This feather-soft bun is best had with a spicy bhaji or vegetable curry, but you can also serve it as a sandwich lined with chutney and packed with potato vadas. Old-timers will go to the extent of preparing the yeast also at home to make Laadi Pav but this version made with instant dry yeast is more common and very effective. You will love the outcome. It is so soft and tasty, you will look forward to making it – and of course, eating it – again and again! Preparation Time: 10 minutes. Cooking Time: Nil. Makes 12 laadi pav. Resting Time: 1 hour 30 minutes. Baking Temperature: 200°C (400°F). Baking Time: 25 minutes. 3 cups plain flour (maida) 2 tbsp warm milk 1 tbsp sugar 1 tbsp instant dry yeast 1 tsp baking powder 1½ tsp salt 2 tbsp oil ½ tbsp soft butter Milk for brushing Butter for brushing Plain flour (maida) for dusting 1. Combine the milk, 2 tbsp warm water, sugar and yeast in a deep bowl, mix well and keep aside for 10 minutes. 2. Combine the oil and the butter in a bowl, mix well and keep aside. 3. Combine the plain flour, baking powder and salt, mix well. 4. Add the yeast mixture. 5. Mix well and knead into a soft dough using approx. 1 cup of warm water. 6. Once kneaded, insert the fingertip into the dough and it should bounce back clean, which means the dough is ready. 7. Add the oil-butter mixture. 8. Knead again for 5 to 8 minutes by stretching the dough and folding it back till it is smooth and elastic. 9. The dough should look smooth like in the below image. 10. Transfer the dough in a greased bowl, cover it with a damp muslin cloth and keep aside for 1 hour or till it doubles in a warm place. 11. The dough has risen and doubled in size. 12. Deflate the dough by inserting a finger, which should leave a depression in the dough without bouncing back. This means the dough has perfectly risen. 13. Transfer to a floured board and knead again for 5 minutes using little flour by stretching it and folding it back till smooth. 14. Divide the dough into 12 equal portion. 15. Roll each portion of the dough into a smooth round. 16. Place them on a greased aluminium tray at regular intervals. 17. Cover it again with a damp muslin cloth and keep aside for 30 minutes. 18. They will double in size as shown below. 19. Brush the dough with the milk. 20. Bake it in a pre-heated oven at 200°c (400°f) for 20 minutes. 21. Loosen the edges with the help of a knife. 22. Once cooled, de-mould it and brush the laadi pav with butter and cool completely. 23. Serve or use as required. Handy tip: The laadi pav will stay fresh for 2 days at room temperature.

Homemade ladi pav is soft, fluffy and perfect pav recipe. If you will follow step by step instructions, you’ll never want to go back to store-bought pav after tasting this. Tips & Tricks on my blog 🤍 Ingredients: ½ cup water 2 tsp. yeast 3 tsp. sugar 3 cup maida 1 tsp. salt 2 tsp. oil ½ cup milk Instructions: Dissolve yeast and sugar in 1/4 cup warm water. Mix well until sugar and yeast are dissolved completely. Leave for 10 minutes until bubbles form on surface. Sieve maida in a mixing bowl. Add salt and oil. Mix properly. Pour yeast mixture into flour. Add milk in parts and knead until smooth and elastic. This procedure can be 8-10 minutes longer. If dough is sticky, apply remaining oil in parts and knead until smooth. Kneading dough allows gluten to form which enables dough to rise better, be lighter and fluffier. The dough should stick just slightly to your finger when touched, but not be overly sticky. Cover it. Let rise in a warm place until doubled for 2-2.5 hours. When the dough has risen, punch it down gently to release air that have developed. Knead again for 1-2 minute. Make a log and cut into 6 equal parts. Make smooth balls. Grease your pan with some oil. Keep the balls in pan and cover. Let it rise for a few minutes or until doubled. Meanwhile, preheat the oven. Brush pavs with milk. Bake for 20 minutes at 180 degree Celsius or until crust becomes golden brown. Remove from oven and let it cool for 15 minutes and then remove it from pan. With just 6 ingredients these homemade pav turned out fabulous. Yes, this recipe is that simple. Just combine the ingredients, knead, proof, shape it and bake to make delicious homemade dinner rolls. How easy is that! Detailed blog post with tips and tricks 👇 🤍 Preparation time: 1 hour 30 minutes Baking time: 25 minutes Yields: 9 ☆ 1 cup = 240 ml ☆ 1 tablespoon = 15 ml ☆ 1 teaspoon = 5 ml ☆ Baking pan size = 7.5 inches × 2 inches Ingredients to make ladi pav 2½ cup All purpose flour (Maida) 1¼ cup warm milk (300 ml) 1 tsp yeast 1tbsp sugar 2 tbsp milk powder 2 tbsp butter Step by step pictorial instructions to make ladi pav: Grease the pan with butter and set aside. Preheat oven 🤍180°C for 10 minutes. In a bowl add ½ cup warm milk, sugar and yeast. Mix well, cover and set aside for 10 minutes for the yeast to activate. In a large mixing bowl add sieved flour and milk powder. Mix and incorporate them well. Make a well in the center and add the activated yeast. Mix to combine. Now add the milk in batches to form a sligrly sticky dough. Add butter and incorporate the butter in the dough. After a minutes or two of kneading the dough will turn soft and not sticky. Take the dough out in a clean surface and knead the dough for 5-10 minutes using stretch and fold method as shown in the video and picture below. This step is important to develop the gluten and make the pav soft. Your dough is done when it looks smooth and springs back when you poke it. Grease the bowl lightly with a bit of butter or oil. Place the dough in the greased bowl, cover the dough with cling wrap or a plate and keep in a warm place for proofing for 45 minutes to 1 hour until doubled. The dough has beautifully proofed and doubled in size. Remove the cling wrap and gently punch down the dough to flatten and remove the incorporated air. Take out the dough and gently knead it for 2-3 minutes. Now cut the dough into 9 equal portions. Shape all the portions nicely into smooth balls with the help of your palms and place it in the prepared pan leaving a little space between each dough ball as they will expand in the second proofing. Now cling wrap the prepared pav or cover them with a damp cotton cloth nd keep aside for 20-25 minutes. Remove the cling wrap and brush the pav with milk and sugar mixture gently. (you may just use milk). Bake the pav at preheated oven 🤍180°C with both rods switch on for 20-25 minutes or until the top surface is golden brown. Please note that the top surface of the pav will be hard but do not worry it will turn soft once it cools down. Remove from the oven and immediately brush the pav lightly with butter and cover them with a clean towel for about 10 minutes. Demould from the pan and let it cool down completely in a cooling rack. Enjoy the pav or dinner rolls the way you like. My little one finished off 3 pav immediately once cool down with butter jam 😃.
