How Is Margarine Made? (And Why I Stopped Eating It)

🟢 Margarine to Butter Conversion in Recipe: 🤍 Setting aside that butter can be fine in moderation for many people, but what's wrong with regular margarine? Isn't margarine a healthy alternative to butter? How Is Margarine Manufactured and Here Is Why You Should Really Avoid Using Margarine. Margarine is made of vegetable oils. Although that may sound well and good, unfortunately, our bodies don't recognize industrial vegetable oils as food. Vegetable oils like canola, corn, soybeans, and safflower oils are highly processed by heating and then further processing. This processing may involve using de-waxing, petroleum-solvents, refining, de-gumming, deodorization, and there are several other unnatural-sounding terms. I'm quite sure that you could never replicate that in your own kitchen. Less than a hundred years ago, human consumption of processed vegetable oils was practically non-existent. That is because we just didn't have the technology needed to process and extract these oils. But once we figured out how to extract these oils from plants on an industrial scale, the vegetable oil consumption skyrocketed. And that will lead nicely to my next point. As most vegetable oils are already highly processed, they need to be treated and processed even further to make margarine. As you know, vegetable oils are not solid like butter is. To make vegetable oils solid for use in margarine, they will have to go through a process known as hydrogenation. This means that oils are heated on high pressure and then treated with hydrogen gas and a metal catalyst. And all that heavy processing will produce trans fats. Food companies use this process to increase the product's shelf life, make margarine solid on room temperature, and save costs. However, our bodies tend to find these altered molecules very challenging to process. Margarine, particularly stick margarine, contains a lot of these trans fats. These fats are often linked to various health problems. Also, according to the Food and Drug Association, these man-made fats are proven to be unsafe. Also, unlike traditional butter, margarine contains fewer amounts of essential vitamins. While it is true that butter is high in fat and calories, it naturally contains several essential nutrients, including vitamins A and E. Some margarine companies are incorporating these vitamins into their products through synthetic vitamins. However, these synthetic or other unnatural nutrients can actually cause more harm than good to our bodies. Studies have also shown that these synthetic vitamins are mostly ineffective and give you little or no benefit. And like the trans fats, and other unnatural additives are not enough, margarine also contains high levels of omega 6. When consumed in large amounts, it may lead to many health complications. If you are worried about eating too many omega-6 fats, avoid eating margarine that contains sunflower, corn, or soybean oil, which are exceptionally high in omega 6. And unfortunately, that is not all. Since margarine uses vegetable oil as a base ingredient, various researchers have found that most of these vegetable-derived oils contain GMOs, also known as genetically modified organisms. So, before the processing of margarine can even start, the crops are already tampered with. And lastly, aside from the synthetic and other unnatural forms of nutrients, some margarine manufacturers also use BHT or Butylated Hydroxytoluene to increase the product's shelf life. Although it is generally recognized as safe, it is still a lab-made product and not natural. Ok, but what about butter? As there could be many bad things said about butter, the manufacturing process of butter is considered to be quite simple. It includes the pasteurization of cow's milk, skimming, and churning of the cream, until the butter is readily formed. The overall process is very simple, and you can even do these steps yourself at home. On the other hand, the process of making margarine is so much more complicated. There is no way you could make margarine at home unless you set up a massive manufacturing-plant and purchase a lot of scary-sounding chemicals. Luckily it's not that hard to stop eating margarine. However, you could run into problems if you are an avid baker, as most baking recipes require margarine in their list of ingredients. Today I'll be making some margarine from olive oil, however, it is going to be terrible and inedible. It is all about the journey though...right? To make it, I'll be hydrogenating olive oil. Margarine is normally partially hydrogenated, but I am going to fully hydrogenate things. So, it's going to actually be closer to "shortening". I was informed by some people that my way of making the margarine was terrible. I am probably going to try it again sometime, where I use a whisk (and froth it properly) and I'll do a partial hydrogenation. And there was one thing in particular that I noticed on almost everything around: Hydrogenated oils. You know, I'm sure you've seen it - 5 Studies That Show How Hydrogenated Oils Destroy Your Body (Margarine Especially) What Research Has Found On Them 1. Increases LDL cholesterol In the first study, people over aged 50 were given one of four diets for around 35 days - partially hydrogenated soybean oil, soybean oil, palm oil, or canola oil. Palm and partially hydrogenated soybean oil showed an increase in LDL cholesterol. 2. Causes inflammation and hardening of the arterial walls A second study found that partially hydrogenated vegetable oils cause inflammation and calcification of arterial walls: known risk factors for coronary heart disease. Aka it's bad for your heart. 3. Colorectal cancer risk A third study done in the southern USA wanted to see if trans-fatty acids were linked to colorectal cancer risk at all. And here's what they found: are hydrogenated oils good or bad for you cancer The higher the consumptions of trans fatty acids, the higher the risk of colorectal cancer in white people but not African Americans. 4. Cardiovascular disease In another study, male rats were fed a standard chow or high-fat diet containing different TFA levels ranging from less than 1%, less than 2%, and greater than 2% of total fat in fresh soybean oil, oxidized soybean oil, and margarine, respectively, for 4 weeks. And here's what happened (poor lil suckers): Triglycerides significantly increased Total cholesterol went up LDL (bad) cholesterol went up The worst effect came from margarine, which had the highest levels of trans fatty acids - and the margarine rat group had DOUBLE the level of trans fatty acids (and thus saw a correlated increase in heart disease risk. 5. For every 2% increase in trans-fatty acids consumption, there's a 20-32% increased risk of heart attack or death. A final meta-analysis of multiple studies indicated 24, 20, 27 and 32% higher risk of myocardial infarction - heart attack - or cardiac-related deaths for every 2% energy of TFA consumption. So let's put that in perspective. For every 2% of your calories coming from these trans fatty acids, the risk of DYING goes up between 24-32%. Yes, dying. Your Tiny Habit For Today Hehe... this one is easy. Eat hydrogenated oils, and you will DIE!! Just kidding. Actually, not really. But in all seriousness, it can seem like it's pretty tough to avoid these because they seem ever-present. So where are they, and how do you avoid them? First, these are almost exclusively found in boxed and packaged foods. They're extremely common on shelf-foods because it helps the oils become more stable and thus preserve better. The easiest rule is the simplest - just eat real food, as best you can. That means cooking whatever you can, eating fresh produce whenever you can, and avoiding anything in a box as best you can. If you have to buy boxed or canned food, read the ingredients because there's almost always something added (sugar, fat, salt). Where Have You Spotted Hydrogenated Oils Hiding? Morgen Margarine-reclame met Michiel Beishuizen (1983 Unilever) De smaak en smeerbaarheid van échte boter werden zo goed benaderd dat uit geen enkele van de proeven en tests een verschil bleek. Dus bracht men de margarine in Australië op de markt en bereikte men op 5 jaar tijd een marktaandeel van 30 %. Unilever had bijgevolg snel grootste plannen klaar voor de Nederlandse en Duitse markt. Al snel deed het fabeltje de ronde dat het om illegaal geïmporteerde Nieuw-Zeelandse boter zou gaan. Unilever buitte dit element uit om de lancering kracht bij te zetten. In juli 1982 kwamen de eerste berichten in de kranten : Unilever was erin geslaagd kunstboter te maken die niet van echte boter te onderscheiden was en nog veel goedkoper was ook. De introductie in september startte met spots voor en na het NOS-journaal. Uit Sidney praatte M. Beishuizen over “Het ware verhaal van bijzondere margarine die naar boter smaakte !”. Naast tv-spots kwam er persvoorlichting en werden er staaltjes uitgedeeld. Het werkte, want na drie weken werd reeds een merkbekendheid van 60 % gemeten en de vraag bleek zo groot dat er een tekort ontstond. Dus laste men een “nood”-reclamespotje in waarin men vroeg om geduld. Dat was koren op de molen van de critici en de media. Ook de vrij hoge prijs kwam hierbij ter sprake (zo’n 70 % duurder dan margarine). De televisie (Vara) mengde zich in de ontstane discussie : “Morgen” kreeg de Ergenis-trofee en consumentenorganisaties kraakten de hogere prijs. Toen de EEG boter op de markt bracht die slechts een beetje duurder was dan deze margarine, was het gevolg pijnlijk. Het marktaandeel slinkte zienderogen en “Morgen” verdween van de markt. Ondanks een kwalitatief product had Unilever zijn kansen in de markt verkeken door bewust foutieve informatie over zijn product te laten bestaan. Zo kregen ze heel wat tegenwind tot in de pers toe. Opinieleiders zoals de media of consumentenorganisaties kunnen immers heel wat teweegbrengen. Denk maar aan de verslagen van testpiloten voor nieuwe wagens. Tip. Zorg ervoor dat u geen foutieve informatie over uw product de wereld instuurt. Uw imago bijsturen nadat het in de pers negatief werd beschreven is immers bijzonder moeilijk. Had Unilever correcter gecommuniceerd (dit is géén boter), dan zou de kans ook kleiner geweest zijn dat de consument moeilijk zou doen over de hogere prijs. Dit voorbeeld maakt duidelijk dat men de consument niet zomaar wat kan voorhouden.

Butter and margarine are certainly very similar products—they often look alike and you can often use them interchangeably—but the differences that exist between them are critical. What is butter? Butter is a dairy product made from milk or cream. It’s created when cream is vigorously churned, which causes its solids (butterfat) and liquids (buttermilk) to separate, and ultimately results in the firm product we all know and love. Whether it’s salted or unsalted, the flavor of good butter is second to none, and because of its basic ingredients and straightforward processing, it can easily be made at home. Butter must be at least 80% fat to be sold commercially, and the remaining percentage consists of water and milk proteins. Greift ihr am liebsten zu klassischer Butter, zu Margarine, zu Mischprodukten mit Öl oder Joghurt oder seid ihr inzwischen auf vegane Butter umgestiegen? Ökochecker Tobias Koch hat recherchiert: Welche Butter ist am besten für unsere Gesundheit, für die Umwelt und welche schmeckt am besten? GROSSE AUSWAHL IM BUTTERREGAL Die Butterregale in Supermärkten haben schon längst nicht mehr „nur“ Butter im Angebot. Es gibt eine große Auswahl an Streichprodukten, die alle anders zusammengesetzt sind. Allein bei der klassischen Butter kann man zwischen bio, konventionell oder Heumilchbutter wählen. Heumilchbutter wird aus Milch hergestellt, bei der sich die Kühe zu einem großen Teil des Jahres auf einer Weide aufhalten und Gras anstatt Kraftfutter fressen. Bei Heumilch darf der Getreideanteil des Futters maximal 15 Prozent sein. Dadurch sieht Heumilchbutter von Natur aus gelber aus. Denn die Farbe der Butter wird durch das Futter bestimmt: Je mehr Gras eine Kuh frisst, desto gelber am Ende die Butter. Aber Achtung: Hersteller geben deshalb manchmal den Farbstoff Carotin in die Butter. Der steht dann auf der Zutatenliste. Neben der klassischen Butter gibt es auch noch Margarine, die größtenteils aus pflanzlichen Fetten besteht. Laut Gesetz darf Margarine außerdem bis zu drei Prozent tierische Fette enthalten. Neben Butter und Margarine findet man im Supermarkt inzwischen auch Mischprodukte aus einem Teil Butter und einem anderen Teil Pflanzenöl. Wer sich pflanzlich ernährt und nicht so gerne Margarine isst, hat außerdem noch die Möglichkeit, sich für die vegane Butter zu entscheiden. Diese basiert meist aus Kokosfett, Shea Butter oder Hafer. WIE BUTTER HERGESTELLT WIRD Butter wird aus Molkenrahm hergestellt, welcher bei der Herstellung von Käse übrigbleibt. Dieser wird so lange geschlagen, bis sich die flüssigen und festen Bestandteile in der Molke trennen. Danach hat man dann Buttermilch und Butterkügelchen. Die Kügelchen werden anschließend zu cremiger Butter gerührt. WELCHES BUTTERPRODUKT IST AM GESÜNDESTEN Bei der Frage, wie gesund Streichfett ist, schaut man sich den Prozentanteil der gesättigten Fettsäuren an. Das sind die ungesunden Fette. Die Butter hat in etwa 66 Prozent gesättigte Fettsäuren, Margarine hat im Vergleich nur etwa 15. Im Gegenzug enthält die Margarine mehr von den gesunden Fetten, ungesättigte Fettsäuren, und schlägt die Butter somit im Gesundheitscheck. Ein Mischprodukt aus Butter und Rapsöl wäre demnach auch eine bessere Wahl als reine Butter. Bei den veganen Butteralternativen ist oft viel Kokosfett enthalten, welches bis zu 92 Prozent gesättigte Fettsäuren enthält. KLIMABILANZ DER PRODUKTE Wusstest du, dass man für ein Päckchen Butter (250 Gramm) in etwa 5 Liter Kuhmilch braucht? Kühe produzieren klimaschädliche Gase wie Methan und Lachgas, was ein deutlicher Minuspunkt für die Butter in Sachen Ökobilanz ist. Zudem entstehen Emissionen durch die Futtermittelherstellung der Kühe, weshalb Heumilchbutter aus ökologischer Sicht die etwas bessere Alternative ist. Durch die Nutzung von Heu als Futtermittel wird die Biodiversität am Standort geschützt. Auf ein Kilogramm Butter kommen etwa 9 kg CO2-Äquivalente. Das ist im Vergleich zur Margarine sehr viel: Die Margarine hat pro Kilogramm einen CO2-Fußabdruck von durchschnittlich 2-3 kg. Die Bio-Butter schneidet bei der CO2-Bilanz sogar noch schlechter ab, weil Bio-Kühe weniger effizient Milch geben und länger leben. Dort ergeben sich allerdings ökologische Vorteile durch den Verzicht auf Pestizide. FAZIT Wer pflanzliche Alternativen oder Mischprodukte wählt, schneidet in Sachen CO2-Bilanz deutlich besser ab als bei reiner Butter. Für die Tiere und die Biodiversität lohnt es sich, zur Bio-Butter zu greifen. “I can’t believe it’s not butter”… well I can’t believe that they can’t tell the difference! I’m gonna be ranking these 5 types of butters today to see which ones are the most nutritious. The best butter will be free of toxins and highly nutritious—full of vitamins and minerals. Margarine - I Can’t Believe It’s Not Butter As the name implies it’s not even butter. So why is it here? Because a lot of people don’t really understand the difference, and when you ask “can you pass me the butter?” they will pass you this. So if it’s not butter, what is it? It’s got a few fun synthetic additives in it; but it’s mostly soybean oil, palm oil, and canola oil The problem is with the soybean and canola oils. During the manufacturing process, these oils are overheated and put under extreme pressure which causes them to oxide and become rancid (aka spoiled and bitter). Also soybean oil contains high-levels of phytoestrogens which in some ways act similarly to natural estrogen, but in other ways can wreak havoc on the hormonal balance of both men and women—causing numerous health problems, including (but not limited to) reproductive and brain disorders. Light butter - Land o Lakes What I have here is butter with canola oil. Like I said a moment ago, the high-heat, high-pressure production of canola oil causes it to become rancid. Rancid oils contain what are called free-radicals, which are molecules that contain an unstable number of electrons. When these are in your body, they essentially try to steal electrons from the heathy atoms that make up your cells; and over time, that can cause a host of degenerative disease. But what can you expect? They’re free… you get what you pay for. You’ll see butter companies also add other oils to their butter instead of canola (including healthy oils like olive), but 99% of the time these are low-quality versions that will cause the same free-radical damage to you. Standard Butter - Hy-Vee Who would’ve thought that we’d have to get half-way through a list of “butters” to actually get to butter? But here we are: for butter or worse! Did you get it? Standard butter is a good source of vitamin A and many other nutrients. And it’s mostly made of short and medium chain fatty acids which are used by the body for quick energy and promote healthy weight-loss. But it’s not all sunshine and roses. Standard butter is made from pasteurized milk which destroys the delicate enzymes and denatures the proteins. Butter is mostly comprised of butterfat, but it does have some of the other milk components. So you will be getting some of the denatured milk protein which is difficult to digest and can be associated with the development of milk allergies. Cultured butter - Vermont Creamery Cultured butter is the way butter was made for thousands of years. It’s a slower process that results in a higher percent of butterfat and a more complex flavor. It’s easier to digest than standard butter (also known as sweet cream butter), because the culturing process breaks down the denatured proteins and sugar in the milk. So it’s kinda like buying pre-digested butter. And now that I’ve said that, I realize it sounds disgusting. But it’s actually very tasty. Pastured butter - Kerrygold Pastured butter is made from milk produced by grass-fed cows. Large, conventional dairy farms feed their cows a mixture of different grains which they can survive on, but is not an optimal or natural diet for them. Pasture raised (aka grass-fed) cows produce the most nutritious and best tasting milk and therefore the best butter. Pastured butter contains high levels of nutrients and is the only butter with significant levels of vitamin K2—which is necessary for the proper utilization of vitamins A & D, and is super important for overall great health, including a strong immune system and bones. Soy is not a magical food, as it is deemed to be. It never was one. But nonetheless, it’s not that bad a food source, the way many stark opponents of soy claim it to be. The major support and in most cases overhyped claims about soy and its health benefits, come from the West, where the soy industry is among the biggest and the most profitable in the world. What I found in my research about soy was a confusion between anecdotal evidences and hardcore research. A mix of stories and facts, with a lot of industry influenced research, which was mostly biased. The real challenge was to unearth the facts, from an independent stand point. Though its human to get influenced, and I may surely have been at certain places, but my endeavour has been to be true to the facts.
