Unagi pao fan. Poached rice with a Japanese twist. Cook 1 rice cup of Japanese rice before the cooking of the dashi. You can add some hijiki seaweed to flavour the rice. Making a simple dashi using kombu and bonito flakes. Cut slits on the two sides of the kombu. Add the kombu in a claypot and add 800ml of water. Bring to a boil and lower the heat and simmer for 10 minutes. Then remove the kombu. Cut and rinse 1 cluster of bunashimeji mushrooms. Add 1 cup of bonito flakes and the bunashimeji mushrooms into the claypot. Bring it to a boil and then simmer for about 10 minutes. Add 1 tsp mirin and 3 tsp light soy sauce to season the stock. Meantime, get ready the unagi. Heat up a fillet of unagi in the oven at 190 Celsius with fan for 8 minutes. Once grilled, cut it into smaller pieces. The dashi should be ready by this time. Add some edamame and cook for a couple of minutes. When you’re ready to eat, add the cooked hijiki rice into the claypot. Don’t add the rice too early else the rice will soak up too much of the broth. Then add the unagi on top and sprinkle some furikake. Serve using the claypot and enjoy.
