Tokyo's Ameyoko Market is the city's street food paradise. There is no debate. The market street runs for 400 meters along the Yamanote Line from Okachimachi to Ueno Station. There are hundreds of shops selling all kinds of delicious foods but its the market's past that makes it unique. ▶︎ HISTORY Ameyoko was Tokyo's black market during the US Occupation between 1945 and 1952, a place where you could get expensive and highly regulated goods like sugar. ▶︎ The "Ame" in Ameyoko means CANDY in Japanese. But "ame" also stands for "AMErica" since the market sold so many good broght in by US Servicemen during the occupation. You can still see sun glasses, watches, and Zippo lighters sold on the street to this day. The market has changed a lot over the last 75 years. After being a black market, it became home to Tohoku's seafood in the 1950s since nearby Ueno is the city's gate to the north of the country. In the 1970s and 80s, immigrants from abroad made their homes in the area and there is a growing variety of foods. With more tourists flooding the market, stands are converting from shops to restaurants at night, tables spilling into the streets. And then there is STREET FOOD galore! RAMEN!! When you come to Japan, you know this is a meal not to be missed and Sapporo is home to some of Japan's best ramen restaurants. One place in particular has a long history of serving hungry customers. SAPPORO RAMAE ALLEY or Ganso Sapporo Ramen Yokocho (元祖さっぽろラーメン横丁) in Japanese is located in Sapporo's Susukino entertainment district and provides bowls from 11:00 to past midnight. Miso Ramen is the specialty – the toppings? It can get quite creative! BUTTER CORN CRAB MEAT / LEGS SCALLOPS WOOD EAR MUSHROOMS CHARGRILLED PORK CHASHU STEAKS ... are just a few ramen toppings / extras we will try in this episode. Sapporo Ramen Alley started officially in 1951 and many shops have come and gone through the years. Older shops like AJI NO KANRYU have been serving ramen since 1965 which newer shops that came recently have set up vending machine payment services that allow you to see a photo on the machine before paying. I asked why miso ramen was so popular in Sapporo. One shop owner said it's because a department store featured it at a Hokkaido food festival and it just sort of became a hit! Space is limited in many smaller shops, many are counter only and popular shops usually have a line out the door at peak times. Best to go early and if you have to wait – there is probably a good reason for it. VERY GOOD RAMEN! Japan is the king of SCHOOL LUNCHES and in this episode, I find the answer to why while eating a lot of Japanese school food. ★ Watch the latest episode on Japanese Prison Food: 🤍 School lunches in Japan are world famous for being super healthy and delicious. With extremely low childhood obesity rates, many have turned to Japan for solutions to feed their school aged kids in the cafeteria. But that's part of the answer. Japanese elementary school kids don't even eat in a cafeteria. They eat in the classroom ー with the teacher. It is not possible to eat inside a Japanese elementary school (if you're a tourist) but there is a place in Tokyo where you can try nearly everything. Japanese parents take their preschool kids here to try it as well as older people coming back for a taste of nostalgia. This magical place is called KYUSHOKU TOBAN (給食当番 ) and it's a place where you can not only try some of Japan's regional school foods from all over the country, you can also do it in an elementary school classroom! The 2nd floor is a near exact replication. If you've ever wanted to be an exchange student in Japan or return to 5th grade, here's your chance. Unique Japanese School Lunch MENU Items: ★ AGEPAN: Fried baked bun covered in sugar and kinako (or other toppings like cinnamon or cocoa) ★ SOFTMEN: A special noodle served only in schools. It comes wrapped in plastic and should be dipped in meat sauce or stew. ★ WHALE: This was served in schools a long time ago because whale was more available and much cheaper than beef, chicken or pork. Today, it's no longer served in school but you can try some at izakayas around Tokyo and here at this restaurant. Whale is rarely eaten these days since the price of other fish and meats is significantly cheaper. WHY ARE JAPANESE SCHOOL LUNCHES SO AMAZING? The program is highly regulated with calorie intake and nutritional value set for each scheduled meal. Ingredients are usually local and meals are prepared from scratch. There are no cafeterias in Japanese elementary schools. (They exist in high schools.) Kids eat their lunches in the classroom with the teacher. They learn about nutrition and food responsibility in a hands on setting. Milk is served with every meal. All students eat the same meal. If a student hates an item, they have to stay and finish it. Parents pay monthly for the school lunches, about $40 to $60 a month. The Japanese School Lunch program started in 1954. After World War 2, resources were scarce and the government tried to make sure every child had a balanced meal. Before World War 2, kids brought their own bento. The usual school food back then was the NORIBEN, rice, bonito fish flakes and roasted seaweed on a metal lunch box. Milk was a luxury item and there were few vegetables. Japanese Vending Machines combine technology with convenience. Now, let's take that to the next level – THE VENDING MACHINE RESTAURANT ★ No staff at all ★ It's super clean ★ Retro machines ★ It's fast, cheap and fun! Revisit this place in 2019 here with me ▶︎ 🤍 This is Jihankishokudo 自販機食堂 (Automat Diner) located in Isesaki City, Gunma Prefecture. The owner wanted to make a place where anyone can go to get a meal and have fun! He certainly succeeded. The food vending machines: The soba, udon and ramen vending machine * Chashu-men (with meat) ramen and tenpura udon 330 to 400 yen The toast sandwich vending machine * Anko & Cheese or Italian toast sandwich 250 yen The hot burger vending machine * Cheeseburger, Curry Burger or Tar Tar Meat Sauce Burger 300 yen There's also an old Coca-cola bottle vending machine, a cupnoodle machine, a vending machine with store souvenirs and some gachapon machines. What was most impressive was that the restaurant was super clean. There's no staff so people clean up after themselves recycling and wiping up where they sat and ate. Where is Jihankishokudo? Speed wrapping is part of the culture when shopping but what might surprise you the most is how Japanese UNWRAP! In this episodes we'll visit Ginza's Mitsukoshi to see how they do it. Before that, we visit the fastest mochi shop in Osaka and maybe the world, Kiyasu Sohonten where they can wrap a gift in 13 seconds with ribbon. Before Japan used wrapping paper, they used cloth called Furoshiki. To make gifts special, they still use Furoshiki today and we'll visit Karakasaya in Nigyocho. Osaka's Dotonbori area is known for its amazing street food but after trying it all last time, we headed for a wacky canned food themed restaurant nearby. That's right it's ALL CANS! Japanese cuisine in a can? You got it Only in Japan! In a country famous for it's beautifully prepared, Michelin starred cuisine, how far off course does MR KANSO go? How good (or how bad) can it be? Japan's Bullet-train or Shinkansen is super fast, traveling at speeds of 350km/hr through wide landscapes of rice paddies of north Japan. This is the Tohoku-Hokkaido Shinkansen and in this episode we'll ride from Tokyo Station to Shin-Aomori in regular and GRAN CLASS cars eating 7 gourmet ekiben, Japanese Train Food. Joining me on this adventure is Peter von Gomm and we'll be eating our way across Tohoku. ★ What is an EKIBEN? It's a Bento (Japanese gourmet boxed lunch) sold at express train station to be eaten on the Shinkansen or special rapid trains. Japanese Macaque aka SNOW MONKEY bathing at the Jigokudani Hot Spring waters of Nagano is one of Japan's most iconic sights. But there is more to this story than just monkeys in a hot tub. This park has a special mission: to protect the resident monkeys and care for them through the hard winter. Staff have been doing that since the park opened in 1964, but it was in 1970 when LIFE Magazine put the Japanese Snow Monkey on the front cover that curiosity for the Japanese Macaque really grew. Despite being in a remote area of Japan, it gets many visitors from around the world. The Japanese Macaque’s life here is dedicated to a 4 season cycle. SPRING: babies are born, monkeys start shedding their winter coats SUMMER: a lot of activity, playing in the mountain forests FALL: monkeys start mating, bathing food and growing out their coats for winter. Female monkey pregnancy lasts for 6 months. If babies were born in the winter, they wouldn't survive so the cycle of life to give birth only in spring is essential for the whole troupes survival here in the mountainous north. This is the only place you’ll find Japanese monkeys bathing, soaking. So you want to live to be 100? The answers to living a long and happy life may come from Japan which has the longest average life expectancy in the world (83.84 years) and where 2 million people are over the age of 90. Believe it or not, 6 of the top 10 oldest people alive are from Japan including Nabi Tajima of Kagoshima who is 117 years old and the last human alive born in the 19th century! How did so many Japanese get to live so long? What are some of the things Japanese do right? In this episode, John travels to Tottori Prefecture to the area around Mt Daisen where his friend Tomiko-san gives him some advice about how to live a long life and how she's lived to be 106 years old and still working on the farm! Her secret? Tofu. She started to make tofu in the 1950s when doctors said residents had to reduce high blood pressure. She made her own tofu for her family and her diet combined with good habits including staying busy and working hard have strengthened her mind and body. She still walks and writes tanka poetry. I also ask Mr. Seiichi, my 97 year old Japanese neighbor his secret and hear from a Shinto priest about his thoughts and personal experiences with living a very long and happy life in Japan. UDON!! A hot bowl of noddles in Tokyo always hits the spot on a cold day. Instead of ramen, let's go for UDON, which is both healthier (don't eat too much tempura!) and more fun to eat. In this episode, John travels from Tokyo to Kagawa Prefecture and the Sakuki region for handmade bowls of udon noodles and soup. Let's explore the kitchen, watch them cook and serve like pros and of course EAT, EAT and EAT! What makes UDON better than RAMEN? ★ It's healthier. The soup is not as oily. ★ The noodles are thicker. ★ It's cheaper! ★ Tempura!! Pick your side dishes. ★ It tastes great cold (bukkake udon) perfect for summer. ★ Customize it any way you like in the self-serve style. How to Make Udon (Sanuki Style): INGREDIENTS  Wheat Flour / 500g  Salt / 15g  Water / 240cc or 1 cup (makes 3-4 Servings) - Mix and knead the dough. - Make a ball and roll it out and fold it several time. - Roll it to about a 4mm thickness. - Cut into strips of the same thinckness. It will expand in water. - Flour the noodles and add to boiling water then lower heat for 10-15 minutes. Stir the noodles. - Add dashi (fish stock stock), ginger and negi and your favorite tempura! Japan has some amazing prison food, which should be no surprise. Inmates are served healthy, nutritious meals of grilled fish, salads, rice and soup - which are actually healthier than most school lunches around the world! Would you like to try what prisoners eat? There's a prison in Hokkaido that serves authentic meals to the public and that is where I went Abashiri. Abashiri is in the very north of Hokkaido and is famous for its prison. Their "Bangaichi Shokudo Diner" is the only restaurant that serves authentic prison food in Japan, the ingredients the same as the penitentiary nearby. The meals will probably surprise you! Prison Food Menu: SET A: Pacific Saury, 2 salads, barley rice, miso soup (780 yen / $7.00) SET B: Atka Mackerel, 2 salads, barley rice, miso soup (820 yen / $7.50) It's called the "secret meal" because Japanese Prisons are very restrictive with access to the outside world. However, Abashiri is dfferent and they've opened up prison life to the public and it's worth a visit. We also get a tour of today's prison cells in Japan. They have tatami mats, futons, TV, toilet and window. There are private cells and cells for 6 or more inmates. Japanese inmates typically eat their meals in their cells. The Japanese prison life is regimented, the schedule the same everyday. Wake up at 6:40am and lights out at 9:00pm. Meal time is three times a day for 20 minutes. Where is Abashiri, Japan? Yes, Japan has a desert compete with camels, sane dunes and ... a world class art museum with sand sculptures! This time, John heads to this barren wasteland devoid of vending machines for a taste of the Sahara – in Japan. 100,000 years ago, this area turned into a desert because sand flew in from the sea accumulating over many millennia. The result is a 16 km by 2 km wide desert that was growing until about 50 years ago when the city residents decided enough was enough. MORE HISTORY: After World War 2, a barricade was built to prevent tsunami and residents planted trees to stop the desertification. Now the desert area is shrinking and because of its uniqueness and lure for domestic and international tourism, the residents no longer want to stop it. In fact, 6000 volunteers in 2015 come out every few months to put pull out the vegetation all in the name of ecology! History and problems aside, this place rocks! 50 meter high sand dunes overlook the beautiful Sea of Japan to the horizon. THE SAND MUSEUM: I didn't just come here for the sand dunes. The SAND MUSEUM is a world class art museum produced by Chaen Katsuhiko who tells us his story and the reason why the Tottori Sand Dunes are so special in the world today. Indeed, it's become a center of sand sculpting with a massive indoor enclosure housing dozens of sand sculpture displays created by guest artists from around the world and a place of pride for the city to Tottori. Every year THE SAND MUSEUM has a major theme with new designs, reusing the sand to make a new world for visitors. This year's theme is South America and it's history with a special emphasis on Rio DeJanaro which hosted the 2016 Summer Olympic Games. FROM OSAKA: There are buses and trains but flying is still the fastest and easiest. Daily flights from Itami Airport and Kansai. Fukuoka is the capitol of TONKOTSU RAMEN and man, do they make it good! Tonkotsu made from pork bone based soup is the ramen of choice here and this time, we'll go on a ramen eating binge from the famous Yatai in Nakasu and Ramen Stadium to the cheapest ramen in the city in Tenjin! We'll also get an inside look at RAMEN UNARI's special GYOKAI TONKOTSU RAMEN which is lighter bodied than the usual tonkotsu served in the city and absolutely amazing! Most were Japanese tourists or from abroad. I went to two yatai and the service was not good each time. At the last one where I filmed, the staff told me "You can eat here if you won't stay long." I never had any intention to stay long but I got the feeling they don't have much respect for customers because almost none of them are repeaters, regular customers. I cannot recommend this area, but I hope you have a better experience than me. Try ordering something different than ramen at the yatai. "A5" Graded Wagyu Beef is considered the best in Japan ー but what does that score really mean? We'll go inside to talk to the Wagyu Beef inspectors on the job at the Yonezawa Meat Processing Center to learn how they do it using the BMS (Beef Marbling Standard) and Beef Yield. After inspection and grading, we'll see them cut and distribute the beef to restaurants and supermarkets and try some of the A5 Wagyu special dishes famous in Yonezawa like its Gyu Nabe also known as Sukiyaki. Japanese Wagyu Beef is quite different from other beef around the world and within Japan, there are so many regional brands. If you think day old sushi is bad, try YEAR OLD SUSHI! That's exactly what Funazushi is, a local delicacy still made in the traditional way, the recipe dating back over 1000 years. With Japanese, it's notoriously sour, totally evil tasting and the smell ... ? Well, that's what I'm here to find out. In this episode, I will try to conquer my fears and eat some very old fermented sushi to see if this famous food lives up to its reputation as being Japan's grossest. Funazushi is part of the Narezushi category of sushi, the other category being Hayazushi. Let me explain. Hayazushi is the sushi we know today, a piece of raw fish on top of vinegar rice with a little wasabi. Hayazushi only came about in the early 1800s. Narezushi is the original sushi with origins going back a millennium. It's fermented in rice for a year, compressed with a heavy stone so that all air is kept out. Shiga prefecture's Funazushi is made in the original method used many generations ago which means ー this is ancient food! If you want to try what people ate 1,000 year ago, THIS IS IT! Hokkaido in the winter is cold and if you go to the very north coast along the Sea of Okhotsk, you'll find Abashiri (網走市) 260km / 165mi north of Sapporo. In February, it's the high season for tourists because this is where you go to see a lot of snow. ice drifts and eat a lot of amazing seafood. During the city's annual Drift Ice Festival, you'll also find the amazing Okhotsk Yatai Mura Food Market (オホーツク屋台村) where local resident come out to celebrate the cold long nights together with good food from the Sea of Okhotsk and copious amounts of beer and atsukan (hot Japanese sake). This is an excellent experience of a lively night market in Hokkaido and worth a stop and bite. Japanese Highway Service Areas or Rest Stops are quite amazing and in this episode we’ll look at one of them that has a food challenge! Tomobe SA in Ibaraki Prefecture has a restaurant that has taken the highest mountain in the area and turned it into a dish. Mount Tsukuba is 877 meters high, but as food, it looks steeper and more intimidating. 16 long cuts of grilled pork cutlets smothered in a savory sauce on a bed of shredded cabbage and rice weighing more than 1kg (2.2 lbs). It may not be as big as some food challenges like the 2.2kg (5 lbs) Monster Gyoza in failed to eat in 2014, but it is still an interesting dish. It costs 1700 Yen ($15) for the set with miso soup and some pickles. Eaters can simply order it from a vending machine and it takes about 5-7 minutes to prepare.
