Fish Pickle INGREDIENTS Oil – 1or 2 cup Fish- Mustard seed-2 tsp Curry leaves-4 strings Ginger – 1 or 2 big pieces Garlic – 20 or 25 cloves Red chilli – 2 tbsp Dry red chilli – 2 or 3(slits) Pepper – 1tbsp Turmeric powder – 1tsp Asafoetida – 1/4 tsp Fenugreek powder – 1/4tsp White Vinegar – 1 cup (depends upon your taste) Salt to taste FOR GRINDING Dry red chilli-2or 3 slits Ginger – 1big piece Garlic – 10 to 15 pieces Turmeric powder – 1/2tsp Curry leaves- 2 strings Step 1. (Preparations) Wash and cut the fish into cubed pieces. Place the fish pieces in a bowl and add the grinded paste of ginger, garlic, red chilli, pepper, turmeric powder, curry leaves and salt to taste and keep it aside . Step 2. (Cooking Method) Take 1 cup of oil in a pan, fry the fish. Don’t over fry the fish. Then drain and set a side. Step 3. (Last stage) Take half a cup of oil in a pan. Add mustard seeds and when it start to pop, then saute garlic, ginger, curry leaves. When it become light golden colour add asefoetida, turmeric, fenugreek powder, red chilly powder. Mix well and sauted for a minute. Then add the fried fish, mix well with the spices and then finally add white vinegar. Remove from heat and cool completely. Then store in a air tight jars ആവശ്യമുള്ള ചേരുവകൾ എണ്ണ ചൂര കടുക് – 2 tsp ഇഞ്ചി – 1 , 2 വെളുത്തുള്ളി – 20 , 25 മുളക്പൊടി – 2 , 3 കുരുമുളക്പൊടി – 1 tbsp മഞ്ഞൾപൊടി – 1 tsp കായം – 1 / 4 tsp ഉലുവപ്പൊടി – 1 / 4 tsp വിനാഗിരി – 1 കപ്പ് ഉപ്പ് കറിവേപ്പില – 3 തണ്ട് തയ്യാറാക്കുന്ന വിധം ആദ്യം ചൂര മീൻ നന്നായി കഴുകി അച്ചാറിന്റെ ഷേപ്പിൽ മുറിച്ച എടുക്കുക ഇനി അതിലേക്ക് ഇഞ്ചി , വെളുത്തുള്ളി , മുളക്പൊടി , കുരുമുളക് പൊടി , മഞ്ഞൾപൊടി , കറിവേപ്പില , ഉപ്പ് എന്നിവ ചേർത്ത നന്നായി ഇളകി മീനിൽ മസാല പിടിപ്പിക്കുക ഒരു ചട്ടിയിൽ എണ്ണ ഒഴിച്ച അതിലേക്ക് മസാല പുരട്ടി വെച്ച മീൻ ഇട്ട് വറുക്കുക പകുതി വെന്ത കഴിയുമ്പോൾ എണ്ണയിൽ നിന്ന് കോരി എടുക്കുക ഇനി ഒരു ചട്ടിയിൽ എണ്ണ ഒഴിച്ച അതിലേക്ക് കടുക് ഇടുക ഇനി അതിലേക്ക് വെളുത്തുള്ളി , ഇഞ്ചി , കറിവേപ്പില എന്നിവ ചേർത്ത വഴറ്റുക ഇനി അതിലേക്ക് കായം , മഞ്ഞൾപൊടി , ഉലുവപ്പൊടി , മുളക്പൊടി എന്നിവ ചേർത്ത നന്നായി മിക്സ് ചെയുക ഇനി അതിലേക്ക് വറുത്ത മീനും വിനാഗിരിയും ചേർത്ത നന്നായി ഇളകി അടുപ്പിൽ നിന്ന് ഇറക്കി വെയ്ക്കുക അങ്ങനെ നമ്മുടെ നാടൻ മീൻ അച്ചാർ തയാർ Want to find a full list of the ingredients and cook this dish by yourself? Authentic Kerala Dishes with my personal Touch Ingredients Fish -1 kg Garlic-20 cloves Ginger-big piece Green chilly-15 Curry leaves-4 Chilly powder-2 1/2 tbsp Turmeric powder-1/2tsp Asafoetida powder- 1/2tsp Fenugreek powder- 1/2 tsp Salt- to taste Mustard seeds-1tsp Fenugreek seeds-1/2tsp Oil- for frying Vinegar-3/4cup Hot Water-11/2cups Dry red chilly-2(slits) Sesame Oil -3tbsp For Marination Chilly powder-2 1/2 tbsp Turmeric powder-1/2tsp Water - Asafoetida Powder -2pinch Fenugreek Powder -2pinch Vinegar-1tbsp Salt- to taste Method Take a bowl and add 2 tbsp of chilly powder, turmeric powder, 2 pinch of asafetida powder, salt and fenugreek powder and mix with vinegar. Make the paste with water. Taste the salt. Marinate this mix on the fish and keep it aside for 20 mins/ longer in the fridge. You can keep the skin on of the fish for this recipe (optional) Fry the fish until crispy. Do not burn it. Keep it aside. Take a deep bottomed pan. Add the oil that we fried the fish in and also 1 tbsp of gingely oil. Take a small bowl add chilly powder , turmeric powder, asafetida and fenugreek powder. Mix well with some water. Add some mustard seeds to the hot oil. When it splutters add whole red chilly and whole fenugreek. Add 20 pods of garlic . turn down the heat to medium flame.add medium sized ginger which is crushed. Add 15 green chilly finely chopped. Add curry leaves chopped. Saute for 10 mins. On low flame add the powder mix. Saute for 5 mins. Add ¾ the glass of vinegar. Add hot water/ oil according to your preference.add salt. Check the salt and the spices. Let it boil for 5 mins. Add the fried fish. Mix well. Saute well. Boil for 10 mins and turn off heat. You can preserve for 6 months. You can add vinegar to your preference. Keep it in a glass jar. Eat it after 1 week so that the fish is soaked with all the flavours. Enjoy !!! - Hello Friends .. This is a dry fish pickle recipe. Making homemade pickled fish is easier than you think. This pickled fish recipe is best with any rice or chapathi. You can use this same method to make Tuna Fish Pickle Recipe aswell. ► ► Ingredients: Sword Fish - 250 gms Red Chilly Powder - 2 tbsp Turmeric Powder - 2 tbsp Salt Vinegar - 1/4 cup Hing - 1 tbsp Mustard seeds - 1 tbsp Fenugreek seeds - 1 tbsp Curry leaves and Rech chilly Ginger - 1/2 cup Garlic - 1/2 cup Vegetable Oil - 1/4 cup Sesame Oil - 1/2 cup ► ► Method: = 1. Marinate the fish with salt, turmeric, and red chilly powder 2. Fry in vegetable oil. 3. In another pan heat sesame oil and splutter the mustard seeds, fenugreek seeds, curry leaves, and whole red chilies. 4. Add in ginger and garlic and fry it till all the water is gone. 5. Add in hing and fry it. 6. Again add turmeric, red chilly powder, and vinegar. 7. Add the fish and saute. 8. Adjust the salt if required. 9. So today we learned how to prepare Fish Pickle. You can store this Fish Fry Pickle in room temperature for 2 days and refrigerate. 10. From this fish fry pickle take 2 to 3 pieces and blend with coconut to make fish chutney which is best with rice. For the fish chutney you dont have to add any other ingredients other than coconut as the fish pickle has all the ingredients for the fish chutney. Ingredients 1kg Fish, cut into bite – size cubes (we used king fish) (measured after cleaning) 1 tbsp, sliced Ginger 1 tbsp, sliced Garlic 1 – 1.5 tsp Ginger garlic paste 4 Green chilli, sliced 1 tsp Mustard seeds 1 tsp Fenugreek seeds 1 tbsp + 1 tsp Chilli powder 1 + 1/2 tsp Turmeric powder 1/4 cup Vinegar 1 tsp Sugar 1 cup Boiled and cooled water 1 cup Vegetable oil 1/2 cup Sesame/gingely oil 1 stem Curry leaves Salt Instructions Marinate cleaned fish pieces with 1/2 tsp turmeric powder, 1 tsp chilli powder and salt for half an hour. Heat vegetable oil in a deep and wide pan. Deep fry the marinated fish pieces till it becomes crispy and dark brown in color. (refer notes) Strain the oil used for frying and keep it aside.Add sesame oil to the same pan and crackle mustard and fenugreek seeds. Add sliced ginger, garlic, and green chilli. Fry till golden brown and transfer to a plate. Make a thick paste by adding vinegar to turmeric powder (1 tsp) and chilli powder (1 tbsp).Add ginger – garlic paste to the same oil (sesame) and fry for 2 mins or till the raw smell goes. Add vinegar spice paste to this. Fry for 2-3 mins or till it gets roasted. Add 1 tsp sugar to this. Mix well. Add 1 cup boiled and cooled water to this and bring it to boil. Add fried fish pieces along with fried ginger, garlic, and green chilli. Let it boil. Reduce the flame to the lowest and cook for another 5 mins. Chech for salt and vinegar. If more vinegar is required, boil it before adding to the pickle. Remove from fire. As the pickle cools add the strained oil (oil used for frying fish) little by little. Once the pickle cools down completely, pour the remaining oil (oil used for frying fish) on top. FISH PICKLE Spanish mackerel - cut into small pieces Vinegar - 1 ½ cup Boiling hot water - 2 cups Turmeric powder - ¾ tbsp + ¾ tbsp Chilli powder - 2 tbsp + 3 tbsp (Or as per taste) Kashmiri red chilli powder - 2 tbsp Pepper powder - ¾ tbsp Ginger - 2 big pieces Garlic - 26- 27 cloves Green chillies - to taste Mustard seeds - 1 tbsp Asafoetida powder - to taste (around 1 tbsp) Fenugreek powder - ½ tbsp, not more than that Curry leaves Salt - to taste Coconut oil Sunflower oil Hi everyone, Mia Kitchen wishes you a very happy New Year!! Today I am here with a delicious fish pickle recipe, with nice and thick gravy! First, cut any type of fish into bite-size pieces and marinate it with some salt, 2 tablespoons of chilli powder, ¾ tablespoon of turmeric powder, and ¾ tablespoon of pepper powder and leave it aside for around one hour to marinate.. After around one hour, fry these pieces of fish in oil until they turn crispy.. you can use any type of oil to fry the fish, I am using sunflower oil.. Fry the pieces of fish until crispy, do not wait to get to crispy and dry While the fish is frying, finely chop green chilies, two big pieces of ginger and quite a lot of garlic for the pickle.. Fry the fish in batches, and add a few curry leaves at the end of frying, for added aroma Once the fish is fried and ready, you may do the rest of the process in the same oil, but I am going to change the oil to coconut oil for better taste and health.. In the same pan, remove the previous oil used to fry the fish and heat some coconut oil and splutter a tablespoon of mustard seeds.. After the mustard seeds splutter, add the chopped ginger, garlic , green chilies and some curry leaves into the oil and sauté until it starts to change colour.. Next, lower the flame and add ¾ tablespoons of turmeric powder and sauté until its raw smell is gone. Next add 3 tablespoons of normal red chilli powder and 2 tablespoons of Kashmiri red chilli powder for a bright red colour.. The amount of chilli powder can vary depending on the spiciness of your chilli powder and your taste preference Keep the flame really low or turn off the flame while you’re adding the masala powders.. Next, add asafoetida powder to taste and half a tablespoon of fenugreek powder and mix it really well in the oil After frying the spices really well in the oil, add a cup of vinegar and 2 cups of boiling hot water, some salt to taste and bring it all to a boil.. Next, taste a mixture and add more vinegar or salt if required.. After everything comes to a boil, turn off the flame and add the fried fish and mix well in the gravy.. After adding the fish, transfer it into another ceramic pot or a glass jar. . Never leave it in the cast iron pan for a long time because it is not good for your health.. After one day, the pickle will be in the perfect consistency to be served, with thick gravy Do not use a wet spoon to serve the pickle and transfer it into the refrigerator after two days..

Ingredients Dried Fish 750 g Turmeric Powder 1 tsp Chili Powder Green Chili 150 g Coconut Oil Red Onion 300 g Garlic 50 g Cardamom Cloves Cinnamon Ginger 50 g Vinegar 150 ml Salt Powder Sugar 5 tbsp Today, grandma and daughter will make dried fish pickle, which is a delightful and spiced chutney with the flavors of red onion and green chili. Cut dried fish into small pieces, then thoroughly wash and clean it. Mix in the turmeric powder and chili powder. Heat some coconut oil in a pan and add the green chilies and red onions. Fry the dried fish in coconut oil until it turns gold. To make a paste, combine the garlic, ginger, cardamom, cinnamon, cloves, and chili powder. Cook for about two minutes after adding the garlic ginger paste to the white coconut vinegar. Mix in some salt, pepper, and brown sugar. 1. Dry Fish - 1 kg *Wash & soak for 3 hours to reduce the saltiness. 2. Turmeric Powder - 1/2 tsp 3. Red Chilli Powder - 1 1/2 tbsp Mix well & keep it aside for 5 minutes. Take a pan Heat coconut oil. 1. Coconut Oil - 8 tbsp 2. Curry Leaves - few 3. Fish Add curry leaves. Then add fish and fry it. *DO NOT STIR for the first 2 minutes after putting fish in the oil. Fry it deeply. Keep it aside. 1. In a pan, Heat Coconut Oil + Balance Oil (oil we used to fry fish) in a pan. - total 7-8 tbsp 2. Splutter Mustard Seeds (കടുക്) - 1 1/2 tsp When it splutters, add 3. Fenugreek seeds (ഉലുവ) - 1/2 tsp 4. Curry Leaves - few Set the flame on medium. 5. Garlic - 3/4 cup 6. Ginger - 3/4 cup 7. Green Chilli - 6 numbers (50 gm) Saute till it starts to change color. When it starts to change color, set the flame on lowest level & add: 8. Turmeric Powder - 1/4 tsp 9. Red Chilli Powder - 2 tbsp 10. Kashmiri Chilli Powder - 1 1/2 tbsp Saute few seconds. 11. Asafoetida Powder (കായം) - 1/2 tsp 12. Fenugreek Powder (ഉലുവപൊടി) - 1/2 tsp Saute few seconds. 13. Vinegar - 1 1/2 cup When it starts to boil, add fried fish. Mix well. Turn off the flame & let it cool down. *Taste it and adjust flavors. -Store it in an air-tight container when it has cooled down -The storing vessel & the spoon used must be really dry *After 2 days, taste it and add salt if required. Because it is a salty fish, we do not need to add salt. *Add boiled water into it only if you need more gravy. Ingredients Sardine/Mathi-1 kg Garlic-20 cloves (long strips) Ginger-big piece (strips) Green chilly-15 (slits) Curry leaves-4 strings Chilly powder-2 1/2 tbsp Turmeric powder-1/2tsp Asafoetida powder- 1/4tsp Fenugreek powder- 1/4 tsp Salt- to taste Mustard seeds-1tsp Fenugreek seeds-1/2tsp Oil- for frying Vinegar-3/4cup Hot Water-11/2cups Dry red chilly-2(slits) For Marination Chilly powder-2 1/2 tbsp Turmeric powder-1/2tsp Vinegar-1tbsp Salt- to taste Method Choose very small sardines ..Small ones best for pickle than big sardines.. Cut ,clean and wash them properly using salt and vinegar .. Then make 5 to 6 gashes on each sides.. Make a paste of chilly powder,turmeric powder and salt ..Marinate the sardines with this masala ..Keep aside for minimum 15 minutes Heat 3 tbsp oil in a heavy bottomed non stick pan Fry ginger pieces,garlic pieces ,green chilly separately,Keep aside Then splutter mustard seeds,fenu greek seeds,dry red chilly and curry leaves one by one(Add enough oil ) Then switch off the gas and add all the powders and saute until the raw smell goes.. Then add vinegar ,boiled water ,salt and roasted ginger-garlic and curry leaves ..Mix well ..Keep aside .. Now fry the sardines in batches till they become crisp (dont burn ) Add all fried fish into the prepared sauce ,mix well and boil well for 10 minutes in medium flame ..
