasagna is done, remove from the oven and allow it to set for 20 to 25 minutes - Allowing your lasagna to set and cool a bit will make cutting in to square pieces a lot easier - This lasagna will serve 9 to 12 slices DISCLAIMER: This video and description contains affiliate links, which means that if you click on one of the product links, I’ll receive a small commission. The Best Homemade Lasagna Recipe Subscribe 4 Food- 🤍 Follow my Instagram- 🤍 Ingredients Meat Sauce 1 lbs Italian Ground Pork 1 lbs Ground Beef 1-2 Bottles of any Pasta Sauce (plus water to rinse out bottle and add more moisture to sauce while simmering) 2-3 Onions Make sure to mince them up, I like to use a mandolin and then slice and dice 4 Cloves of Garlic I use a Garlic Masher Salt and Pepper Italian Seasoning Bechemel Sauce- This is what will set apart your lasagna from the others. Takes a little time and muscle… but it’s well worth it. Trust me, Judy’s favorite! ½ Cup Flour 7 tbsp Butter 4 and ¼ Cups Warm Milk 2 Cups Parmesan Cheese- Shredded White Pepper Salt The Stack Ingredients Lasagna Pasta Mozarella Cheese Start by cooking the meat sauce. Cook the Pork and Beef first. Remove and cook the onions next. Add garlic and italian seasoning with some olive oil once onions are almost done. Combing the meat back in. Slowly add pasta sauce till desired consistency. Keep on a low heat. Bechamel Sauce.... start by getting a medium pot. Medium High Heat, once pot is hot, add butter. Melt. Once it's bubbling slightly, add flour. Cook through. It will be slightly brown but don't burn. Slowly add milk a quarter of the total amount at a time. Slowly add the milk on a medium heat and whisk constantly. Once all milk is added and it's creamy, add white pepper and salt to season. Turn down heat to lowest setting or off, and slowly whisk in the parmesan cheese. Boil pasta noodles as instructed on the box. Pre Heat Oven to 375 degrees. Once done, stack. Sauce first, then pasta, then bechamel, then top with mozarella. Do this 2-4 times or untill you've got your lasagna to the desired height. Last layer switch the pasta sauce and bechamel so that the white sauce and mozarella are on the top layer. Add to oven for 40 minutes covered. Then remove cover and broil for 3-5 minutes while keeping an eye on it! Add ground beef, sweet Italian sausage meat, and onions. 6. Chop and break meat into small pieces while frying. 7. Once brown, add salt, garlic powder, minced garlic, and pepper. 8. Cook until well done. 9. Once done, drain excess oil. Afterwards, place meat into pot of sauce, then stir well. 10. Add shredded mozzarella cheese, sour cream, ricotta cheese, and chopped fresh spinach to a big bowl, then stir in well. 11. Preheat oven to 350 degrees. 12. Coat the bottom of a baking pan with a little meat sauce. 13. Top with 4 lasagna noodles. 14. Coat with spinach cream mixture. 15. Add some shredded cheddar cheese and shredded mozzarella cheese. 16. Coat with 2nd layer of meat sauce and continue layering until pan is full. 17. Top with meat sauce, cheese, and fresh parsley. 18. Bake for 45-50 minutes.

Full written recipe of Veg Lasagna For red sauce Ingredients: • Oil 2 tbsp • Garlic 5-6 cloves (sliced) • Onions 1 medium size (chopped) • Kashmiri red chilli powder 1 tbsp • Tomatoes puree 2 cups • Sugar a pinch • Tomato ketchup 1 tbsp • Oregano 1 tsp • Red chilli flakes 1 tbsp • Salt to taste • A pinch of black pepper Methods: • Set a sauce pan on low heat, add oil, garlic and onions, cook until onions are translucent. • Add Kashmiri red chilli powder and cook briefly on low flame for 10-15 seconds. • Now, add the tomato purée and the remaining ingredients, stir well and cook on medium high heat, cover and cook for 10-15 minutes. • Homemade red sauce is ready, keep it aside to be used later In the lasagna. For white sauce Ingredients: • Butter 30 gm • Refined flour 30 gm • Milk 400 ml • Salt to taste • A pinch of black pepper powder • Oregano ½ tsp • Nutmeg powder a pinch • Processed Cheese 50 gm Methods: • Set a pan on medium low heat, add butter and let it melt, add the flour and cook the flour for 2-3 minutes, remember not to burn the flour or changing the colour to brown, keep it light brown. • Further add, milk in 3 batches and make sure to whisk well while adding milk to make a lump free sauce. • Further add salt to taste, a pinch of black pepper powder, oregano and nutmeg powder, stir well. • Now add processed cheese and stir well until the cheese melts. The white sauce is ready. For stir fried veggies Ingredients: • Oil 1 tsp • Garlic chopped 2 tbsp • Ginger 1 tbsp (chopped) • Green chillies 2-3 nos. (chopped) • Veggies: • Carrot 1/3rd cup • Mushroom 1/3rd cup • Yellow Zucchini 1/3rd cup • Green Zucchini 1/3rd cup • Sweet Corn kernels 1/3rd cup • Yellow bell pepper 1/3rd cup • Red bell pepper 1/3rd cup • Green bell pepper 1/3rd cup • Broccoli 1/3rd cup (blanched) • Salt & black pepper to taste • Sugar a pinch • Oregano 1 tsp • Red Chilli flakes 1 tsp Methods: • Set a wok on medium high heat, add olive oil, garlic, ginger and green chillies, cook for 1-2 minutes. • Further, add carrots and mushroom and cook for 1-2 minutes on high heat. • Further add the remaining veggies and cook them for 1-2 minutes on high heat. • Add salt & black pepper powder to taste, oregano, chilli flakes, toss and cook for 1-2 minutes, stir-fried veggies are ready, keep aside to be used later. To make lasagna sheets Ingredients: • Refined Flour 400 gm • Salt ½ tsp • Water 210-220 ml For boiling • Water • Salt to taste •. Oil 1 tbsp Methods: •In a bowl, add refined flour, salt to taste, mix well and add water gradually, combine the water and flour well. • Transfer the dough over the kitchen platform, sprinkle some dry flour and knead the dough well by stretching it until the dough is smooth, cover it with a damp cloth and rest the dough for 15-30 minutes. • After the rest, knead the dough once again and divide the dough in 2-3 equal dough balls, dust with dry flour and flatten it with hands, further roll the dough with the help of a rolling pin, in a very thin sheet, make sure to dust dry flour every time you roll to avoid the dough from sticking or overlapping. • Remember the dough is stiff in texture so it will require efforts to roll a thin sheet, if you have a pasta rolling machine you can use that too. To check whether your sheet is thin enough, put your hands beneath the sheet, if hands are visible your good to cut them. • As you roll it in thin sheet, trim the edges and further cut them in rectangular sheets • You can alter the size of the sheets as per your baking dish size. • Set water for boiling, add salt to taste and oil, boil the lasagna sheets for 5-6 minutes. Strain the lasagna sheets and they are ready to use for baking lasagna. For assembly Ingredients: • Lasagna sheets • White sauce • Red sauce • Stir fried veggies • Cheese Methods: • Spread little red sauce in a microwave safe bowl, add a lasagna sheet, further spread red sauce pasta and stir-fried veggies, spread a layer of white sauce and grate some cheese, layer it with lasagna sheets, repeat the layering process until there are seven layers formed. Or until it reaches your rim your baking dish. • Do the final layering, by adding good amount of mozzarella or processed cheese. • Preheat the oven and bake in convection + grill mode at 200 for 20 minutes or until the cheese browns. • Lasagna is ready, cut in square and serve immediately with some garlic breads. Full written recipe for Veg lasagna For red sauce: Ingredients: · Olive oil 2 tbsp · Onion 1 nos. medium sized (chopped) · Garlic 1 tbsp (chopped) · Kashmiri red chilli powder 1 tsp · Tomato puree 2 cups (fresh0 · Tomato puree 200gm (market bought ) · Salt to taste · Chilli flakes 1 tbsp · Oregano 1 tsp · Sugar 1 pinch · Black pepper 1 pinch · Basil leaves 10-12 leaves Method: · Set a pan on high heat & add the olive oil & let it heat nicely. · Further add onions & garlic, stir & cook on medium flame for 2-3 minutes until the onions turn translucent. · Now add kashmiri red chilli powder & stir it lightly then add tomato purees, salt, chilli flakes, oregano, sugar & black pepper, stir everything well, cover & cook on low flame for 10-12 minutes. · Further add the basil leaves by tearing then with your hands & stir well. · Your red sauce is ready. For white sauce: Ingredients: · Butter 30gm · Refined flour 30gm · Milk 400gm · Salt to taste · Nutmeg 1 pinch Method: · Set a pan on high heat, add the butter into it & let it melt completely, then add the flour & stir it well with the spatula & make sure you lower the flame & cook for 2-3 minutes, the texture of it will change from doughy to sandy. · Further add the milk in 3 batches while continuously whisky it, it should be lump free, cook until the sauce thickens & becomes smooth. · Now add salt to taste & nutmeg, stir well. · Your white sauce is ready. For lasagna sheets: Ingredients: · Refined flour 200gm · Salt 1/4 tsp · Water 100-110 ml Method: · In a large bowl add the refined flour along with the remaining ingredients & add water in batches to make a semi-tough dough. · Once the flour comes together after mixing, cover it with a damp cloth & let it rest for 10-15 minutes. · After the dough has rested, transfer it onto the kitchen platform & knead it well for 7-8 minutes, the texture of the dough should become smooth, cover it with a damp cloth & let it rest for half an hour again. · Once the dough has rested divide it into 4 equal parts & form them into roundels. · Further, place the roundel onto a flat surface & roll it into a thin chapati using a rolling pin, keep dusting flour if it sticks to the rolling pin. · Once you have rolled it out, trim the edges using a knife to form a large rectangle, dive the rectangle into smaller, equal sized rectangles. · Your lasagna sheets are ready. To make the makeshift oven: · Take a large handi & spread ample amount of salt in it, place a small ring mold or cookie cutter & cover the handi, set it on high flame & let it preheat for 10-15 minutes at least. Layering & baking of lasagna: · Red sauce (very thin layer) · Lasagna sheets · Red sauce · Sauteed veggies · White sauce · Mozzarella cheese · Parmesan cheese · Lasagna sheets · Repeat the same layering process 4-5 times or until your baking tray fills, you should at least have 4-6 layers. · Bake for 30-45 minutes in the makeshift oven.
