Made with beef, potatoes, carrots, mushrooms, and curry roux, this savory and hearty Japanese Beef Curry makes for a fabulous introduction to new curry eaters. Adapted to Japanese tastes, it’s mild and sweet with a stew-like consistency. Even children enjoy it thoroughly! You have to give this easy recipe a try. Although most people use a boxed instant roux to make curry these days, in this authentic recipe, I’m gonna show you how to make the best Japanese Curry from scratch. It’s a bit of a long video but the techniques I’m going to show you will help you to make homemade Japanese curry without using curry roux by harnessing the umami of caramelized vegetables and fruits. Because there's no roux, it's also easy to convert this to a gluten-free curry(sub Tamari for the soy sauce) or even a plant-based Japanese curry (you'll need to sub in a protein such as chickpeas or tofu as well as something to provide more umami like mushrooms, miso, etc). When I think about comfort food, Japanese curry is definitely mine. It just reminds me of my childhood when my mom would often make it for me. I’m actually realizing now, she probably made it so often because it’s so easy to make and you can hide so much vegetables inside... I mean, that’s exactly why I make this whenever I don’t know what to make for dinner. Quick and easy meals are all I can do with two crazy little boys. So here’s how I make Japanese curry, with the least amount of effort, while still being super delicious! • 2-3 lb beef chuck • 2 russet potatoes • 2 carrots • 1 onion • 3 cloves garlic • 1 knob ginger (about 2-inches, grated) • 1 apple (grated) • 2 Tbsp honey • A box of curry roux Cut beef chuck into ~2 inches cubes and salt them. To a pot with some oil, add the beef and sear the outside. Fill the pot with water. Bring to a boil while skimming off the scum and fat. Once boiling, reduce to a simmer and cover for 1 hour. Prepare the vegetables by cutting the potatoes, carrots, onions, and garlic. Add garlic to a pan with oil, and cook for 1 minute till fragrant. Add the rest of the vegetables and sauté till slightly cooked. I like to cook on medium high heat to lightly brown the outside. Once the beef is done, add the vegetables, grated ginger, grated apple, and honey to the pot. Cover and simmer for another 45 minutes. Turn off the heat, and dissolve all the curry roux. Heat on low for 5-10 minutes while stirring often to thicken a bit. Anddd that’s it! I like my curry sweet and I also used mild curry because of my two little boys. If you prefer less sweet and more spicy, put less honey and use the spicy curry roux.

Melt 1 tbsp butter and oil in a heavy duty pot. 2. Caramelize the onions on medium-low heat stirring constantly. This should take around 30 minutes. 2. Once the onion has caramelized, add the beef and cook until it gets color. 3. Add tomatoes and water to deglaze the pot. Scrape the bottom of the pot. (Alternatively, add pureed tomatoes if you prefer a smoother consistency) 4. Once the mixture comes to a rolling boil, add the curry roux packet in. Mix to combine. 5. Heat the butter over high heat until lightly smoking. Reduce heat to medium-high. Add the chicken and cook, stirring occasionally, until lightly browned, about 3 minutes. Add the onions, season with salt and pepper, and cook, stirring, until the onions are softened, about 3 minutes. 2. Add the garlic and ginger and cook, stirring, until aromatic, about 30 seconds. Add the curry powder and cook, stirring, until lightly toasted, about 30 seconds. 3. Add the flour and cook, stirring, until no pockets of dry flour remain, about 30 seconds. Add the broth or water and stir to dissolve the flour. Add the potatoes, carrots, honey, and raisins. Bring to a simmer, then reduce heat to maintain a bare simmer. Cover and cook until the potatoes and carrots are tender but not falling apart, about 10 minutes. 4. Season to taste with salt, pepper, and more honey if desired. Stir in the peas. Serve with steamed white rice, thinly sliced Chinese chives or scallions, and Japanese pickles.

𝐓𝐨𝐝𝐚𝐲’𝐬 𝐦𝐞𝐧𝐮: Japanese beef curry (Curry Rice) Ingredients: 10 cups of Beef Broth 4 large boneless, skinless chicken breasts 8 medium carrots, coined 2 medium onions, chopped Either 6 medium Russet potatoes OR 12 yucan golds, cut into bite-size pieces 2 large Japanese sweet potatoes (they're purple!) 6-8 red tomatoes, cut into bite-size pieces 1 head of garlic, minced (you could use less, but it's tasty this way) 2 Tbs of mango chutney ½ tsp of fresh ground ginger 1 fugi apple, grated OR about 2 Tbs of unsweetened apple sauce 2- 4 Tbs of “Oriental Curry” powder (depending on how spicy you want it, and I do use the S&W brand) 3 tsp of soy sauce 4 Tbs of cornstarch 2-3 oz of smoked Gouda cheese 2 tsp of cultured buttermilk or liquid buttermilk salt to taste Instruction: 1.In a skillet, brown the vegetables together (if they don't all fit, try browning the garlic with the onions, all of the potatoes together, then the carrots and tomatoes) 2.Brown the chicken. While doing this, bring the beef broth to a near boil in a 10-quart pot. Depending on how big the veggies and chicken come out to be, you might need a bigger pot. 3. When the browned ingredients are done, put in the broth. Stir well. Bring back to a near boil. In a small bowl, blend curry powder with cold water, enough to make into a smooth sauce. In a different small bowl, mix the cornstarch with a small amount of cold water, enough to make a smooth, thick sauce. Place curry powder in broth and stir in completely. Put chutney, ginger, apple, and soy sauce in. Stir in between each ingredient. Boil for about 30 minutes or until the potatoes are tender. 4. Turn down the heat and add cornstarch. Stir until thick (like your spoon is standing up in it). Take off heat and shred in Gouda and buttermilk. Add salt just before serving. Serve over rice. Some notes: I live near a farmers market and an Asian supermarket, so things are a bit easier to get. Most things can be omitted or substituted. Thanks for watching!
