Ingredients: 1 pound shrimp deviened 4 tomatoes 1 cucumber 1/2 yellow onion 3 cloves garlic 1 green onion (green part only) 2 tablespoons cilantro/coriander *1 jalapeno or serano 2-3 cups lime juice 1/2 teaspoon ground cumin 1 teaspoon ground coriander seed *fresh chilies are typically used with ceviche but I use ground chili powder for this recipe. I like using ground chili so the entire dish is more evenly spiced. It also gives you more control over the spice level. Aguachile Recipe - Mexican Shrimp Ceviche Ingredients FOR THE SHRIMP 1 pound raw shrimp peeled, deveined and sliced in half lengthwise 1 cup lime juice about the juice from 3-4 large limes Salt to taste FOR THE RED ONION 1 small red onion thinly sliced 1 teaspoon white vinegar 1 cup water FOR THE AGUACHILE MARINADE 1/2 cup lime juice reserved from cooking the shrimp 1 tablespoon jugo maggi or use soy sauce 3 cloves garlic chopped 3/4 cup fresh cilantro 1 large jalapeno pepper chopped 1 serrano pepper chopped Salt to taste AGUACHILE GARNISH 1 medium cucumber peeled and deseeded, sliced into crescents 3 radishes thinly sliced 2 serrano peppers thinly sliced Chopped fresh cilantro Spicy chili flakes Cooking Directions FOR THE SHRIMP Place the sliced shrimp into a bowl and cover with 1 cup fresh lime juice, enough to completely cover the shrimp. Use more as needed. Add salt to taste let the lime juice "cook" the shrimp for 30 minutes, flipping once part way through. The shrimp will turn pink in color. FOR THE RED ONION While the shrimp is cooking, add the red onion to a bowl. Add the vinegar and enough water to cover the onions. Soak until ready to use. FOR THE AGUACHILE MARINADE Add the 1/2 cup reserved lime juice, jugo maggi (or soy sauce), garlic, cilantro, jalapeno, serrano, and salt to taste to a food processor. Process until smooth. ASSEMBLE THE AGUACHILE Add the shrimp with remaining lime juice to a serving bowl. Pour the aguachile marinade over it. Top with sliced red onion, cucumbers, chili peppers, and radish. Cover and refrigerate at least 30 minutes to chill. Top with fresh herbs. Sprinkle with red chili flakes. Serve cold with tortilla chips. Feel free to use scallops with this recipe as well. Try it with fresh sliced avocado and a bit of salt and pepper. Absolutely delicious. Don't forget the chips! Yo, yo yo food buskers and food buskettes. Today I'm back at Camden and on the busk serving up the Peruvian classic that is the Ceviche! It's basically kind of like a Peruvian sushi...kinda. FULL RECIPE Ingredients 3 limes ½ an orange 100g raw shrimp, shell on ½ a red onion 1 red chilli Twist of dill 6-7 mint leaves Twist of coriander Pinch samphire Method Using your hand, firmly roll the limes on your chopping board to loosen the segments inside, before juicing them into a large bowl. Squeeze in the juice from the orange. Peel the shrimp by stretching each one out and pulling away the hard shell, finishing with the tail. Twist off the heads and discard. Slice the shrimp along their backs, being careful not to cut all the way through, to reveal the intestinal tract. Remove with your fingers and discard. Now cut each shrimp all the way through, to create two halves. Sprinkle with salt, and place into the lime juice, where the citric acid will gently cook them. Dice the red onion, and finely chop the red chilli and herbs. Roughly chop the samphire. Add to the shrimp and lime mixture and stir. Gently drain off the excess lime juice, and decant the shrimp to your serving dish. Tip: To make a shellfish oil, reserve the shrimp shells. Heat in a pan and then pour over a flavourless oil. Let them sit in the oil before draining and bottling the liquid. Shrimp Ceviche Tostada Ceviche 1# peeled and deveined shrimp 4 limes, juiced ½ red onion, small dice 1 medium carrot, grated 2 tbls. cilantro, chopped 1 tomato, seeded and diced S&P Avocado Puree 2ea. ripe avocados 2 tbls. olive oil S&P, to taste Jalapeno-Lime Salsa 4 ea. jalapeno pepper 4 ea. limes, juices 3 tbls. olive oil or neutral oil S&P Tostada 6” corn tortillas Oil for frying, as needed depending on size of pan/pot. *Store bought work perfect for this recipe Directions: 1. Pat shrimp until completely dry 2. Coarsely chop or pulse with food processor 3. Remove and place in stainless steel or appropriately sized bowl 4. Submerge shrimp with lime juice and cover with plastic wrap. 5. Refrigerate for 1.5-2 hours 6. After 1.5-2 hours, or until the shrimp is no longer translucent and shows some hues of red, add in remaining ingredients. Avocado Puree: 1. Scoop out flesh from avocado using a spoon and place in bowl 2. Mashed with fork and potato masher until smooth. 3. Add olive oil and season with S&P Jalapeno-Lime Salsa: 1. In blender, place jalapeno peppers, lime juice, olive oil and S&P. Puree until peppers are broken down but still a bit course 2. Transfer to a bowl and set aside Assembly: 1. Spread Tortilla/Tostada with avocado puree 2. Top with an even layer of shrimp ceviche 3. Drizzle with jalapeno-lime salsa, to taste 4. ENJOY!!
