Learn how to knead dough by hand for pizza, bread etc..., with my 3 steps process. Kneading dough can be done in a mixer, with a dough hook, or by hand. After you have mixed wet and dry ingredients together, you will have a shaggy mass. Transfer this dough to a lightly floured surface. A good dough should be slightly elastic, not dry but slightly moist and almost sticky. Good dough kneading technique takes 3 steps that you will repeat over and over: Fold, Push and Turn. 1. Lift the dough and fold the dough over onto itself. 2. Push down and forward with the palms and heels of your hands to the center of the mass. 3. Give it a quarter turn and always turn to the same side. Continue kneading and turning. If the dough sticks, just scrape it up, dust the counter with flour and continue. The well-kneaded dough should be smooth and elastic. To test dough made from mostly white bread flour, pick up the dough and stretch it back. Look at the surface. It should be smooth. There also should be some resistance from the gluten when you pull on the dough. The same test applies to whole-grain flours. Different types of dough require different kneading methods. A low hydration dough can be kneaded by pressing it into the work surface and folding it at the same time. This method is effective and convenient. A high hydration dough would not be possible to knead in the regular way. This is a more simplified and less complicated (believe it or not) version. With that said, I know this is still something that seems pretty time consuming, but you have to remember that the majority of the time is completely inactive, so it's really not. Begin Autolyse 3:00 P.M. Mix your dough, optionally use rhubaud method. Thank you to Trevor Jay Wilson who taught me that. 3:15 Bulk fermentation begins, peforming 2 folds spaced 15 minutes apart, and then one last fold spaced by 30 minuters after the 2nd fold. Totaling at 3 folds. Allow dough to rest for remainder of bulk fermentation. 7:00P.M. Preshape your loaves. 7:25 P.M. Shape your loaves and place them in their proofing baskets. Place them in plastic bags to prevent drying out, and proof them overnight in the fridge for 14-15 hours. (the next day)9:00 A.M. Preheat oven with your dutch ovens in their from cold, to get them super hot, for one hour. 10:00 A.M. Optionally score, and bake your loaves. Cool them on wire racks.

#shorts #focaccia #focacciarecipe How to make easy no knead focaccia dough recipe (pizza dough with rosemary and olive oil lol) This is the pan i use, but a cast iron pan or baking sheet work great too! 🤍 It all depends on if you like your focaccia thin like me (use a wider pan) or tall (use a smaller pan) Recipe: 3.25c bread flour 1tbs salt (15g) 1tsp dry yeast (4g) 1.5c water (325g) 2tbs fresh chopped rosemary 3 tbs olive oil (bottom of the pan) 1-2tbs olive oil (for the top of the dough) Steps: - Combine the first 5 ingredients and let it rise outside the fridge for 12-18 hours (even longer is fine too!) - In a tray (mine was 10x14) or cast iron (12 inch) pour in 3tbs olive oil and coat both sides of the bread. - Stretch your dough out to fit the pan and let it rise for 1-2hours (even longer if you want tall focaccia, i like mine thin and it makes for better sandwiches) - Give it one last finger dimpling to pop any air bubbles. Lift your dough up if you see air trapped underneath too! - Bake at 550 for 12-16 minutes. You can also cook it at 350 for 20-30 minutes as well. - Let cool and feast with Olive oil, garlic, balsamic and parmesan or honey truffle ricotta (those are my two favorite dips!) You will make dough today. You will bake bread tomorrow. Even on your very first try, it will be great. No-knead bread has been around for a long time, but because really popular in 2007 when Mark Bittman published Jim Lahey's recipe in the New York Times. The technique uses two distinct tricks to make bread-baking easier and better at home. The no-knead process involves mixing together the ingredients for a high-hydration dough, then letting them sit overnight, allowing the yeast and enzymes to do the work of kneading for you. The trick of baking it within a dutch oven is the more interesting part to me. It traps steam, allowing you to replicate the effects of a commercial bakery oven, giving you a thicker, crisper crust and better oven spring for superior hole structure. It's also dead simple to do. 🤍 PLEASE READ! Here is the recipe to make soft no knead bread . It requires no kneading. It uses no special ingredients, equipment or techniques. And it takes very little effort. Ingredients 1Tsp Active dried yeast 1Tablespoon Sugar 525g flour, here i took 150 gms (1 cup) whole wheat flour and 375 gms(2 and half cups) All purpose flour.You can adjust the proportion as you need.100 percent whole wheat flour bread will not be very soft as it contain less gluten. plus extra for dusting... 400 ml warm water (250 ml for activating yeast and 150 extra) 1 and half tsp sea salt 1 tbsp oil Method 1.Activate the dried yeast. Pour 250ml warm water into a bowl and sprinkle over the yeast and sugar. Stir well until sugar and yeast get dissolved. 2. Measure the flour. 3.Combine the wet and dry ingredients. 4.Wrap it with a plastic film and keep it aside in a warm environment for the first proofing. After six hours,degas the fermented dough and then pull and stretch the dough...and fold it over a few times to give it some shape. 5. Transfer it into a baking vessel. 6. Cover the pan with cling film Make the dough rest for the second proofing. Approximately after 1 hour the dough will get doubled in size. Now time for Baking. 7.Bake at 400 degree F for 35-40 minutes. You will get a beautifully caramelized golden brown crusted loaf of bread.I like soft crust....So i Smeared it with lil butter to make the crust more soft. The inside of the bread will be very soft ,airy and so moistened.I am sure your whole family would love this bread. At that point, cover with plastic wrap or a kitchen towel and let ferment for at least 12 hours. I’d recommend making the dough in the evening then when you wake up, the dough is fully fermented and nearly ready to bake - After fermentation, you should notice that the dough has doubled in size and is covered with lots of bubbles all over the surface - Using wet hands gently separate the dough from the edges of the bowl then grab about a quarter of the dough, pull it up, and fold it back into the center - Rotate the bowl and continue like this several more times until all the dough has been separated from the bowl and folded into the center, that’s it, don’t knead the dough as you would with other breads - When you’re done folding, pour the dough into the center of a large piece of parchment paper - Next place a bowl large enough to completely cover the dough and leave about an inch of extra space all around it over the dough - Let this sit at room temperature for another 2 hours - After about 1 hour of resting, place a dutch oven with a lid into a 450-degree oven to preheat - When the dough has doubled in size, carefully remove the bowl - Lightly dust the top with flour then you can use a pastry brush to brush away the excess - Use a sharp knife to cut a slit down the center of the loaf, this will help the steam to escape while it bakes - Carefully pick up the parchment paper with the loaf still on it and transfer the whole thing to your now smoking hot dutch oven - Place the lid on top then return to the oven for 30 minutes - After 30 minutes remove the lid and you’ll notice a nearly fully formed loaf of bread - Now return to the oven to get nicely browned for about 20 minutes - When it’s done you can use the overhanging parchment paper to easily remove the bread from the pan - The only minor downside to using parchment paper is that it does result in some little dents around the edges - If that really bothers you, you can remove the payment paper before baking, just make sure you lightly flour the bottom of the dough first - If you’ve got the time, this is seriously one of the best and easiest bread recipes I’ve ever had so you should give it a try! ➡️ If you recreate this homemade bread recipe please link and mention us in your video so we can find you and give you a shout-out!
