Take unsalted butter in a pan. Let it melt fully. 2. Add chopped onions to the pan and saute for 2 mins. 3. After 2 mins, add the cleaned mushrooms and saute for a minute or two. 4. Add in the chopped garlic and mix everything well. 5. Cook the mushrooms for 5 mins. 6. After 5 mins, add salt, crushed pepper and mix it all again. 7. Once mushrooms are cooked well, add in the chopped coriander leaves. 8. Saute everything for a few seconds and then turn off the stove. 9. Serve the Butter Garlic Mushrooms hot with some bread/focaccia by the side. Hey guys! Mushrooms are very easy to deal with and they can be cooked really quick. Add the remaining ground masala powder after 5 mins. Mix and add salt. 12. Mix it all well and cook for 10 mins on low flame. 13. Add the curry leaves and chopped coriander. Give it a quick mix. 14. (thinly sliced) For Roasting The Eggs Turmeric Powder - 1/4 tsp Chili Powder - 1 tsp Salt - 1/4 tsp Boiled Egg - 6 nos. To Make Curd Mixture Curd - 1/2 cup Chili Powder - 2 tsp Coriander Powder - 1 tsp Turmeric Powder - 1/4 tsp Garam Masala - 1 tsp To Make Biryani Ghee - 2 tbsp Oil - 1 tbsp Whole Spices *Cinnamon - 1 inch piece *Star Anise - 1 no. *Cardamom Pods - 3 nos. *Cloves - 8 nos. *Bay Leaf - 2 nos. Onion - 2 nos. (thinly sliced) Green Chili - 3 nos. (slit) Ginger Garlic Paste - 1/2 tsp Tomato - 3 nos. chopped Salt - 2 tsp + as required Coriander Leaves - 1/2 bunch Mint Leaves - 1/2 bunch Basmati Rice - 300g (soaked For 30 Mins) Water - 500 ml Method 1. Wash and soak the rice for about 30 minutes 2. Boil eggs and peel them and make slits on them 3. Heat a pan with some oil and fry some onions for the fried onions and keep them aside 4. In the same pan, add some oil, turmeric powder, red chili powder, salt and add the eggs and fry the eggs and keep them aside 5. Take a pressure cooker and add some ghee and oil to the cooker, and roast the whole spices 6. Add onions and saute them 7. Add green chilies and ginger garlic paste and saute along 8. Add tomatoes and cook them till they are mushy and add some salt 9. In a bowl, take the curd, add chili powder, coriander powder, turmeric powder, garam masala and mix well 10. Add the whisked curd mixture to the cooker and cook for 5 minutes on medium flame 11. After 5 minutes, add coriander leaves, mint leaves, and mix well 12. Add the soaked rice and gently mix it 13. Add water (500 ml water for 300 ml rice) and check for seasoning. Add a teaspoon of salt if required 14. Now place the eggs on top of the rice, add fried onions, chopped coriander leaves and close the pressure cooker 15. Place the weight and cook for about 10 minutes, after 10 minutes turn off the stove and let the pressure cooker rest for about 10 minutes before opening 16. Cook the masala for 10 mins. 11. Add some more ghee and continue to cook for 5 mins more. 12. Once the ghee starts separating, add jaggery and half cooked chicken pieces. 13. Add in ginger garlic paste and saute until the raw smell goes off. 11. Add in the chopped tomatoes and saute until they are nice and mushy. 12. Next add in the marinated prawns and mix. 13. Add chilli powder according to your preference and mix. Then add in the ground masala powder. 14. After you mix the prawns with masala, add in water and dilute the curry. 15. Simmer the curry for a few seconds and then add in the coconut milk. 16. Cover the kadai with a lid and cook the curry for about 8 mins. 17. After 8 mins, add in some chopped coriander leaves and give it all a quick mix. 18. Flavourful Prawn Curry is ready to be served with some nice hot steamed rice. Remove the chicken and to the same pan, add cardamom, cloves and cinnamon. 8. Add in the left over gravy from the marinade. Mix well, cover and cook for 10 mins on a medium flame. 9. Now, put in the fried chicken pieces, mix gently to coat them with gravy and cover the pan with a lid. Cook the chicken for about 15 mins on a medium flame. 10. Keep them aside and cool them completely. 7. Meanwhile, separate the cooked mutton pieces from the mutton stock and keep it aside. 8. To a large kadai, add oil, ghee and mustard seeds. 9. Once they splutter, add cloves, cardamom seeds, cinnamon, fennel seeds, green chilies and onions. 10. Saute until the onions are slightly brown. Then add the tomatoes and saute. 11. Once the tomatoes are mushy, add curry leaves and saute until the oil is separated. 12. Next add the cooked mutton pieces and mix well. 13. Ad the red chili powder and curry powder. Pour the mutton stock and mix. Add rock salt. 14. Mix well and cover the kadai with a lid to cook for 15 mins. Meanwhile, pound/ grind the roasted ingredients to make masala paste. 15. Add it to the mutton and mix well. Cover the kadai with a lid for another 15 mins to let all the flavours blend totally. 16. Garnish the Mutton sukka with some finely chopped coriander leaves and serve it piping hot with some rice! Keep the flame on medium and roast for 2 mins, till they turn aromatic. 2. Let them cool and grind the mixture to a fine powder. For Kadai Paneer 1. To the same kadai add oil, ginger, garlic, onion, tomatoes, salt and saute them well 2. Cook these for 5-8 mins on medium flame. 3. Once they are cooked well, let them cool and grind it to a fine paste 4. To the kadai, add oil and butter. Then add the ground masala paste and some water. Bring it to a boil. 5. After the masala gravy thickens, salt, chili powder, and the ground masala powder. 6. Once the gravy thickens and oil separates, add the fried onion and capsicum wedges. 7. Now add water and keep the flame on medium. 8. Close and cook the gravy for about 10 - 15 mins. 9. After the oil separates, add fried paneer. 10. After a minute, add fresh cream and some crushed kasoori methi 13. Gently mix everything and turn off the stove 14. Add a few chopped coriander leaves mix well . 11) Country chicken curry is done serve with hot steaming rice.

Mutton Paya Ingredients Goat Trotters - 8 no Salt Turmeric powder Chili powder Oil Whole spices - Cinnamon, Cloves & Cardamom Chopped Onion - 3 no Green Chili - 2 no Curry leaves Ginger Garlic paste - 2 tsp Chopped Tomato - 2 no Coriander powder - 1/2 tsp Cumin powder - 1/2 tsp Water Chopped Coriander leaves Masala paste: Fennel seeds - 1/2 tsp Poppy seeds - 1 tsp Grated Coconut - 1/2 cup Water Method: 1.Take well cleaned and washed Goat Trotters in a bowl. 2.Season it with some Salt, 1/2 tsp of Turmeric powder and a tsp of Chili powder. 3.Mix it well and let it sit for 10 minutes. 4.To make Masala paste - add 1/2 tsp of Fennel seeds, 1 tsp of Poppy seeds, 1/2 cup of freshly Grated Coconut. 5.Add a little water and grind it to paste. 6.To cook Goat Trotters - take a pressure cooker, add 2 tbsp of Oil, whole spices - Cinnamon, Cloves & Cardamom, 3 med finely Chopped Onion, 2 Slit Green Chili and few Curry leaves. 7.Once Onion starts to brown, add 2 tsp of Ginger Garlic paste and 2 finely Chopped Tomatoes. Saute it well. 8.Once tomatoes are mashed up, add 1/2 tsp of Turmeric powder and 2 tsp of Chili powder. 9.Now, add Grounded Coconut masala paste and then add Goat legs and mix it all together. 10.Season it with salt, add 1/2 tsp of Coriander powder, 1/2 tsp of Cumin powder. 11.Now, add 7 cups of Water. Close and cook for 10 to 12 whistles on medium-high flame. 12.Garnish it with Chopped Coriander leaves. Your Mutton Paya is ready. Serve it hot with Appam or Idiyappam. Vankaya Gujju Kura Ingredients Buy Copper bottom kadai: 🤍 Buy pan: 🤍 Brinjal - 250 gms Water Rock Salt For Pound Masala Ginger Garlic Green chili - 4 nos small Grated Coconut - 1 Tbsp Oil - 2 Tbsp Mustard seeds - 1/4 tsp Cumin seeds - 1/4 tsp Urad dal - 1/4 tsp Red chili - 2 nos Onion - 2 nos chopped Tomato - 2 nos chopped Turmeric powder - 1/2 tsp Chili powder - 2 tsp Salt to taste Curry leaves Coriander leaves Method: 1. Tip: To the water add rock salt, when you cut the brinjals immediately drop it into salted water. Pound Masala 2. Pound ginger, garlic, green chili and grated coconut together. 3. Heat oil in a wide sauce pan. Add ingredients for tempering mustard seeds, cumin seeds, urad dal and red chili. 4. Once the mustard seeds starts splattering add onions and saute till it turns brown. 5. Now add tomato and saute till it becomes mushy. 6. Add the pounded masala and mix well. 7. Then add turmeric powder, chili powder, salt and mix well. 8. Add the sliced brinjals and mix well. Close and cook for 20 minutes or until brinjal is cooked. 9. Focaccia Pizza RECIPE COURTESY OF VALERIE BERTINELLI Level: Easy Total: 3 hr Active: 45 min Yield: 6 servings Ingredients 3 1/2 cups bread flour, spooned into measuring cups and then leveled off 1 1/2 teaspoons kosher salt 1 1/4 teaspoons instant yeast 1 1/2 cups lukewarm water 1 teaspoon honey 1/2 cup extra-virgin olive oil Sauce, recipe follows 5 ounces sliced pepperoni 15 deli-style slices Monterey Jack cheese (about 8 ounces) Dried oregano, for garnish Red pepper flakes, for garnish Freshly grated Parmesan, for garnish Sauce: One 14-ounce can crushed tomatoes 2 tablespoons extra-virgin olive oil 3/4 teaspoon kosher salt 1/4 teaspoon granulated sugar 1 clove garlic, finely grated Directions Special equipment: two 18-by-13-inch rimmed baking sheets Add the flour, salt and yeast to the bowl of a stand mixer and whisk to combine. Add the water, honey and 3 tablespoons of the olive oil to a 2-cup measuring cup. Whisk to combine. Add the water mixture to the mixer bowl and use a rubber spatula to incorporate the ingredients slightly. Attach the bowl to the stand mixer fitted with the dough hook and mix on low speed until the mixture forms into a ball and no loose flour is left at the base of the bowl, 3 to 4 minutes. Turn the mixer up to medium speed and knead for 2 to 3 minutes. Pour the remaining olive oil into a 18-by-13-inch rimmed baking sheet. Turn the dough out onto the baking sheet. Turn it once to coat all the sides of the dough in the olive oil. Cover the pan with an inverted baking sheet of the same size and leave in a warm place to rise until doubled in size, about 2 hours. After 2 hours, preheat the oven to 500 degrees F. Remove the top baking sheet and, using the tips of your fingers, delicately stretch the dough until it almost reaches the edges of the pan. Cover again with the rimmed baking sheet and let the dough rest while you make the Sauce (see recipe below). Uncover the dough and delicately stretch the dough to reach all the edges of the pan again. If the dough springs back too much, let the dough sit for another 5 to 10 minutes before trying to stretch it further. Once the dough is stretched to fit the pan, top it with the sauce. Cover the sauce completely with the pepperoni, then top the pepperoni with the sliced cheese. Transfer the pizza to the oven and bake until the cheese is lightly browned in spots and the crust is golden, 15 to 20 minutes. Remove the pizza from the oven and use a large spatula to transfer it to a cutting board. Top with dried oregano, red pepper flakes and Parmesan. Cut into 16 squares and serve immediately. Sauce: Yield: About 1 cup Add the tomatoes, olive oil, salt, sugar and garlic to a mixing bowl. Whisk to combine and set aside. Village Style Fish Curry - Recipe Ingredients: Seer fish / Surmai - 4 medium-big pieces Oil - 2 Tbsp Fenugreek seeds - a pinch Garlic cloves - few (pounded) Shallots - 7 to 8 nos Green Chilis - 3 nos Tamarind puree - 2 to 3 Tbsp (diluted) Chili powder - 2 Tbsp Coriander powder - 1 1/2 tsp Few Curry leaves Tomato - 1 no Turmeric powder - 1/2 tsp Salt water Few Coriander leaves Method: 1. In a wide deep pan, heat oil. Add fenugreek seeds, pounded garlic and shallots & green chilis. saute till transparent 2. Mean while, Dilute tamarind puree in a bowl. Add chili powder and coriander powder. Mix well 3. Once the onion turns transparent, add curry leaves, tomato, turmeric powder & salt. Mix well 4. Add the tamarind chili powder sauce & some water. Mix well 5. Close & cook for 15 to 20 minutes 6. Now add the fish pieces. Close & cook for 2 to 3 minues. 7. Turn the pieces, add curry leaves & coriander leaves. Close & cook again for 2 to 3 minutes. Done!

Soak 1/4 cup of broken chana dal for 1 hour. 2. Pressure cook - Soaked chana dal, 1 large chopped onion, 2 green chilies, 2 red chilies, 1 tsp ginger garlic paste, potato, chicken pieces, 1 tsp garam masala powder, salt and little water. Close and cook this for 4 to 5 whistles. 3. Open the pressure cooker and cook till the water evaporates. 4. Cool the mixture and shred the chicken from the bone. 5. Grind the mixture without adding water. 6. Add chopped onion, mint leaves, coriander leaves, 1 egg and bread crumbs to the grounded chicken mixture. Mix them well. 7. Add salt if required. 8. Refrigerate the mixture for an hour. 9. Take the shammi mixture and make them as small patties. Roll it on the bread crumbs completely. Refrigerate it for 10 mins. 10. Close the kadai with lid and cook the carrots on medium low-flame for 10 mins. 11. Add coriander leaves and give it a quick mix. 12. Add the cooked rice and gently mix everything. Add ghee. 13. Serve the Carrot Rice hot with Boondi or Onion Raita.
