Lechon Kawali Recipe Details: 🤍 Ingredients 2 lbs. pork belly 1 piece Knorr pork cube 5 pieces dried bay leaves 1 tablespoon whole peppercorn ¼ cup Knorr Liquid Seasoning 8 to 10 cups water 4 cups cooking oil Instructions Boil water in a cooking pot. Add whole peppercorn, bay leaves, and Knorr Pork Cube. Stir. Add the pork belly. Cover the pot and continue to boil in medium heat for 45 minutes. You can add more water if needed. Remove the pork belly from the cooking pot and place in a clean plate. Let it cool down. Note: you can keep the pork stock for later use. This can be consumed to cook pork based soups and stews. Rub Knorr liquid seasoning all over the boiled pork belly. Let it stay for 30 minutes. Heat oil in a deep cooking pot. Once the oil gets hot enough (300F), gently put the pork belly into the pot. Deep-fry the pork in medium heat for 7 to 10 minutes. Note: make sure to partially cover the pot or use a splatter screen to protect yourself from the oil. Turn the pork belly over. Continue to fry the opposite side for 8 minutes or until the skin gets crisp and brown. Remove the crispy deep fried pork belly (lechon kawali) from the cooking pot. Arrange in a plate with wire rack or paper towel. Let it cool down. Slice the pork into serving pieces. Transfer to a serving plate. Serve with your favorite sauce. Share and enjoy!

LECHON KAWALI is a deep-fried pork belly which is similar to Bagnet an Ilocos dish. I believe the difference between these two is Lechon Kawali the skin is crunchy and the meat is chewy while Bagnet both skin and meat are crispy. Both were boiled to make it more crispy, however, I believe Bagnet is boiled using pig’s fat and Lechon Kawali is boiled using spices. Best eaten with a dipping sauce such as “lechon sauce” which is made with pork liver, toyomansi (soy sauce & kalamansi) or a spiced vinegar dipped. Ingredients: 8 cups of water or enough to submerge the pork belly 1 whole garlic 1 medium-sized onion 2 pcs dried bay leaves 1 & 1/2 tsp coarse salt to taste 1 tsp peppercorn 850g pork belly Enjoy watching & happy cooking! Let me show you on how we make it crispier and tastier. (Dahil naka 1000 subscriber na tayo, nagluto ako ng putahe na pinakapaborito ko, ang Lechon Kawali. Hindi lang ito basta basta, espesyal ang pagkaluto dahil sa kanyang lutong at sarap.) Ingredients: 2 tbsp fish sauce 8 cloves garlic 1 medium onion 1 tbsp black pepper 2 pcs bay leaves 1/4 cup cooking oil 3 liters water Palambutin muna ang baboy ng mga 50 minutes, at bago i-prito, make sure malamig na ng baboy. Prituhin ng dalawang beses, ang una, saktong maglight brown lang muna. How to Make Lechon Kawali ✅Ingredients 4 pounds whole pork belly 1 head garlic, pounded 2 tablespoons salt 1 tablespoon peppercorns 2 bay leaves water canola oil ✅Instructions In a deep pot over medium heat, combine pork belly, garlic, salt, peppercorns, bay leaves, and enough water to cover. Bring to a boil, skimming scum that floats on top. Lower heat, cover, and continue to cook for about 1 to 1 1/2 hours or until meat is fork-tender but not falling apart. Drain pork, discarding liquid. Wipe dry, removing any stray aromatics. Allow to cool to touch and pat dry with paper towels. Score the skin using the tines of a fork. Brush the skin with vinegar. Season the pork all over with salt and layer the skin with a thin film of salt. Place on a wire rack and refrigerate overnight to completely cool and dry. Remove from the refrigerator and scrape off the salt. In a deep, heavy-bottomed pot, heat enough oil to completely cover the meat to about 350 F to 375 F. Carefully place the meat in the hot oil and fry, turning as needed, until golden and skin is crisp and puffed. Remove meat from pot and drain on a wire rack set over a baking sheet. Let rest for about 5 minutes and then cut into serving pieces. Serve with a choice of dipping sauce. Thanks for watching!
