As mentioned in the video, be sure to check out Chris’s channel here: 🤍 It's hard to beat crispy pork belly, especially when cooked right! This crispy pork belly came out with epic crackling that was bubbly and easy to bite through, the meat was tender, juicy and full of flavour too! For me, the secrets to crispy pork belly have always been about preparation combined with high indirect heat. Taking the time to dry the skin out is key, using a jaccard really helps to create that bubbly crackling and high indirect heat helps crackling formation without it burning too fast. In the video i'll explain all of the above more in depth. As mentioned in the video, here's the Jaccard I use: 🤍 Also here's our other pork belly video: 🤍 For reference, our initial smoking temperature was around the 275F/135c mark and then when we were building our crackling (cooking at high indirect heat), we bumped our temperature up to around 500F/260c. I wanted to share my secret recipes which are both easy to make and delicious. I hope you enjoy my video! - Samgyeopsal Gui / Grilled Pork Belly Ingredients Pork belly 400g Vegetable oil- 1 tsp Sesame oil 1 tsp Toasted sesame seeds- 1 tsp Garlic- 5 cloves Kimchi 200g Salt- 1 tsp Black pepper 1/2 tsp Instructions 1. Heat the pan over medium heat. Add oil and cook from the fat part until brown and crispy 2. Cook both sides of the meat by turning the meat upside down. Drain excess oil from the pan 3. Add garlic and continue cooking the meat until they’re fully cooked. Take the meat out from the pan and rest 4. In a meantime put kimchi in the same pan that was used to cooked the meat and stir fry 5 to 10 minutes until cooked. Drizzle 1 teaspoon of sesame seeds. Sprinkle sesame seeds on kimchi 5. Ingredients - Pork belly (you want a piece from the centre of the belly preferably) - Salt, lots of salt… - Any seasoning or rub your little heart desires for the flesh Method 1. The day before, take the pork from the packet and dry it really well with a paper towel. 2. Score diamond patterns into the skin but make sure you don't cut past the fat, you just want to cut through the skin. 3. Place your pork belly onto a wire rack and season it heavily on the skin side. 4. Place in the fridge overnight. 5. The next day, pre-heat your oven to 180°C. 6. Take the pork belly from the fridge and brush off any excess salt on the top. 7. Season the flesh side with any barbecue rub or cracked pepper. 8. Place into the oven for 1 hour. After 1 hour, turn the oven up to 220°C on the grill or broil function but make sure your pork is still in the bottom half section of the oven. 9. Cook it like this for another 30 minutes or until the skin goes super crispy. Just be super careful you don't burn the crackling at this point as all ovens are different. 10. After a total of roughly 1.5 hours in the oven, your pork belly should be super crispy and still juicy in the centre. Remove from the oven and let it rest for at least 25 minutes before you slice it. 11. Enjoy!

I'm sharing all my tips, tricks and recipe, so your neighbours will be able to hear that crunch from next door. :P Step by step instructions on how to impress your family and friends with crispy and juicy roast pork in the Kamado Joe. *The most important thing is to get the skin dry and to ensure that, you have to give the pork enough time to do so. I make sure the skin is hard and that the colour goes from a white colour to a pink colour. When the skin is hard, the rest of the pork will be rigid because of the skin hardening up.
