I would say this Economic Bee Hoon is the real Singapore Noodles. Contrary to popular belief of non Singapoerans, our stir fried rice noodles are fried without curry powder. This bihun is commonly available at most coffeeshops in Singapore. The stall owners will usually fry the beehoon as is and they offer a wide variety of sides for us to choose from. Singapore is famous for food. According to the Michelin Guide Singapore, there are a total of 38 starred restaurants in the small island city which is only 739 km square. If you are squeamish about street food, you may be surprised that one of the hawkers has received one star according to the Michelin Guide 2017. So let's dive in and take a look at how the Singapore noodles is prepared. = You can get the full recipe and more information at: 🤍 RECIPE: Ingredients A 3 tbsp oil 2 eggs 200 g rice vermicelli Ingredients B 1 tbsp chopped garlic 1 medium size onion Ingredients C 80 g chicken breast meat, cut into julienne 50 g medium size shrimps, deveined, wash with salt and drained 1 tablespoons dry shrimps, soak for 30 minutes and drained 40 g cabbage, cut into julienne 20 g carrot, cut into julienne 50 g bean sprout 10 g chopped scallions Ingredients D (seasoning) 3 tbsp tomato ketchup 1 tbsp chili sauce 2 tbsp oyster sauce 1 tbsp light soy sauce 1 tbsp dark soy sauce 1/4 tsp sesame oil 1/8 tsp ground white pepper Instructions: Preparation: - Bring a pot of water to boil. Blanch the rice vermicelli until soft, which will take about one minute. - Remove the vermicelli, place it in a pot of cold water. Let it cools down to room temperature. Drain away the water with a wire mesh strainer or colander. Set aside. - Deveined the shrimps, marinate with a half teaspoon of salt for five minutes, wash in running water until the water runs clear. - Soak the dry shrimps in hot water for 30 minutes. Drained. - Cut cabbage and carrot into julienne - Cut the chicken breast meat into thin slices. Mix with a half teaspoon of cornflour, 1 teaspoon of light soy sauce and one teaspoon of vegetable oil. Marinate for ten minutes. Stir-fry: - Heat up 2 tablespoons of vegetable oil in the wok. Saute the chopped onions and garlic. - Add the breast meat, dry shrimps, shrimps and stir-fry until they are cooked. - Add the cabbage and carrot and stir-fry for another minute. Push all the ingredients to the side of the wok. - Add 1 tablespoon of vegetable oil and scramble two beaten eggs until nearly cooked. Push back the ingredients to the bottom of the wok and mix with the eggs. - Add the vermicelli, 2/3 of the bean sprouts and the seasonings (ingredients D). Mix well with the vermicelli. Fish sauce fried bee hoon 炒米粉 is a style of white bee hoon recipe that is both surprisingly delicious and easy to make. Bee hoon (also called bihun, mee hoon, mifun) describes rice noodles or rice vermicelli that are a staple in many households across malaysia and singapore since it’s economical and convenient. Similarly, this seafood fried beehoon is no exception, using simple ingredients to deliver a lot of flavour, accentuated by the fish sauce added at the end, and a slightly crispy texture. It’s a simple homemade dish that tastes as if it came from a chinese or tze char restaurant. 0:00 Intro 0:12 Prepare bee hoon noodles 0:24 Fry egg and prawns 0:48 Fry aromats and vegetables 1:14 Add bee hoon and fry until dry 1:26 Add seasoning and prepared ingredients 1:46 Flavour bee hoon with fish sauce 1:57 Ready to enjoy - The full recipe is below - 75g dried rice noodle (bee hoon) 1 egg 3 prawns (shells removed leaving tail on and deveined) 2 stalk spring onion, cut 5cm (separate white and green) 1 large shallot, sliced 2 birdseye chilli, sliced (adjust amount according to personal taste) 2 cloves garlic, chopped 3-4 chinese cabbage leaves, cut into strips ¼ tsp salt ¼ tsp sugar ⅛ tsp white pepper 2 tsp fish sauce Vegetable oil Soak noodles in room temperature water for 45 mins. Drain well and cut a few times to shorten the length of the noodle. This will make it easier to stir fry later. In a wok, heat some vegetable oil to medium heat. Add egg and allow to fry for a few seconds until it is slightly set. Break up the egg into small pieces and set aside. In the same wok, fry prawns for 1 min and set aside together with egg. In the same wok, add spring onion white, shallot, chilli, and garlic and fry for 2 mins. Stir continuously to ensure that all the fragrance is released and the garlic doesn’t burn. Once the shallot separates and has started to soften, add chinese cabbage and fry for 2-3 mins. Stir continuously until cabbage has started to soften. Add the noodles and fry for 3-4 mins until it is slightly coloured and has absorbed all the flavour from the vegetables. Tip: Once the noodles are added, treat the frying process in stages. In each stage, fry until the noodles are not very moist before adding more ingredients. This will give the noodles a more intense flavour and prevent it from being too mushy. Add salt, sugar, and white pepper and fry for 1-2 mins until evenly combined. Add egg and prawns prepared earlier as well as spring onion green and briefly stir to combine. Add fish sauce and fry for 1-2 mins until evenly combined. Prawn 3pcs remove shells and devein 10. Butter 11. Fragrant oil Seasoning 1. Pepper 2. Fish sauce Method 1. Steam the salted egg yolk for 12min, chopped to smaller pieces 2. Mix the egg with the salted egg white. Set aside 3. Saute the prawn and set aside 4. Fry the egg white and set aside 5. Stir fry the garlic till fragrant with little oil, add in carrot and cabbage and fry. Then add in bee hoon and fry till fragrant. Add in egg white and mix well. May add little water if too dry. This 猪脚米粉 is one of our comfort food and convenience food as well. It's like getting microwaved meals from 7-11 except there's no need to walk to 7-11 for this yummy meal.
