Empanadas are said to have originated from Portugal, and the Galicia region of Spain. Our colonists of course, introduced this pastry to us, and we FIlipinos have made it our own. Its name comes from the word "empanar", meaning to cover in a pastry case. Fillings vary from sweet to savory. By that definition, we can say that most countries have their own version of this treat panzerotti in Italy, samosas in India, hand pies in America, and so on. This video does not feature the authentic puto seco recipe. Instead, we developed an easier version meant to be baked using an ordinary oven. Authentic puto seco from Cabalantian, Bacolor, Pampanga, is made with finely ground rice. It is crumbly and powdery in texture, and feels very dry in the mouth when eaten. It is different from uraro which is made with arrowroot flour.

Earlier, we showed you that it is possible to make tibuk-tibuk Pampanga's favorite kakanin, in twenty minutes. This time, we will show you another version that takes it up a notch with a delicious corn flavor. Do you just add the corn to a plain tibuk-tibuk mixture? Not really. For one, you will need a base that has more body, for it to be able to hold the corn well. Corn could also give your tibuk-tibuk a shorter shelf life, but we will show you how to work around that. Tibuk-Tibuk is maja blanca's Kapampangan cousin, but is much more creamier and flavorful, as it is traditionally made with carabao's milk. Watch the video and see! "Ningnang Mais" is Kapampangan for "inihaw na mais" or roasted corn on the cob in English. It looks like what its name says, but it isn't. This is a dessert very similar in taste to Brazo de Mercedes and Brazo de la Reina, but quite unique in appearance. Those kernels you see are hand piped individually. Mrs. Galang was once shown an old recipe called "Mais", which reminded her of a recipe she learned from culinary school way back. Sadly, the "Mais" recipe didn't quite work for her it was too sweet for her taste and contained cashew nuts. So she tweaked the recipe and changed the filling; replaced the cashew nuts with cream style corn, and with her cake decorating skills, styled it to make it more corn-like in appearance. She named her version of the recipe "Ningnang Mais". The best description of this dessert, we heard from Mrs. Galang's grandson Mio who was probably six years old then. Asked how he could finish one whole log, he said "Because it tastes like roasted marshmallows outside and it has corn inside."; two of his favorite treats in one. PLANTANILLAS one of Pampanga's many sinful desserts. These are tiny, tender eggyolk crepes poached in syrup, and filled with the yummy goodness of latik. They are quite hard to find, but you can still get them from Carreon's Sweets and Pastries in Magalang, Pampanga. The Carreon version is even richer, as it is stuffed with heavenly, melt-in-the-mouth pastillas made with pure carabao milk.
